The restaurant is opened by local well known chef Justin Quek. It is located at level 57 with a great view overlooking the garden by the bay. The view would much have the weather been not so hazy. Maybe if that is the case, we would be dining outside and enjoying the view. Today we are having the 3-course restaurant week lunch which costs $ 40++ per person. We start the meal with the bread basket, served with butter. There are 4 types of bread: cheese, Japanese, baguette and herb. The baguette has quite a hard crust. The cheese one is most yummy to have. The bread is refillable. Starter: Kurobuta Wanton Sauteed prawns, lobster & tomato fondue The overpacked wantons look more like siew mai with filling threatening to come out. It tastes quite flavourful and juicy. Main Course: Sakura Chicken Sauteed mushroom, potato mousseline, Shao Xing wine sauce The dish is fragrant and reminds me of the Herbal Emperor Chicken 药材皇帝鸡 with its smell. Although served with cream sauce, the sauce is light with asian flavours in it. The chicken is very tender and tears easily from the bone. We also order the resturant’s signature JQ’s Signature Foie Gras Xiao Long Bao 鹅肝小笼包($ 25++). The xiao long bao has quite an amount of soup inside. It has the strong flavour of foie gras and truffle in it too. But I feel that the skin of the xiao long bao is a bit too thick. The staff has replied that such thick skin is needed in order to hold the soup. Dessert: JQ’s Signature Freshly baked fine apple tart, vanilla ice cream Unlike that the usual apple tart, the thinly sliced apple lies on a thin crispy pastry skin. I like the flakiness of the tart, which is balanced by the ice cream. I am a bit sad that the ice cream melts rather fast, which makes one feels the need to rush through the dish. Overall it has been an enjoyable lunch with JQ asking about the meal. The guy has a great memory of remembering us.

Be warned. This place is intensely expensive. $ 18 for a mushroom cappuccino and it actually does come in a coffee cup, so it’s not like there’s a lot. I had the duck pasta, which was good, but having to pay $ 41 made me want to cry. It was a family celebration so we made an exception but I still think we could have gone to somewhere less overpriced and been just as happy. That said, I was told that the lobster was good, and the view outside the restaurant was beautiful.

FOIEGRASXIAOLONGBAO! I visited Sky on 57 twice during my stay at Marina Bay Sands, once for breakfast and once in the afternoon. I tried to go for afternoon tea but the last seating was at 4pm so we opted to sit at the bar instead. BREAKFAST: You get to order 2 items per person off a menu of 8 – 10 items. For two people, we got the Laksa, Daily Special(Chinese Zha Jiang Mian), Omelette, and the Smoked Salmon Egg Benedict. Everything was subpar. There is also a breakfast buffet — the two best things were the fish porridge + WATERMELON juice. AFTERNOONBARFOOD: We order the Foie Gras Xiao Long Bao and the Sakura Chicken Rice. The Xiao Long Baos were amazing, you can actually taste the strong flavor of the foie gras in every bite. Probably some of the best XLBs I have ever had. The chicken rice was just okay, especially since we had 9 – 10 different hainan chicken rice during our trip to Singapore. The bartender also made really good Singapore Slings!

Review for«Sky High Tea» Amazing view! Not to mention, their afternoon tea is Asian-inspired… who would’ve thought of using chopsticks when you’re having afternoon tea?! Think afternoon tea-dim sum fusion. They don’t have a lot of variety of tea(they have about 8 – 10 kinds) but they do allow to order«bar food» with your tea service if you don’t want to fill up on pastries alone. There were only 3 of us so we ordered 1 set of tea and 2 side orders of bar food — short ribs and chicken — both were delicious and filling. Lastly, I can’t forget the staff — all were absolutely amazing! [TIP] The foie gras truffle xiao long bao was xiao long WOW.

