This place is amazing! Love the décor, the staff is so friendly and attentive and the food is wonderful and unique. I had the best brownie of my life and the Tater tots with cheese sauce are to die for. Can’t go wrong with anything on the menu and great happy hour! And Caden is the best server ever!!!

Stoner-gastropub food, but REALLY well done. The design of Carbon is beautiful– the chairs, the candlelit tables in back, and even their food. The food is amazing and innovative. My husband and I have been here twice, and have gotten the same thing because it’s that good. 1) the chic filet(fried chicken on a brioche donut-like roll). 2) chicken and waffles(the same fried chicken with almond waffles). And the tots… Just try them all, and go with their recommendations for dipping sauces. As for the donuts… The last time we ate dinner here, the kitchen was a little backed up and they served us two donuts on the house. Not being donut people, we were just going to take them home and eat them later… but no. We had some sort of sour raspberry/blueberry donut and a dark chocolate peanut butter one. Both incredible.

I really enjoyed both the food and atmosphere. I ordered The Golden Arches without caramelized Spam. The sandwich was perfect. The egg was done well. The blueberry bourbon jam was delicious. The honey brioche donut bun was a very welcome change. I also ordered a side of roasted seasonal veggies. They complemented each other very well. The Bloody Mary was very good, even if they didn’t have the Bloody Mary bar open. My dining mates got the chicken and waffles and the simple breakfast, and they all were delighted with the food. The décor was gorgeous, clever, and tastefully done. The service was also great.

This place is just great. I’ve been meaning to write this review for months, because it’s my new favorite spot in Denver. The vibe is low-key without being grungy and the food is fabulous and fun. The staff here has been exemplary, super friendly and accommodating. My boyfriend and I first tried it for brunch one day and we were so pumped that we brought a family group of 4 adults &3 kids for dinner that same night. The staff generously kept the kids happy with a steady supply of their signature tater tots. There is a personal touch at Carbon that has brought me back for breakfasts, lunches, coffee breaks, happy hours and brunches… It’s just one of those places that feels like a perfect place to be any time of day. I love their menu for the gluten free options, the quality ingredients and and their reasonably sized portions. Their coffee menu is extensive as well, and save room for donuts from their sister shop next door, Habit, where you can get some damn delicious donuts.

Coffee and cocktails… and TV dinners. Say what?! I went in after work one evening and ordered a marg. The oh-so-adorable bartender Caleb(who looks about 15) recommended a berry marg of some sort. He NAILEDIT. Muddled blackberries, great tequila, and a beautiful presentation, with wonderful customer service to boot! This a must if you’re in LoDo.

Really delicious GF options and crazy good drinks! And those tots!!! I love this place. The atmosphere and service is top quality as well. Random thing I love: the tomatoes on the sandwiches are amazing and actually taste like home grown. Also, I have ton of food allergies and they were super accommodating, mindful, and knowledgeable about the ingredients to everything. I typically don’t eat out because I’m a pretty darn good cook myself(and due to my allergies) but I have eaten at Carbon a few times a month since it opened. Next, I want to get some work peeps together for their happy hour. Saw some good dead on the board for it.

The former Paris on the Platte location continues to serve the neighborhood as a café, but with a decidedly modern twist. Carbon is stylish but still has a comfortable coffeehouse vibe. There are even items from the old Paris around the shop. The food was good, and the drinks are ok. But I can’t help but agree that ordering is overwhelming. I think it’s due to the signs that show a series of steps to take. At the counter there are multiple different pieces of paper with menus. It takes a little time to read it all, and that can make me feel anxious when there are others behind me waiting to order. It’s a sit-down menu for me. At times of days, you can choose between table service and counter ordering, apparently. I recommend taking the menus and having a seat, then going back to the counter when ready. The carbon-ation station sounds intimidating, but I think it’s just the area where you add sugar, milk, etc to your drink. There’s a space to pour yourself soda water, plain water, or flavored water too.

Interesting place — an evolving idea that is amidst some small growing pains. Ordered at the counter, brought out to the table. Pork-centric menu with a couple of real interesting options tucked away on the menu for future investigations. Worked with my veggie lady to make a BLT sans bacon(on the side) — it was all pretty good. A couple of solid veggie options would help boost it, as well as resolving whatever the story is with the tap lineup/ordering/etc. Lots of neat seating areas — will be back.

Wow what a cool place. Came in to get a little work done and found outlets easy and the Wi-Fi to be speedy! Also tried the food and it was great! Doesn’t hurt that they have a donut shop next door for dessert! Our server was attentive and friendly. Overall a great experience and I will be back for sure!

