Originally from Kokura, Kyushu, so their soup is «Tonkotsu»(pork bones) based broth. Tonkotsu is getting popular in Kanto region but there was no Ramen shop for Tonkotsu soup in Zushi. You can order firmness of noodles from 6 ways, how chewy they are, Konaotoshi(just dropped powder) Harigane(like wire) Barikata(very hard) Kata(a little hard) Futsu(normal) Yawa(soft) and I order 4th, Kata but it was the hardest noodle I ever had. Noodles are very thin so it seems to be boiled less than a minute… If it is not enough volume, you can keep your soup and order extra noodle to put it on your bowl with 100 Yen. There was a notice at the entrance that this coming Michelin Guide will have this Ramen shop(I guess it should be their main shop in Kokura… not Zushi, not sure though…) It is worth a try.