4 of us+1 year old baby came here for lunch on the last Saturday on 2014. Had a window table and was impressed with the prix fixe options given — a 3 course for $ 50 whch we picked as well a courses for $ 60 and $ 90 as well. Everything was delicious and one of the unique dishes I had was the glutinous rice dish w turkey and foie gras! Place is perfect to bring a baby to as even though the table next to us had 8 pax, we were far enough not to hear any of the conversation and the baby slept through our lunch. After our meal, we were allowed to stay on even though the«afternoon tea» crowd had come in — they merely cordoned off our section. This allowed baby’s parents to feed her and we were then served the part-of-the-package tea+coffee of our choice. Was basically there for 4 hours in all! After that, 2 of us walked to the fantastic DaVinci’s blueprints exhibition — which runs til March and is well recommended.

There’s a reason this expensive touristy restaurant gets only an average of 3.0−3.5 stars… and that’s because it doesn’t deserve any more. I’m being realistic in awarding them 2. The reason I came here was because friends were staying in the hotel and they wanted to dine here on their last night, and show off their hotel. Well yes the outside venue on the 57th floor/terrace of the hotel is pretty amazing. You walk from the elevator through their outdoor infinity pool area which is incredibly busy even at 8pm. Yes the view over Singapore is amazing. But ok, we all get views from somewhere. Anyway, the service was as weak as some of the drinks I’ve had in some lower class bars — watered down. The waiters aren’t professional. They are there to bus plates in both directions. Food was slightly better, at a 3 star rating. My wife and I each ordered the baked miso black cod. We know this fish and this preparation from many fine restaurants, including my favorite Japanese in Vancouver. Well this was uninspiring. And at $ 54 ea., a bit of a rip off. Others ordered the lamb, at $ 78; ribeye beef @ $ 75; grilled chicken @ $ 62…all of which looked like average portions, yet again way overpriced. Standard white wine was $ 118/bottle, and glasses of wine were $ 20-$ 26, each!!! I’m cool to spend money when deserved… and this ain’t it. If not for the view I’d give this place 1 star… Certainly no need to come here again, and I would advise my friends not to come here either.

Came here for dinner. We had the Chef’s Tasting Menu and Wine Pairing, and the food and wines were tasty and well-presented. The meal started with a mesclun salad to die for — I don’t know what was in it, but it was really good. There was a forgettable egg dish with tiny scallops that was creative but my least favorite. It was followed by a caramelized baked cod with a mango flair — this was wonderful. Then a Maine lobster and angel hair pasta — tasty and good chunks of lobster, but nothing to write home about. Then a good, tender square of filet mignon with a yam/squash purée and asparagus. Finally, a lemon tart/square/ice cream dessert. I skipped most of the wine pairings and opted for cocktails but heard the wines were very good. Overall yummy food with solid service — but besides the cod, all pretty much forgettable. I did not pick up the tab, but I heard that it was over $ 400/person. A nice location at the top of Tower 1 of the Marina Bay Sands. More of a hip spot than a special experience.

Beautiful view, good service, definitely overpriced. We came for the executive business lunch and that was a pretty good deal: 3 courses for $ 50. However, if u opted for some dishes not on the menu, it starts adding up. Result: $ 250++ for 3 ppl w/o alcohol. My lunch: Bak ku teh with pork ravioli. Why? Coz I don’t live in Singapore and I miss local eats Pan fried Foie gras. Good but entirely too rich. 2 pieces of fried foie gras was over the top. When I took my last bite, I needed a glass of water to cleanse my grease filled mouth. Maybe a sear would have been a better cooking method Hokkien Mee. By this time, you’re thinking, why come to sky on 57 to have street food you could get for $ 5 down the street. Becoz I was here with the parental unit. And I miss local food. Anyway, this was great; tons of perfectly stir fried giant shrimps. Overall, great for a biz meal. Great to do it once. Definitely pricy otherwise

Disappointing. The decore, aesthetic etc, is all top notch, being on the 57th floor of the Marina Bay Sands hotel. The hostesses were all quite nice. The issue started when we were seated. The wait staff was slightly rude, and my friends didn’t want to order any appetizers and the waiter was pressuring them to do so, and in fact pressuring us to get a $ 180 /person prix fixe menu that nobody wanted. I ordered the Foie Gras appetizer, which came in Chinese style soup-dumpling form, and to be honest I didn’t want to eat them any more after 2 of them 5. I am a huge foie gras fan, and I did not enjoy them at all. My main was suckling pig, which was perfectly crispy on the outside, and quite a generous sized portion, but unfortunately a little dry on the inside and I didn’t finish it. My co-workers foods looked decent, but nothing worth the price or coming back for. If the wait staff had been friendlier and more pleasant it would have been a much better experience.

