Sabu-chan was a lucky find for me. I was walking around Jinbocho one afternoon, hoping from one bookstore to another and was looking for something to nibble one. As Jinbocho is an old town and I wanted to stick to the retro, old and nostalgic theme, I decided to look for a restaurant that looks like it’s older than my mum. I walked into an alley and found Sabu-chan in his worn out undershirt and dirty apron around his waist sitting just outside the shop with a newspaper and a cat curled up nearby. This old ramen shop is a about 15 sq m2 large with just a red counter that seats about 7. It’s was around 4ish in the afternoon so the shop was empty. I took a seat in the middle of the counter, making sure I get a good view of Sabu-chan at work. He laid down his newspaper after I called out my order and he slowly wobbled in behind the counter. He boiled some of the soup which he took from a big pot and started boiling my ramen. I also order a mini fried rice(chahan) and he started up the wok as well. Although, he’s a little bit and not getting any younger, Sabu-chan knows what he’s doing and works like clock work. The egg noodles were smooth and tangled well with the soy sauce soup base. The thick cut charsiu were flavoursome, I felt like time has stopped in 1940s in this shop. I wish shops like these will be around forever
