Chameleon Mobile Cuisine

I stopped by the Street Food event taking place at Catalano Square Friday night, and decided to try this food truck, since they were one of very few that I’ve yet to try.
The mac-​n-​cheese with caramlized onions, brocoli, and chicken were very specifically recommended to me, so that’s what I ordered.
Wow!
This was one of the very best mac-​n-​cheese dishes I’ve ever had. I rarely order mac-​n-​cheese because I’m too often disappointed. That was not the case here.
I believe they used orrechiette pasta, which was very tender, and topped it with caramelized onions, bits of brocoli, and tender chicken. The sauce was amazingly rich and creamy.
Due to the ticket price markup by the Shepherd Express who hosted the event, the dish ended up costing my $ 10, which was way too much. The dish was absolutely delicious, but for the portion size, I think $ 6 would be my absolute max, $ 5 would be more realistic.
Chameleon Mobile Cuisine changes their menu based on where they are going to set up and who their customers will be. That’s the concept behind the name, adapting to the surroundings. The reality is that I think people will eat whatever they cook wherever they park the truck if the rest of the menu tastes like this.
The other menu item they offered Friday night was a Reuben Empanada, but I didn’t try it.
I will certainly try this truck again.

Whoa. I had walked by this food truck numerous times, but the other day something caught my eye.
Chilled Gazpacho with Grilled Shrimp.
What?! I stopped.
I almost had it completely finished by the time I had walked back to work. Slightly spicy, tangy, fresh… and they didn’t skimp on the shrimp!
I don’t know if this is a regular offering — but I tell you what — I will be back to see if it is!
