This is the best steak experience and wine experience I have had in Colorado. Slavic! is unbelievable. Amazing service to pair with the great steak

I’ve been going to the Timberline for 10 years but my last visit before my experience last week had been a couple of years ago. I am horribly dismayed at how poor the food and service has become, even after what had been a steady deterioration of both quality and service. The host was rude, the wait staff polite but otherwise mediocre, and the food was bordering on abysmal – even though it was marked up to fine steakhouse prices. The term«penny wise but pound foolish» comes to mind. If a restaurant is going to cut back on the things that make it excellent, the people who expect excellence will quit returning. There was a time when I could count on the Timberline to have a fine wine menu and an excellent selection of wines by the glass. Now, they have a measly few red wines by the glass, all of which are barely OK but have been marked up phenomenally to create the illusion of a fine dining experience. When I first started going to the Timberline, they also brought out a basket of the finest artisan breads. It later became a skillet of nice rolls. Now it’s a basket of hard and dry pretzel rolls, the kind of which can be bought from any grocer’s freezer aisle and cooked far better than what I was served. While the French Onion Soup is still good(though not as good as it once had been), the steak I ordered was so bad it should have been returned for a full refund. As it was cremated on the outside but mooing on the inside, it was as though they had brought me a cow with a third-degree burn. A vet could have revived this thing. Alas, Timberline, there was a time I could have counted on getting an excellent steak cooked to perfection while still following my own preferences, combined with a delicious side and paired with a fine wine. If I had known what I was going to be getting from you, especially for the price I paid for this experience, I would have gone to another restaurant even if that restaurant was McDonald’s. I doubt I’d go back even if I had a coupon to eat for free.

After a disappointing experience with the host at the Firehouse kitchen(or something like that) we walked downstairs to find this gem. Greeted with a smile & sat promptly. Chad was our server & took great care of us. He informed me there was no vegetarian specific meal but the chef could put together a veggie plate for me! WIN! I got a huge plate of broccoli, green beans, mushrooms, sliced baked potato & tomato. With a side of au gratin. The cheesiest ever. Yummm. BF said his filet was better than Elways. & he loves his steaks. Highly recommend this place. Not your typical«casino» food. This is a nice establishment with an attentive waitstaff. Do yourself a favor & treat yo self :)

Oh man… hubby and I really wanted to love this place, but unfortunately it fell flat. We had reservations last Saturday night to celebrate our 13th wedding anniversary. I couldn’t check in because I couldn’t get a great signal inside the resturant even though I was logged in to their wifi. I want to stress that our waiter was awesome. He was very professional while being down to earth and very knowledgeable when it came to the menu and wine list. We thought that this was going to be the start of a great night, but that’s where the greatness ended. We ordered Crab Bisque and French Onion soup for starters. Hubby started adding pepper to his bisque right away. The French Onion soup was good, but not outstanding. The bread basket was pretty tasty. Ciabatta, pretzel, and walnut cranberry were served in the basket. We ordered the Rib Eye Steak w/Bearnaise sauce and the Filet Mignon w/Chimichurri sauce. The were both cooked perfectly, but we soon realized why the steaks came with a choice of sauce — there was no flavor to them. A little salt and pepper goes along way and both of these steaks tasted like they had zero salt and pepper. I ended up adding salt and pepper not only to my Filet, but also to my sauce, the side of green beans, and the potatoes au gratin. Very disappointing. We ended the meal with the Crème Brulee. It was served on a type of cookie, which I thought was weird. The texture seemed right, but again, not very flavorful. We had high hopes for the Timberline Grill, but it seems the best place to get a steak dinner in Blackhawk is Farradday’s at the Isle.