Head Chef Justin Quek’s style pulls from local Asian cuisines with some hints of European influences. Singaporean classics like Hainanese Chicken Rice and Hokkien Mee featured on the menu alongside more French inspired dishes like pan seared foie gras and mussel veloute. The view from the dining room expands across the whole end of the SkyPark’s end deck giving impressive views across the Marina Bay and the city skyline. We ordered salmon and oyster tartare which tasted like a breath of the sea, soft shelled crab, buri oh ceviche and then we all had decadent Maine lobster. Whilst the food was faultless the service was slack, slow and inattentive

Ich kann Franziska nur zustimmen. Allerdings waren wir zum Dinner dort. Der Aufzug beamt Dich geradezu in den 57. Stock. Spektakulärer Blick über die City bei Nacht. Das Abendessen war sehr gut, aber auch sehr teuer. Das Glas Weisswein kam gerade mal auf schlappe 21.-€. Ok, ist eh nichts für alle Tage, aber wenn man schon mal dort ist, würde ich es empfehlen. Unbedingt vorreservieren. Wer einen Fensterplatz haben will, besser ein paar Tage vorher.

Nach dem Motto: ”Jawohl. So lob’ ich mir das oder Wow! Besser geht’s nicht!” schreibe ich den Beitrag für das schönste Restaurant(zumindest das ich bisher besucht habe) in Singapur. Das Essen war sehr gut muss ich sagen– obwohl wegen der Lage(57. Stock des Marina Bay Sands — das spektakulärste Gebäude in Singapur weit und breit!), Service und Küche, entsprechen hoch ist. Es war eigentlich nicht geplannt dass wir uns direkt nach dem Ankunft sofort ‘fancy essen’ gehen — aber es war das Marina Bay Sand’ Schuld! Das Zimmer war noch nicht fertig(ja, wir kamen viel zu früh an!) und unser letzte Mahlzeit lag über 700 Km zurück… Deswegen war ich super froh dass wir zum Mittag einen Tisch bekommen haben und dadurch das Lunch Menu(a bit less expensive than the Dinner Card) geniessen könnten. 3 Gänge Lunch Menu beträgt über 30 Eur(vergleichen mit Hawker oder food court kostet eine Hauptgericht ab 3 Eur). Das Ambiente ist einfach toll — das View noch atemberaubender! Falls man nicht unbedingt das große Geld zum Essen hier ausgeben möchte, soll man vielleicht mal zum Cocktail hochfahren! Es lohnt sich!!!

