I visited Totte Ramen on the 8th of Feb. I would say Totto Ramen is the best amongst three ramen places I tried in Manhattan(the other two are Ippodo & Nishida Sho-ten). This bowl of noodles warmed me up in this snowy New York day. I had the Spicy Nibo Paitan with spicy bamboo and onsen tamago as extra toppings. The soup is super rich but not overly seasoned. Although I normally like my noodles soft, but I tried them al dente as recommended on the menu, and they were amazing! I could not stop slurping my noodles while eat them! The best part was that after finishing up the noodles, I did not feel thirsty like I would normally do after eating at the other ramen places. This means Totto Ramen does not use any MSG in their broth, just like what the good ramen places in Japan do! I had to take one star off for the onsen tamago tho, it was too undercooked. I like my eggs cooked that I can pick the half up with just my chopsticks. But the egg I had was barely cooked, egg white was still clear, and the moment my chopsticks touched it, the yolk just broke into the soup. I will definitely go back for more ramen every time I visit New York, but I am going to leave the egg out of my noodles.

Totto is always a solid choice for a nice bowl of ramen. One of the few spots in NYC with a good chicken broth. The standard chicken paitan is lighter and cleaner tasting than most other ramen broths. It is a nice refreshing contrast to the usually saltier renditions from other restaurants. If you you want something a little more flavorful, the miso version is very solid as well; creamier and saltier. I also love their spicy oil that comes on the side(when you order a spicy version). The only thing I really hate about this place is that it’s always hot inside… whether it’s the summer or winter. Always find myself sweating like crazy in there with a bowl of noodles in hot soup… and often spicy too.
