I liked ALL! This noodle heeled me. I ordered sesame noodle, my husband ordered something with super tender soft juicy pork. While we were waitting, good smell was around us. My sesame noodle had bunch of fresh veggies on the plate. all veggies are fresh and clean… When I was talking to him, he was cleaning cilantro really well. I really really enjoyed my noodle! I totally forgot to share my noodle with my husband… cuz It was so YUMMY! I can’t go back to Taos for this GREATNOODLE place! Thank you, Marshall.

My first time ordering from a noodle stand and it was great! Marshall is definitely a character and it’s apparent that everyone around there knows him, as there were constantly people greeting him as they passed. I ordered the caramel coconut sauce, which was so delicious! I’m not the biggest pork fan, and although pork was normally in the dish, he was able to accommodate me and adjust the price. He was such a charismatic guy and even walked over to ask how the food was when he wasn’t busy. When I told him that I would love to repeat this dish at home, he began giving me the run down on how he made it including tips and special ingredients — so cool!

Sitting here, you can tell Marshall has a presence. People who live here say hi to him in passing occasionally. Growing up in Richardson, TX, I’m used to a lot of Asian cuisine. Out here in Taos, it’s a lot more uncommon. I ordered the red curry rice noodle bowl and the avocado spring rolls. The taste is definitely close to home. The curry, ordered as spicy, was very tolerable and had a sweet kick to it. Portions were very generous. The spring rolls faired well. I felt they could have been rolled tighter, then again we arrived just when was setting up during lunch time. Marshall’s demeanor exemplified he had nothing to prove. He seemed to be a minimal talker and let his food speak for him. Like a chef.

Small open air dining experience. Superb fresh food. Made in front of you including slicing the veggies. Takes special orders. Saw him run out and assist a lady with small child eat comfortably. Great service. Must eat here again

I’m not normally a big fan of fusion cuisine but Marshall’s has definitely found a good balance. The spring rolls were truly satisfying with the nice supplementation of buckwheat noodles and yummy marinated chicken.(You won’t find much fresh seafood anywhere so far inland.) The ingredients are very fresh and flavorful as he does his prep right there just before lunch and he sources local farmers. The tangy dipping sauce is ok and one can do without it. He didn’t offer me peanut sauce and I’m not sure it would have worked for his wonderful creations anyways. I’m not normally this confident in my reviews except that I live in an area with over 1 million Vietnamese residents and my close traditional Vietnamese friend has cooked similar foods for me. Not sure where Marshall gets his training/inspiration from, but his spring rolls are worth going back for. In fact I did exactly that, placing a second order to go. Marshall himself seemed to be friendly with everyone who worked in the general vicinity. He reminds me of some television cooking celebrities: a memorable look, a bit wry, opinionated, and of course talented.