I went to Sky 57 on a Thursday night for my pre-birthday dinner and when we were seated, we saw the chef get up and make his rounds by our table… but stopped right before our group of 5. Turns out that Cee Lo Green and his entourage were having dinner next table! How awesome is that. What wasn’t awesome was the lack of attention paid to local guests, Chef. In general, I found the menu too foie gras heavy. When over done in a menu, this strikes me as lazy for lack of effort. just plunk foie gras in, it’ll be great! There were more misses than hits, although the desserts I had were delicious. Also kudos to our server for presenting a plate of birthday macarons with a candle! With the spectacular view as well as the chef’s «celebrity» declaration, Sky 57 stands out. However, I wasn’t impressed with the menu and for the damage of over SGD1,000 including champagne, I would rather go to Pollen at Gardens by the Bay(review coming up) Food-wise, (Appetizers) –the foie gras xiao long bao was umai and juicy, but not particularly memorable –Chef’s appetizer platter, I enjoyed the crab the most in it’s chawan mushi cocotte –seared hokkaido scallops were delicious but overpriced at $ 50 for 3 –mushroom cappuccino was a refreshing, airy take on a rich and heavy classic –fried maine Hokkien Mee was awful. Thick starchy noodles in a bland gravy. Your hawker center uncle would do better. (Mains) –Wild Mushroom Risotto was delicious and perfectly executed. Lobster and foie gras paired perfectly with dense meatiness of mushrooms –JQ’s Signature Roasted Crackling Suckling Pig with Yuzu pepper sauce had thin and crispy skins but what I didnt like was the underlying thick layer of fat that made the pork too rich to consume. Generous portions though –Duo Preparation of Sakura Chicken presented juicy tender fillets of meat, nicely paired with leg confit in duck fat, Seared foie gras and aged Shaoxing émulsion (Dessert) –Bitter Chocolate and Caramelized Banana Mille-Feuille w/Calamansi sorbet was the best. Dense, chocolatey cake and bananas are a match made in dessert heaven –Apple tart. Give this a pass. Kinda like tarte tartin, but thinner and crispy. Meh.

Have only had breakfast here(thrice) so accord my ratings for that purpose. It is a dignified, sterile experience. Not as messy as Rise, but the lack of options is a huge compromise. There is a small buffet option + options you can order a la carte. There are some local hawker favorites(laksa is very popular) and some other ang moh options(organic slow-cooked eggs). Plus — I have NO idea why almost 80% of the dishes are out of stock when I come from breakfast… if the kitchen sees this as a recurring trend, shouldn’t some effort be made to increase cooking volumes? That is my one grouse. Service is awesome though. Kudos.

Over-rated, mediocre food that survives mainly because of its chef’s undeserved reputation as a Singaporean who achieves success in Taiwan. Foie gras xiao long bao? The ones in Paradise Dynasty are better. There is just nothing special in this overpriced restaurant which basically presents Chinese food in a fancy plate.

I probably wouldn’t dine here on my own dime, but have come a few times for business and I’d come back for any business meals! :)

At the top of Tower 1 — and don’t go all the way up Tower 3 like we did only to find out that they wouldn’t let anyone walk through the pool area without a pool pass, even if they had reservations. Luckily, we did have a pool pass and made it through. But Tower 1. You heard it here. There’s a remarkable amount of fancy food at the Sands which is standard European celebrity chef fare — Sky is by a local chef and features some takes on local dishes, which was the attraction. It’s a formal place with formal service, and stunning views of much of Singapore. Most tables seem to have something of a view, though we were seated at one which was not directly adjacent to the window. They do have a S$ 100 minimum spend per person in effect, though a couple of girls at the next table over were able to talk their way out of it. That said, it’s not difficult at all to spend that much here — our tab for dinner ran around S$ 350. They offer a tasting menu and had a special seasonal set of white truffle dishes that could be ordered a la carte. There’s an appetizer quartet offered — ours had a foie custard with caviar, oysters wrapped in seaweed and deep fried, another cold foie preparation and a raw fish dish. Probably the best dish of the night, though portions were small, flavors were clear and textures interesting. Foie Gras Dumplings(xiao long bao) came five to an order in a bamboo steamer with reasonably thin skin and plentiful soup inside; a good effort with clear foie flavor. The pasta dishes on the main menu are somewhat cheaper than those listed as «Main Dishes», but sized as such. Lobster Hokkien Noodles were somewhat disappointing, too soft and swimming in an over-rich broth. Lobster was, to be fair, in plentiful supply, including claw meat. A salmon dish with sea urchin was similarly uninteresting as a fusion effort — two pieces of salmon served over a bed of chopped, cooked cabbage with uni on top. The plating was intricate with accompaniments of tomato, mushroom and potato, but the flavors did not add up to more than the sum of the separate parts. For dessert, another assortment was offered: for small parts including a pandan crème brûlée, mango with sticky rice, a sorbet, ice cream and an interesting molten-centered cake. The flavors were good and the plating very fancy. The restaurant offers wine, beer and cocktails, and charges $ 6/person for unlimited bottled water service. The wine list offers a large selection of bottles, and a decent number of by-the-glass choices, though with typically high Singapore prices for wines that would go for much less elsewhere. Pacing was variable as the restaurant filled up, with waits between some courses. Service during our visit, while polite, seemed at times more concerned with the fancy aspect than the service aspect. For instance, used utensils left on plates to be cleared were carefully placed back on the table — they may not have been those the restaurant was intending we use for the particular course, but they were placed directly prior to the course being served, and they were the ones we used. Rather oddly, the dessert menu was given to us at the beginning of the meal and then retrieved, and at the end we had to insist on seeing it at all. Overall, though certainly a high class respite from the western celebrity chef cuisine that seems to be featured at the resort, the experience was not quite the experience we were looking for. The local chef and fusion aspects appeared at first promising, but in the end, much of the menu and service was straight European style, and the few fusion dishes we were able to try were variably successful.

