This was honestly some of the best Texas BBQ I’ve had. I had the chopped brisket sandwich and it was delicious — the sauce was perfect, and I really like my BBQ saucy. The brisket wasn’t too fatty or overly smoky, and the texture was just perfect. I also had the blue cheese potato salad which went well with the sandwich. The blue cheese was not overpowering, and it ended up being a really refreshing side. Really glad that I found this place, and the next time I need a break between the drive from Austin to San Antonio, I’ll stop by here again.

If you could smell this place while I sat at the table for my order? Or my car as I drove home? You’d already have your shoes on and be piling in the car to get here without even checking if they’re open or not. Once again, after a minimal wait I was handed my to-go box and told my napkin/utensils were tucked under the waxed paper. Love it! This was a day to turn off my sodium meter. Smoked chicken quarter to start. Fried mac n cheese bites and(since he was out of bleu cheese potato salad) beans for sides. Mexican Coke – I did once purchase a bigger Coke, a 1.5L mehrwegflasche in Germany, just to let you know what is possible – in an impressive .5L bottle. And Coke in glass bottles just tastes better, as any older person can tell you. Lovely crispy skin, tasty smoked meat. Beans in dark savory red sauce like my husband’s favorite ranch style. Mac bites are a rather silly special indulgence for me, I confess, but these are as good as I have ever had, not gummy nor greasy and perfect little bite-and-a-half-sized morsels. Taste great dipped into the beans! It is a good thing I wanted a nap before I head in to work tonight. This has absolutely filled me to the brim. I shall certainly return to try the potato salad.

I ordered a chopped beef/pork sandwich and waffle fries and they were both AWESOME. The food was great, the service was great and I waited only a few minutes before my food was brought to me.

The loaded baked potato is probably the best potato I have ever eaten! It was so good! I’ll definitely be back here soon! The chopped BBQ sandwich was also very good.

Located in the Hitch Mobile Eatery. Absolutely, 5 stars for this guy! Yes, I say guy because this one guy runs this whole trailer, cooks, delivers your food to table, talks to you, and smokes meat. Unbelievable. Mostly, he sells chopped BBQ brisket sandwiches, beans, deep fried mac-n-cheese and a host of other things including ¼ chickens and sausage wraps. What I enjoyed was a leg quarter, which was previously smoked; and then, deep fried(no flour, like a hot wing is prepared). You then douse the chicken with his homemade BBQ sauce. That chicken had a mild smoke taste, and I saw the smoke ring. What makes this place fun to visit is talking to the owner about the food truck business in general. He loves what he is doing and customer service is number one to him.

Being a huge fiend for Brisket and an overall lover of Texas BBQ, this was obviously good news. They are serving some really good Brisket and some other options that are packed with a ton of flavor. This Chef has taste. He made some fresh Potato Salad today and gave me a sample and I was very impressed with how balanced it was and how I wanted to eat it as fast as possible hehe. It was definitely the best potato salad I have had in years.

Do you know what’s better than the smell of mesquite smoked Texas BBQ? I don’t either. Monday, when I opened my car door after parking in Mimi’s Trailer Park Eatery’s parking lot, my nose was blasted with the savory, smoky smells from the newest addition to the San Marcos food trailer scene, Smoked Out Barbecue. I took a deep breath of the smoky goodness, and walked up to the service window, where I was greeted by Chris and Brandon, the dudes behind the ‘cue. I was pretty excited, but I didn’t know what to get. There was no menu. I had no clue. I was lost. I asked what they had, and Chris let me know that since they were just opening, all they had for today was chopped pork and chopped brisket. They could do sandwiches or potatoes. Full of anticipation and drool, I literally followed my nose to the shiny red trailer. The first thing I noticed about the Smoked Out Barbecue trailer is that half it is not like the other. What I mean by that awkwardly formulated statement, is that half of it is like a normal food trailer, complete with kitchen, storage, counter space and other food trailer things. The other half is closed off from the kitchen part, and is actually a screened in area that houses two smokers and a refrigerator. I’m used to seeing strange attachments from BBQ trailers, but this one is actually PART of the whole shebang. I was in the mood for beef, so I chose the chopped brisket in a potato. There was no way I’d pass up a delicious smoked brisket stuffed baked potato. NONE. But apparently I wasn’t done. Did I want cheese? Sure! Did I want sour cream? Why not? After placing my order, they let me know they’d call my name when my awesome potato was ready. I made my way to a purple picnic table and basked in the sunshine. It was a truly perfect day for outdoor dining. A short wait later, my name was called and I practically made like a track star, and sprinted up to the trailer to retrieve my over sized baked potato over flowing with meat, cheese and sour cream. It was gorgeous. Insane. Picturesque. My first bite shot me straight to barbecue heaven. No passing«GO!» No collecting $ 200. Straight up. It was deep and dark. There were so many flavors besides just smoke. The meat was woody, earthy, a bit spicy, a touch sweet and very amazing. The meat was crunchy and velvety; crispy and buttery. It tasted like it might have come out of the smoker, been chopped up, mixed with grilled onions and thrown on the grill with some amazing sauce. I’m guessing that’s what happened. But I don’t know. I was too focused on the amazing food in front of me to ask any questions. What I loved about this dish was that the hot, fluffy potato mixed so well with the dark flavors from the smoky meat, the melting cheese and the cooling sour cream. This was true winning combination. Each bite was unique and different from the last. The textures were so completely complimentary, and I kept wanting more. Then there was no more. How I put all of that food in my belly remains a mystery, but I did it. And I liked it. I can’t wait to see what the full menu will bring to the San Marcos trailer food scene!