Put your notions this is JUST casino dining inside the Ameristar Casino in Black Hawk aside. This is hands down fine dining in a upscale atmosphere. The server who greeted us was so efficient and professional while never losing the smile on her face. The Menu: You’ll find steaks, chops, fish and some truly decadent fare. For a starter my Father had the beet salad with goat cheese… it was delicious but the dressing used to dress the salad was sublime. My starter was total decadence. Foie Gras on Brioche. HEAVEN… it melted like butter in your mouth and was so rich. My Father had the Dover Sole which was expertly prepared. Juicy, flavorable and almost too good to eat. I had the rack of Colorado Lamb. I’m so proud they feature what is arguably the best lamb in the world,(Sorry, New Zealand). There is a unique taste with local lamb, not to gamey but distinct. ************NOWFORTHEULTIMATESTAROFTHESHOW************** The 24k Candy Bar with Raspberry Sorbet. Hands down the best, richest, most decadent, sublime, guilt inducing dessert Ive ever had. A beautiful bar covered in rich chocolate ganache, topped with flecks of real 24k baby. Inside are multiple textures that melt on the tongue. On top is house made raspberry sorbet sitting in a beautiful chocolate cup. Top two desserts I have had in the world. Oh, and if you think you want one to yourself… you don’t need it. One is enough. Drinks flowed freely served by our efficient server throughout the meal. I was truly a meal to remember and by the looks of the number of customers there that night. Many memories were made. Cheers to the culinary team and the staff. WELLDONE!

Came here this past Sunday and made a reservation via Opentable. We were hungrier before it was time for our reservation so we went a little earlier to see if they could seat us and they did. The one thing that bothered me was when we walked up to the host stand, the hostess and another employee were talking and didn’t acknowledge us until they finished their conversation. The food was great! My boyfriend and I split the cheese board appetizer and a caesar salad, both of which were so good. We then each ordered a 6oz filet with blue cheese. I also got the bordelaise sauce(red wine sauce) which was excellent. At first I thought the 6oz portion would be too small, but it was perfect. It wasn’t too little or too much. I do wish we were able to eat dessert right then, but we were a little too full, so we skipped that part. Overall, it was a great meal. Our server was very knowledgeable and did a great job. The one other thing I didn’t like was that we were seated near the kitchen, so waiters were walking by our table on both sides and I felt like I was going to get hit with something every time they walked by.

Meh! We had the shrimp cocktail and the shrimp were old. my wife was convinced they had turned, so we returned them. no questions asked and we we not charged for them. The onion soup was OK. a little bland for our taste. I had the ribeye. it was overlooked(ordered medium rare and it was med to med well. my wife had the crab legs and the portion was plentiful, but after the shrimp, the thought of more seafood didn’t set well and she returned the plate without eating much. Sides are al a carte and the au gratin potatoes were excellent. Bar had good pour, and the service was excellent(our waiter Swavick did a great job). Just overpriced for what you get.

After a great night of gambling at Ameristar, my husband and I went to the Timberline Grill to celebrate with steaks. I ordered the 6oz filet, and it was the best steak I’ve ever had(and we go to high-end steakhouses often). I like my steaks medium-well and often I either get an undercooked steak for my liking or a dry more well cooked steak. This steak was perfectly medium-well, but still extremely juicy and delicious.

This is the only restaurant in Black Hawk that I would actually go to if I actually had to pay for it. They accept comps and Ameristar has great monthly food coupons if you gamble. Farradays in Isle? no thanks. White Buffalo at Lodge? Meh.(and closed for the next few months) Timberline? Yes, please. About a year ago Timberline used to be okay. The issue was that they weren’t so good that I wanted to sit down and have an expensive 2 hour dinner as opposed to just going to the buffet and getting crab legs. Then something shifted and they did a menu change about a year ago. Now it is really good. Their items offer more nuances of flavor than they typical heavy handed cream and butter in everything that is typical of casino steak houses. The food here is expensive, but the quality is much more in line with the price. Without really trying too hard, tabs can easily hit a 100 per person with 4 courses and a few drinks. You can eat here for less though. Many items are split able and the starters are good. Highlights for me are the oysters on the half shell, crab cakes, carpaccio, french onion soup and the salmon. The salmon is fantastic and they will cook it to temp. Ha ha the steaks are pretty good too.

My wife and I ate here today. The service was fine, and the drinks we had were good. My wife ordered an 8 oz. filet and I ordered a wagyu flat iron steak for dinner. My wife likes a medium well doneness on her steak and I like a medium doneness. The server suggested that my wife order hers medium so it was juicier. Against her better judgement, she ordered the steak medium. Both steaks came out very rare. Mine was actually blue in the middle. They reheated my wife’s steak and it was then, of course, dry. I ate as much of mine as I could and left the rest. The reason for the two stars is, we were very disappointed that a steakhouse can’t cook a steak to the proper temperature. These steaks were not close. I guess I should have gone with the trout.

