This place has great BBQ Texas style. the other places in central Texas do not even come close. the Ribs are awesome! keep up the good work Miller’s.

Very nice. Arrived around lunchtime and the line moved pretty quick. Moist Brisket was very good. Just enough smoke. Beef Ribs were tender and flavorful, without being too mushy. Pulled Pork was slightly sweet and moist, pretty good sandwich. Sausage was worth it, distinct and enjoyable. Capped it all with coconut pecan pie. All top shelf. Extremely affordable. Hard to beat when you put it all together. Great place.

Thank you Lord it isn’t Bill Miller BBQ!!! A little pricey for what you get in terms of portion-size… BUT!!! The Brisket sandwich was very, very good.!! It’s just a nice, casual, small-town joint to go and enjoy different types of BBQ, sausage, pulled pork, ribs etc… A very old school-type, retro Texas-Americana feel to the place. Will definitely be back again, an again, and again.

Where do I start? First off, thank you to the great staff at Miller’s for making my first taste of Texas BBQ an experience that I will forever remember. From the moment we walked in the door, the staff greeted us with greetings and smiles. The line was out the door and I soon found out why. The moment you park is truly when your dining experience begins. The air is filled with the smell of burning oak wood and seasoned pits. The smoke billows from the multiple smokers they have running all day. The smell intrigues your tastebuds and makes you impatient for food. When you’re finally served, it is all you would expect from an established Texas pitmaster. Perfect smoke ring, perfect seasoning, and perfect all around flavoring. This place is truly a cut above the rest. The Pitmaster greeted everyone and was even kind enough to offer us some burnt ends free of charge. Words can not describe the joy your body will feel while eating one of these. If you try one thing here, make it the brisket and add some burnt ends. I will be back, that is a promise.

Food Too Salty, green beans included, brisket, ribs etc Rest should realize many today are on low salt diets and not salt the food to the taste of the cook. Very disappointed, I spent over $ 50.00 for carry out and sandwich inside shop. Cust service was very friendly, the reason for the 2 stars. But due to the large amount of salt on the food, which must have been due to rub, I won’t make the trip back or advise anyone else to.

The problem with Texas brisket is that because it is such a hard cut to do well, everyone with their Texas sized egos tries to do it. The end result? Most BBQ in Texas is dry and chewy. This is NOT the case with Miller’s. Having been to most of the BBQ places between Dallas, Waco, Austin and Lockhart I can confidently say that Miller’s is the gold standard to compare all other Texas BBQ to. Pros: Their moist brisket is their show piece and is tender, flavorful and robust. Their sides are delicious and their service fantastic. Cons: I miss it now that I’ve moved out of state.

This is the best barbecue in Central Texas. We have been to all the bbq places in Belton and Temple, and this one is by far the best. Whatever you get, you can’t go wrong. The bbq chicken stays moist and is delicious. The sausage it’s outstanding. The dessert is amazing. Try the dream pie. Service is fast and friendly.

Went here for lunch and this place is my upmost favorite BBQ place within 100 miles. The staff are friendly and the food is cooked to perfection every time. I recommend the brisket and ribs for sure if you come by. The price is a little up there but for what you get and the portions you can’t beat it. If you were visiting the area you have to stop by and try this place.

It’s ok 13.00 for small ribs with way to much salt on them, they put way to much salt on the green beans it will make someone sick. The butter potatos were like tasteless glue, coleslaw did not taste like anything at all. One of the waitress was standing on the bench to clean the table top gross lady you don’t put your dirty shoes all over the place where people sit and put there hands. She was just spraying cleaning all over the place and it kept getting on a guy at the next table. Just spray your rag and wipe down the table.

A TMBBQ Top 50 spot, Miller’s Smokehouse has been in operation in downtown Belton since 2008. The place was still busy at 2:00 pm. We ordered ‘just enough to sample’ and were seated in front. Bryan, having been there before, warned us about Momma Miller and her desserts. «If she spots us we’ll have to take some. ‘No thanks’ is not an option.» Owner/Pitmaster Dirk Miller was out, but we did get to speak to his son Dustin who was in charge of the pits for the day. All five offset smokers and four vertical drum smokers were going strong, even though it was mid-afternoon. Some product was being loaded for the evening shift, and others pits were finishing up a big catering order for the day. Dustin shared that they stagger their load on briskets so that they have fresh product available at noon, in the afternoon, and in the evening. Our order of moist brisket, regular sausage, and turkey arrived, as well as some very nice bark ends. The brisket was excellent, tender and flavorful throughout. The sausage was good, but they wouldn’t let us get away without trying a small sample of their homemade hot links and jalapeño cheese sausage as well. I loved the spicy links as well as the jalapeño cheese, and vowed to make them a priority on my next visit. Then Dirk’s wife, Lisa Miller, spotted us. Before we knew it, she had two of her homemade desserts in front of us to try, faster than we had a chance to decline them. It wouldn’t have mattered anyway. She had the charm on full throttle, and no amount of protest would have provided an escape. I’m glad we didn’t. The highlight was her Hurricane Cake, sort of an upside-down German chocolate cake with pecans, and a thick, cream cheese ribbon. If the dessert at our last stop was good, this one had us on our knees. Every bite left you wanting more, and we didn’t leave without an extra piece to take home.

