Behind the curtains inside the Matsalen room sits a 10 person table where they cook for you interactively. Born are discussions, questions and insights into the cooking that happens at this restaurant. Certain days have different highlights. I went during Radical, where the chef chooses to make one dish, with one beverage pairing in an hour. The dish they made was a roast pork with cracklings, radish, jerusalem artichoke, vinaigrette, and beetroot. It’s a play on one of their early recipes. We discussed food politics, how they came to coom professionally and i met a ton of new people as a solo diner in Stockholm. Afterwards rhubarb crisp pie and coffee were had.