Second time we have gone to this very pricey restaurant in the Ameristar Casino. Frankly, we were very disappointed this time around. They changed the menu, which was a total bummer as they didn’t have one entrée for vegetarians. This was Hubby’s Father’s Day treat. He ended up having to order side orders of a baked potato and two other vegetables(at about $ 5-$ 8 each!) to make somewhat of a dinner. No rice dishes, no pasta. Eating there once before, we expected it to be costly, but some of the prices of the entres were incredibly overpriced for the lack of choices. We should have waited in the long line to go to the dinner buffet(where we’d probably get some of the same choices and a whole lot more for a whole lot less money) instead, but we were dining with our son and didn’t want to wait as long as it was going to take. :-(

Started with the lobster bisque, it was wonderful! I had the special it was Salmon on a cedar plank. It was great also. My friend had the lobster and shrimp mac and cheese, the plate seemed to keep reproducing! I wished I would have gotten that so i could have lunch for the next few days. Our waitress was polite and on top of her tables. It had a great atmosphere, and the lighting was just right. Very pleasant experience!

Well, in addition to what I’m assuming is a lack of refrigeration appliances, they also don’t have a bathroom. Maybe I’ll buy them a toilet and a fridge for Christmas next year. That said, the staff is wonderful and patient with a great sense of humor. The food is pricey, but delicious(try the lobster mac). It was a great place for a fancy time in Not Las Vegas. Drink up, eat up, and just hope you don’t have to use the facilities(they are around the corner and down the hall, past the loooong buffet line).

We arrived to our reservation on time, and after a short wait we were at our table. We were quickly greeted by an enthusiastic waiter, who quickly proceeded to ask us if we were in a rush, or if we had time as they preferred to bring out food at a leisurely pace, we said that would be fine. He then proceeded to tell us that steaks were their specialty, and strongly recommend the fillet. All three of us listened to the advice and ordered soup and salad, and three fillets. Our soup and salads arrived quickly, and as we were just getting started on it, suddenly the steaks were brought to our table and put in front of us as the salads were moved to the side, talk about leisurely pace. The steaks that we received were a joke, they looked like they came out of a microwave, they were gray in color, with absolutely no char, and they had a weird sour taste throughout the meat. It is hands down the worst steak I have ever ordered at a «steakhouse.» All three steaks were the same, so it wasn’t as if there was just one that stood out. I guess when you sell USDA choice beef and try to pass it off at the same price as high end steakhouses charge for prime, that should have been my first red flag. I spoke to the manager, and he was completely indifferent to our issues, they did end up comping two of the steaks, however it still was an experience that I will never repeat, and I hope others are aware of what they are getting themselves into.

I like this Resturant but tonight it fell a little short in my opinion. Ordered chief salad but the dressing was overdone, ordered medium well steak but got well done and it was dry, ordered apple desert with ice cream but it was not good, the ice cream was flavorless. We have had better meals at this Resturant but not tonight. Did gently not a $ 140 plus tip meal.

An excellent steak place. Food and wine choices were good without being exhaustive. Decided on the rack of lamb and boy was it good. Paired it with a stags leap syrah and they were fantastic together. I have a small dislike for restaurants that don’t add at least one side with the meal hence the 4 stars. Otherwise an excellent choice for anyone seeking a slightly more upscale meal.

Very impressed with my second visit here. I created my own dinner by combining the crabcakes appetizer(suggested by another Unilocaler) and a salad of heirloom tomatoes, local chèvre, and aged balsamic. It was just as good as it sounds. and I’m picky about my tomatoes and my crabcakes! Bravo. (bonus– mostly covered by comps from the casino)

Nice but pricey steakhouse in the Ameristar Casino. I arrived at 5PM and was seated right away. Waitress was very helpful and friendly. Water and bread service was immediate. Menu has a lot of great selections such as lamb and several fish but prices are premium. I instead ordered the $ 20 sirloin — medium with stuffed Idaho baked potato. It arrived reasonably quickly and was absolutely delicious. Baked potato was huge! Overall service, food quality, and environment earns a solid four stars. I would have given 5 stars but prices were told high for select foods and wine.

We read a number of the reviews and decided to give it a try. Very comfortable and clean. Service was friendly and efficient but not overbearing. The food was excellent and very reasonably priced. The only reason I won’t give a five star rating is the wine list is very short for a restaurant of this quality.

