No offer to sharpen or engrave my knife that everyone else on the web talked about. According to the guy, «it’s already sharp» after taking it out of the case. Offered up very little advice and information. After spend that much on a knife, I’d hoped for better service. After taking the knife home, I came to realize that the lack of sharpening definitely made a difference. My first time using the knife, I was cutting an orange and accidentally made light contact with my fingers and the tip of the knife — no damage. I’ve had a really sharp knife that just a nip from the tip of a sharp knife would leave a mild scratch. My second time using the knife was on sweet potatoes and a good sharp knife should not have problems. I found that the potatoes were difficult to cut and the knife ended up slipping and cutting my finger. Very disappointed with the quality. I’ve also used the life on several other vegetables, and the performance was disappointing. Do not buy from this store!!!

There are several knife places in the tsukiji market area. I read some reviews and heard great things about this place. They have a great reputation for supplying chefs with their knives. After talking to the guy about the different knives he directed me towards the«gyuto» western style chefs knife. I bought the carbon steel knife, so I know that I have to take care of it washing it after every use and making sure it is dry also. I read that they will develop a natural patina, but that is natural. The carbon knives are supposed to be sharper than stainless and hold a edge longer. They have their knives in several different steels including stainless. My knife came out to less than $ 100.00, but I know they have some very high end ones also. After you buy the knife, Mr. Hirano(owner) will chisel in your name on the handle for free. I used the knife the other day and this thing is like using a giant razor blade. I don’t know when I’ll cut myself, but with this thing, it will be bad! I would definitely like to buy more styles of knives if I ever go back to Japan!