There has been mixed reviews about this restaurant at one of the best locations in town. Since reviews are always subjective, it might be worth trying once in a lifetime as we all knew that that was a place that we could not possibly stepped twice. With some minor slipups with the reservations, we were ushered to our tables and served with some bread(cheese, dried tomato, french bread) and some butter. We ordered one gastronomic seven course set and the rest was ala carte. The gastronomic set included specials that featured the seasonal white truffles. Overall, I cannot really judge whether the modern Asian cuising here is really fantastic or poor for the price because this is only my first time experiencing food with a sky-high price and brand name. However, I can say that similar or even better-quality food can be found elsewhere. Certainly, this had been a rare experience and also an eye-opener. To be fair, there are both tasty dishes and rather lacklustre ones. Nonetheless, the service was marginally average and the timing of the serving of food has a lot of room for improvement.

Had dinner at Sky 57 and the View is Amazing… Over all the food was excellent, some dishes was OK. But the server was very friendly and the sommelier /manager: Damo was very knowledgeable in wines, so we explained the type of style in wines we like and he recommended some great wines. Also with the food we were eating, you want the wine to bring the food out and blend with it well. We got 2005 Domaine — Gourt De Mautens &2005 Château Sociando Mallet. Both went excellent with the food we ordered. Started off Wagyu beef(from Australia) Carpaccio with truffle vinaigrette and organic greens. The meat was excellent and the truffle vinaigrette just brought the flavor of the wagyu out more. The fresh oysters we had was the Fine de Claire No. 1 which was more of the sweet one the waiter said. No… It was more Ocean flavored and sandy taste. They were big, but if we had vinaigrette to mask the sea flavor would have been better. So that was the not so good taste dish. For the second dish my girlfriend had the sautéed Maine lobster«Marco polo» and I had a bite which was tasty. For the main dish I had the Signature roasted crackling suckling pig, with yazu pepper sauce.(see picture) The meat was juicy and tender and the skin was a nice crispy so having that with our wine was beautiful. But I will have to say the BEST dish was the Seared Kagoshima Wagyu tenderloin. I’ve had Japanese Wagyu before in Hong Kong and the Meat and marble of the fat melts in your mouth. This dish does so as you eat the Wagyu. Excellent and really worth the price.

I come here once in awhile for their modern fusion cuisine. The menu always changes, but the view never fails to take my breath away. I’m a fan of the lobster pasta, and they didn’t have it on evening menu once — however, if you request it, the chef will willingly prepare an old dish that’s been taken off the menu! So A+ for service and effort. I also love their iced lemon tea… brilliantly refreshing. It tends to get crowded though in the evenings, and obviously the seats by the window often get taken up. Also, sometimes the overworked waiters might not provide the impeccable service you find in other«fine dining» establishments such as Joel Robuchon or Guy Savoy. The atmosphere isn’t as stiff or formal as the other two French restaurants. After your meal, you can head over to Ku de Ta, or take a walk outside as there’s a kind of observation deck that surrounds the restaurant, and admire the view of the city skyline.