Went in last night and have an update– Pour from the bar has improved significantly. Oysters just as good as i remembered them. 20 Oz. Porterhouse seemed a bit light, but was outstanding and perfectly cooked. My wife had the lamb, which was declared excellent. Booth is the way to go. Our server(slavic name i cannot recall) was outstanding. Great desserts. Adding the fifth star. Original review below: — — — — — — — — — — - Great food and excellent service. This was our second visit. This time we passed on the salads that we were disappointed with the first time we ate there. We went for the oysters app — fresh and cold. I had the lamb which was simply outstanding — I loved the sauce and the chops were cooked perfectly. My wife had the Sea Bass which was also declared excellent. The service was attentive, but not overpowering. That’s the good stuff. Why not 5 stars? First, our table. Very close to the gas fireplace and also close to the kitchen. Every server in the place used it as a corridor, which was very distracting. We tried to re-route them by pulling out chairs, they just slammed into them and nothing changed. Don’t accept a table near the kitchen or fireplace! I think a booth would be OK. Second reason for no 5 stars is the stingy pour at the bar. Yes, OK, this is a common thread of mine — they charge $ 6.75 for a 12YO Macallan and it’s probably exactly a shot. It’s embarrassing to have to order 6 drinks with dinner — just jack the price to $ 12 and give me a decent drink, OK? At least it wasn’t a $ 12 shot like other places, so ordering a double here is an option. Expensive places shouldn’t have the problems above, so 4 stars, not 5.

My wife and I(at the very last minute) decided to see if we could get a seat for dinner. It was obviously packed, with quite a few names on the wait list and hungry, restless crowds stalking the waiting area. But we sashayed into the bar area and found two spots up at the bar. Everyone else at the bar had the same idea of enjoying a nice dinner so we felt as comfortable as new slippers on Christmas morning. Everything was nice. With only one little itsy bitsy complaint, which kept me from giving Timberline Grill 5 stars. My wife asked our bartender if she could make a Bleu Cheese stuffed Martini. She was denied. We don’t have fresh bleu cheese.(hmm, and you’re a fine dining restaurant)? Now, the response could have been, «I would love to, but…(insert any reason, blame it on the manager, show us you have hooks, not hands, you’re allergic).» Nope that didn’t happen. What happened was, my wife ordered the Timberline Wedge Salad. It came with two massive baby(Huey) iceberg wedges, applewood smoked bacon, tomato, onion and(get this, drum roll please…) fresh and plentiful maytag blue cheese. Mounds of it. Spread around the plate, found throughout the lettuce and in chunks bigger than rock slide boulders. So, what did the little woman do? She just politely asked for a Gin Martini and a few extra olives and proceeded to stuff them herself. She was in heaven, looking like Dr. Oz performing heart surgery.

Just went to the Timberline Grill last Wednesday night. This is my third time dining here. The food is good — here are my favorite menu items– french onion soup is superb, Goat cheese ravioli, the burgers are very delicious, and the wedge salad. I really like this restaurant and like going here when I am in Blackhawk. I would skip the porterhouse steak — it has been the only thing so far I wasn’t impressed with. The service is great and attentive and I like the atmosphere of the restaurant. Can’t wait to go back for the Goat cheese ravioli again.

this is the restaurant at the Ameristar casino located at the bottom floor. I was told that reservations are only possible through on-line for large group. During the dinner hours, there were several groups of people waiting in line at the beginning of the meal. and also when we were coming out. Well dressed hostess greet you at the front. also has seating area near the front. very large and roomy restaurant. Due to large group we had, I may add that our service was kinda slow but for these type of restaurant, they should have plenty of extra servers helping each other. There seems to be lack of coordination, hence reason for 3 star. service was kinda slow but she brought everything out when asked. upon sitting down, basket of assorted fresh baked rolls/bread is offered.. they were so yummy and had to request another basket. Its steak house and they seem to be doing very good with it. lot of difference choices of steaks, sea food and also BBQ ribs. Our table ordered bone in rib eye, fillet, baby back ribs, sea bass and such. My ribs were good for the price, sea bass was excellent according to my hot date. and everyone devoured their steaks. bone in rib eye looked quite appetizing. don’t forget to order baked potatoes as your sides. huge ones with toppings on the side in this lil cute dish. my mac n cheese was excellent also. overall, quality of food is good, quantity of food per price is very good. atmosphere is good. service needs improvement(more refined, not Denny’s type) I would definitely go back and try other offerings.
