Freshly made soba noodles, what’s not to like? I like it here a lot but find it very inconsistent every time I go back but know I will be back again. I always get their cold miso soba noodles. The noodles themselves are excellent and I always scarf those down very quickly(even ordered a second set one time). It’s the miso that changes flavor every time and I’m not sure why. Still a lot of fun to figure out how much miso you’d want to mix in with your noodles. Then afterwards, you can use the hot rice water to mix with your miso paste/soy mixture and drink the combined soup. Very good! Also not the biggest fan of how they tend to run out of items like their special ice cream and one of their other tea drinks. Highly recommend if you are looking for fresh soba noodles. Not even sure if you can find this anywhere around Singapore.

Easily the finest freshly made Soba in Singapore! It’s a MUSTTRY. It’s a bit pricey but well worth the money!

If they would allow substitutions, this would be five stars. First I asked for the saba warm soba, and they were out of it. Then I asked if I could get warm soba with yakiniku beef but not with the egg and fish cake, and the server had to go ask if that was possible(it wasn’t). I ended up having the most basic warm ramen(kake) and the wagyu beef. Both were great. This is probably the best soba in Singapore. I also wanted to order more spring onions, but the pricing structure in the menu, such as $ 5 for extra sauce, suggested it probably wouldn’t be worth whatever they would charge.

Finally found kamo soba but its a total disappointment. I can only say i get better soba in any of the train station soba shops in japan! I wont recommend this place especially for the price they are charging.

Mon coup de coeur à Singapour, le restaurant SHIMBASHISOBA situé au sous sol du centre commercial Paragon S’pore. J’y ai découvert le Mori Soba, des nouilles japonaises confectionnées à base de farine de sarrasin et d’eau en version froide. Elles sont accompagnées d’une délicieuse sauce appelée Soba Tsuyu composée d’un bouillon de dashi(algue Konbu et bonite séchée), mirin et sauce de soja sucré. On peut y ajouter au choix de la ciboule et du wasabi. Pour ma part je n’y ai mis que de fins morceaux de ciboule. Je vous conseille fortement de l’accompagner d’un délicieux Sobacha(thé de sarrasin). Le petit plus avec ce plat, réside dans le fait de né pas en perdre une miette, c’est à dire qu’une fois que les nouilles sont terminées, la coutume japonaise veut qu’il n’y ait pas de gaspillage. Le Soba-Yu, alias l’eau de cuisson qui a servi pour les Soba est ainsi réutilisée. Elle est donc versée à la sauce Tsuyu(qui nous a accompagné durant le repas) et il n’y a plus qu’à boire ce breuvage plutôt doux au palais. Il parait même que c’est excellent pour la digestion ! Un délice croyez-moi. Ce restaurant regorge bien évidemment de plein d’autres plats à découvrir lors de ma prochaine venue.

Good place for a quick casual lunch(or early lunch in the weekend, since it tends to get crowded after 12:30, and you will end up waiting too long). Easy venue, ok service, good variety of soba. I have been here three times, and i am a fun.

Want some really good hand-made soba that’s comparable to what you can get in Japan? This might be the only place in Singapore. I am really picky about my soba since I have been to Japan many times for work and fun and I know what it’s supposed to taste like. Hence, I wouldn’t eat soba at places like Sushi Tei or anywhere else. So me having to write about how awesome this place is, it should mean a lot. Try cold soba with fresh wasabi(not the tube/pasty one) and their rice balls.

I’m torn when it comes to choosing between soba and ramen, but if I had to choose, I guess it would have to be soba as I find it’s not as ‘heavy’ as ramen. And one of the best places to have very good and authentic soba is at Shimbashi. All of the noodles are handmade here at Shimbashi and are as fresh as soba noodles can be. There’s a choice of hot or cold, and a combination that has both. Personally, I find the cold soba noodles a much better option as they retain the springiness when you bite down on them. While they do have bento sets on offer as well, I’d recommend you give them a miss as they’re specialists in soba and if you wanted to haven bentos, then you probably should have gone somewhere else instead!