I had never heard of Carbon Beverage Café, but I was pleasantly surprised. First off, its decorated really awesome inside. Very clean lines, lots of great taps, and very modern. The staff was incredibly helpful and friendly(I sat at the bar). After receiving many recommendations, I ordered the mac and cheese, and a side order of the tater tots. The portion of the mac and cheese was delicious. It couldve used a little more flavor(maybe add a protein, or something spicy), but the mac and cheese itself was delicious. The tots… Oh the tots… So delicious. Think mashed potatoes, crispy and deep fried. SO good! And their secret sauce. even better! I definitely recommend CBC. I will be back to try more yummy food!

This place is amazing! The food is top notch, the coffee is delicious and the environment is perfect. I always LOVE places that have many different spaces and types of seating. Here there are three different room: one in the front with tables and the bar, booths and high tops in the middle and a back room with comfy wingback chairs and large tables for meetings etc. I love that this place successfully combined coffee and booze making it a fab place to get work done, have a meeting and hang out with friends for some drinks all in one place! Did I mention that the food is freaking amazing! The tater tots are like little balls of joy in your mouth! This is def my new spot

My wife and I were in the neighborhood on a Sunday and we met the owner, Lisa. Very kind and sweet woman. We were so impressed with her that we came back the next morning, and the atmosphere was definitely on point. One of those places where you can kick back with the sun coming in and get some work done on your computer. Sarah, who was helping us, suggested a mocha on ice with almond syrup, my wife had a latte with Apple Rosemary syrup. We also ordered the Wu tang tots, yes the Wu tang tots. they have a myriad of sauce selections, including the Shaolin bbq sauce. If you’re interested in hopping on the net too, the wifi is free, just ask for the password.

A crisp, clean and comfortable atmosphere. The staff is friendly and helpful and the diverse menu has something for everyone. The coffee is well done. My first meal was the Cubano and it was amazing — easily one of the best in town. The reasonable prices makes Carbon a great value and an excellent addition to the neighborhood. YUM! Had a delicious breakfast of Green Eggs & Hash — adorable and clever, and finally got to try me a buttery bullet proof coffee. YOWSA! Now there’s a way to start the day. Boyfriend noshed on waffles and fried chicken– the waffles are gluten-free!- and I was jealous. We were really impressed with this place– you just feel cool entering the space: It is hyper-urban, cutting edge, decorated with iron and art, and say what? The food is awesome, and almost always served with a fresh donut. Don’t stop there– be sure to walk next door to the associated donut shop!

The concept alone at this Café really grasped my attention, then the beautiful, clean design of the space soon followed. The high ceilings and industrial theme throughout this Platte Street establishment instantly make you want to stick around once you walk in. The business, that functions as a café, bar, and restaurant, strictly and innovately aligns with the element, Carbon and categorizes certain cocktails, wine, or beer under the various elements containing Carbon: Earth, Water, Air, and so on. But the most intriguing element(hehe) was the capability of concocting your own cocktail. They have the main ingredient, whether that’s wine, beer, coffee, or liquor on tap, and you add the fizz(carbonation) to your liking. You can even choose a natural syrup to add some fizz to. I enjoyed a Grapefruit Soda myself. I can’t return to try their even more creative menu on their patio in the back!

Having gone to this spot for 22 years now, I was very excited to see all of the nods to the old Paris. The food was uniquely good, and the menu was awesome. My mother loved it as well, and can’t wait to go back with me. The unisex bathrooms were good to see, and a basket of tampons and condoms definitely won points. They ran out of doughnut bread for the the Mac and cheese, and food preparation was a little slow, otherwise the experience was amazing, the kombucha a pleasant surprise, and the staff very friendly. *I’ve been here numerous times since my first review, and must say that things have been fine tuned since their opening, and I will continue to come to this spot as often as possible. I’m not sure why people find the menu confusing.

I was so pleasantly surprised with this place! I have to say — after waiting months after hearing about an opening, each day your expectations go down a bit — so when it finally opens, you are just waiting to be disappointed. Carbon did not disappoint. They have some kinks to work out — the«service» is weird — order your food and then… Stand there? Wait a bit and come back? Carbon needs to either deliver the food to its customers or make the food faster — I stood there at the counter for a few minutes before feeling awkward and taking a seat outside. Then came back in five minutes later to check on the status and my food was just sitting at the bar getting sneezed on(ok, maybe not sneezed on. then again, maybe it was!) The food — that’s what gets 4 stars. I had the Korean bbq bowl and my date had the Mac and cheese — both were good but the Korean bbq was SO good. It took a simple lunch dish to a different level. We both had cold brews as well — good coffee but not really sure on how the carbonation station worked and no one attempted to explain — another kink to be worked out?

I think this has become my new favorite spot. A new twist on the usual bar concept where every one of the drinks is on tap! How neat is that. The food is also creative and tasty. From coffee to wine, mix and match its your choice. Calm atmosphere as well.
