So it is all Tonkotsu base soup with a choice of Shio(salt), Miso(miso), or Shoyu(soy sauce) flavor. The noodles here can be ordered thin or thick, each soft, medium or hard. The broth and oil can be ordered light, normal, or heavy. I went with a Chyashu(pork) miso ramen with extra nori(seaweed) and egg. The noodles thick and hard with heavy broth and light oil. It was good — the Chyashu just fell apart in the soup, so soft and delicious. The noodles so full and flavorful that you can’t help but want seconds. My wife’s egg was perfectly done but mine was just slightly over boiled so you could see a little hard yellow yoke. It still tasted great. The ramen is good — better than most joints near base. This place has variety on flavor and the only place that touches the taste is the joint next to Coco’s across from Daiei. they only have one tonkotsu flavor — so if you want something different — here it is and it’s good. The only gripe is the Gyoza is passable — get everything else. The Chyashu– don is amazingly beastly — my wife loved it.
