The biggest benefit of this job is the great food I get to taste in the name of the-e-list. But I’m a simple girl at heart, and my favorite food is pizza(with popcorn a close second). I had a nirvana moment at the Celebration of Connecticut Farms last weekend at the Skinny Pines Pizza Truck. Imagine a super thin, crisp-crusted pie made from locally-milled whole wheat flour, topped with the freshest organic ingredients and wood-fired on the spot. There were over thirty amazing restaurants represented at the Celebration, but you couldn’t drag me away from Skinny Pines. Here’s the best news: they’ll come to you with their mobile pizza oven and cater your party or special event. While pizza, salad and gelato are their standbys, they’ll cook up anything that can be made inside their brick oven: roasted oysters, pulled pork, chicken sliders, s’mores or Chef Jeff will develop a menu just for you. We love their dedication to sustainable practices: tableware is biodegradable and pizza boxes are 100% recycled. Nice! Cost ranges from $ 15 — 30 per person with a $ 750 minimum.

Skinny Pines catered my wedding welcome reception/rehearsal dinner for 70 guests this August, and was a HUGE hit. The salad and pizza were phenomenal, and I got lots of complements from guests. We were looking for fresh, quality vegetarian food that would satisfy meat eaters and not break the bank, and this totally fit the bill. Highly recommended!

Skinny Pines is amazing! They catered my Christmas party this year, providing delicious gourmet pizzas for 80+ people. They arrived early, set up in my driveway, and were ready to serve as promised. Vic, Jen and Amy were friendly, professional and just a joy to have around. My guests were thrilled. Everyone wanted to know who these«guys» were, where I found them, how to get in touch with them, etc. And the pizza was soooo good. Gourmet, farmer’s market pizza and traditional toppings too. Something for everyone. Another great feature was that these are relatively small pizzas, so each piece of pizza is easily managed while standing around and chatting cocktail party style. I supplied cute little plates and no one even used them. And in case you need more convincing, Jeff made the whole process easy… from my initial contact to a follow up from him asking how it all went. He was responsive, his prices are reasonable and he supports local farmers and purveyors. I can’t wait to have another party.

Each Thursday at the Westport Farmers’ Markets, the first thing you’ll notice is not just a plethora of local produce, but the wood-fired oven attached to a green Dodge pick-up truck called Skinny Pines Pizza Truck. Skinny Pines aims to keep its pies as local as possible, buying all its produce and many of their key ingredients from farms in Connecticut and New York. In fact, Borofsky and his truck are headquartered in Easton, just less than five miles from Sport Hill Farm, where they are regular customers. The dough is made from hard red winter wheat, a 100% whole wheat grain milled to 00, sourced from Wild Hive Farm and Bakery in Clinton Corners, New York. The dough itself is treated to a 12-hour cold fermentation before it’s left to rise for its weekly market appearance. This whole wheat dough is used on each and every Skinny Pines pie. The combination of finely ground 00 whole wheat flour and the wood-fired oven creates a light and airy crust, with just a hint of pleasant nuttiness. The Bianca is my recent pie pick, a white kalamata olive and rosemary pizza. Borofsky’s toppings change seasonally, so check back often for his seasonal pie offerings and call ahead for their location.