Came here after a college football game due to the reviews on Unilocal. This was a good place. I had ribs and sausage. The ribs were very tender and a good taste. Not the best I have had but very good! The sausage was very good as well. I would probably prefer the sausage if I had to pick. They were sold out of desserts so I did not get to try any of that. Neat atmosphere but set up really weird. Front dining area that is very small. Then an entry way where you order then an open area to sit. Just kind of crowded if trying to get to the back area or having to go back and forth to the restroom or to get fountain drinks(both of these are in front area). So you have to keep going in between people who are in line ordering. Just kind of strange. I would go back. Good overall place to eat.

Pulled into Belton with the plan of stopping at Schoepf’s but had a change of heart and glad I did. Some of the better BBQ I’ve had in a while. Service was friendly and they had craft beer on tap. Brisket was phenomenal as were the ribs. Loon forward to my next stop through Belton.

By far, the BEST bbq in central Texas. After eating here all the other bbq joints will taste average. I recommend the Big’un sandwich because you get to sample more than one meat. It comes with brisket and sausage and they also add a little coleslaw to the sandwich and the slaw is amazing. The brisket and sausage are excellent and the ribs are superior! If you only have one night in town, don’t miss trying Millers! You will not be disappointed. Enjoy!

I just finished one of the best meals I think I’ve ever had. I’m so excited about it that I’m writing this review while sitting in my car in front of the restaurant! A line out the door at 11:20 but man do they know how to get you through! I had the«Fire in the Bowl» and it was fantastic. Very different but the portion was almost too large for lunch. Not a piece of fat in it, all prime beef and pork along with an excellent link. What a great way to test several items in a great mixture. I will most certainly be back. Outstanding!

We stopped in to Miller’s Smokehouse on our way to Dallas this past week and over all, it was a decent experience. We got there just in time, as the line was shorter but by the time we sat down, it was out the door. We ordered the chopped brisket sandwich with beans, and the two meat plate,(turkey and chicken) with beans and potato salad. The beans were very soft and full of flavor which I liked. The potato salad was run of the mill. The turkey was moist and had good flavor on it, but wasn’t anything special. The brisket was very good, moist and flavorful. The chicken, however, stole the show. It was moist and had a very nice rub on the outside with hints of sweet and smoky tomato — it was really good. I’ve had better, but Miller’s isn’t too bad. Four stars!

Ok, still a Miller’s junkie, but my ‘habit’ has evolved slightly. Split with my wife-½# ribs, ½ pound smoked turkey, ½ pound brisket(we go moist sometimes, dry others). End up with no room for desert. The live tunes make this cozy place something I look forward to all week. And the people who work there are some of the most solid folks you are ever going to meet. Now if they could only just get Balcones… that’s what I want for Christmas!

I would give more stars but the sides were very plain. The buttered potatoes were ok and the beans had no flavor really The meats were good. The brisket was nice and moist. The ribs were«fall off the bone» with a very good bark. The stars here are the sauces. The sweet is good but the hot sauce was really good. The only problem on the hot sauce looks like a beer and I almost«drank it» a couple of times.haha. I’m sure for these parts this place is awesome but coming from Austin and Franklin, Stile Switch, Krutz, …ect. U probably git the point

Last BBQ stop when I was in Texas! I came here on a weekday in the afternoon for a take-out. The outside look is not really catchy. And, you probably wouldn’t check this place out if you haven’t read the reviews on Unilocal or you are in Belton and somebody recommended you this place. The parking wasn’t really very nice, but it’s a small town, so that’s not really a problemo. The inside feels nice, the ambience and the very nice staff. There is a part where it’s larger(for those larger groups/families), but I didn’t get to eat there since I only had a take-out, so I only got to stay in the smaller area. It’s organized and very smooth ordering process. The TASTIEST, JUICIEST brisket take-out I’ve had so far. When I arrived to my sister’s place(about 30-min drive only), the brisket still looked good and moist. The ribs were tender. I loved everything I got from this place. I definitely recommend this place when you are in central Texas! On weekday, I didn’t get to see the bbq-ing in action, but still had a super tasty brisket! Worth it last day in TX!

I remember Miller’s being listed as one of the 50 Best BBQ Joints in the World by Texas Monthly in 2013 but we never checked it out until today. Our banker actually reminded me and said I would thank him for the tip. He’s right! Thanks for the tip, man. So the way it works is you walk in and the waitress takes yr order before you sit down, then you pay at the counter. The counter has smoked meats, desserts and cornbread and butter for sale. You sit wherever there is a table or at the bar in the back which is where we sat. The waitress brought our plates before we even sat down and the food was hot and fresh and delicious! The ribs are fall off the bone tender and really juicy. The brisket is tender and super tasty with just the right smoke flavor. I love the bbq sauce! It is kind of a cross between North Carolina and Texas style sauce. The bar serves Texas beer. I had the 512 Pecan Porter which was perfect with the bbq ribs n brisket. For dessert, we had a piece of rich, lovely cake. The Miller family is hard at work in the kitchen, the place is filled with locals and it is just a great down home Texas cookin and eatin experience. Everyone was very nice and welcoming including the GM who came over and visited with us for a minute. We’ll be back many times.
