I had my meal and drink and I thought all was fine. I looked at the bottom of my tea and there was a dead fly at the bottom. Grossed me out. Never again!!!

First time here and I really enjoyed the green beans, which were amazing, the brisquit and of the sweet tea. I even got a free sausage and egg breakfast taco. Which I got to top with an out of this world Pico de gallo! It was tasty and was spicy enough to enjoy the food but not so much to take away from the food. Only downside is that the potato was really warm. I’d say it was mashed potatos instead of potato salad.

–Lunch. If there is one thing I can say about Bill Miller’s BBQ, it is consistent. All of their smoked products come from one central commissary with almost no variation in flavor or appearance. I find the brisket to be too dry and to ‘soft’ for my pallet, but If you want consistent brisket, then go for it. I like their course-ground peppery Czech-style sausage. with with a texture and firm natural style casing bite that one rarely finds in a chain of this proportion. I’d pay the sausage makers two weeks’ pay to give me a week-long lesson in meat selection, proportioning, spicing, grinding, casing and curing. You don’t have to drive to Poth, Lockhart or Elgin for this sausage. But if you want to smoke your own, you will. As far as I know Bill Miller doe not sell unsmoked sausage by the box as you can find, tax-free in above mentioned meccas. The ribs, among all other smoked meats, are hit or miss, They do not take the extra step of removing the membrane from the rib body, so if you’re averse to rib membrane, steer clear. I don’t care one way or another, but I would not recommend the ribs, as tasty as they can be early in the day. Bill Miller has perfected batter fried chicken pieces. I am not a leg guy, so my typical order is a wing and a thigh; it is the best of the light and dark pieces. The chicken is untrimmed of excess fat, so take that into account. But the fried chicken pieces, hand battered and fried on location, is what keeps me coming back for lunch, Just remember to order your fries crispy. Enjoy that plate of crispy fried chicken with a generous portion of marinated white onions sour dill pickle slices and a piece of black(semi-pumpernickel) bread. The chicken strips, on the other hand, although generously portioned, are more often than not dry and stringy that only a cup of the cream gravy can save them from mediocrity. Just remember to order your fries crispy and have the whole plate, strips, fries and gravy, served at the same time. Otherwise your gravy will cool down while waiting on your crispy fries to arrive, making you a very sad panda 2⁄3

I really enjoy how consistent Bill Miller’s is. There’s maybe 4 San Antonio locations that fall from the norm. I’d take a 3 star review for this chain with stride. The more Bill Miller’s I visit, there’s some subtle variations I miss. Like some have no cold bar or prepare your food bend the scenes and then call you when it’s ready. This location is neither of those. The staff is friendly and serve the lines quick. The dining room is very clean and the cold/salsa bar is well kept. The dining room is a bit cramped, but not horrible. Parking outside is a good size too. It can be a bit tricky to get into the parking lot, given the busy intersection, but the entrance doesn’t make your car dip or anything. The meat is fresh and the bread isn’t stale. Sweet tea is perfect and the sides are hot. What more could you ask for?

I don’t think anyone would say that Bill Miller’s is their go-to place for smoked meats, but I’ve found all their locations to be consistent(they should be — everything is cooked in a central commissary) served quickly, and very reasonably priced. My only significant complaint is that you have to pay for soft drink and ice tea refills. While their BBQ doesn’t compare to the legendary establishments scattered around Texas, that’s not the niche they strive for. They are an attractive alternative to most any other fast food chain. If you don’t go to Bill Miller’s often and you assume it’s just a BBQ restaurant, I’ll let you in on a secret. Try the fried chicken. Once again, it won’t compare to the heavenly pan fried chicken at Stroud’s in Kansas City, Charles’ in NY, or even Max’s Wine Dive here in San Antonio, but I like it better than the chicken specialty fast food joints. Unlike the other meats, the chicken is fried at each individual restaurant and it’s always hot, crispy, just a little greasy(well, maybe a lot greasy, but in a good way), and the pieces are always plump and juicy. You’ll probably also enjoy their steak cut french fries. They’re frozen, not fresh, but I still like them — they make a great compliment to all their meats. If you’ll compare Bill Miller’s to McD’s, BK, KFC, and other similar inexpensive restaurants(because that’s who they should be compared to) and don’t expect a world class BBQ experience, I think you’ll be very happy with what you find.

Not only is this the worst BBQ place I have ever been to. It’s the worst restaurant I’ve ever been to. The staff are great. It’s the food that is disgusting. I ordered the rib platter and sausage plate. The ribs are absolutely bland and the BBQ sauce tasted exactly like tomato sauce with a splash of vinegar. As for the sausage. I truly believe it is minced spam that was stuffed in a sausage casing. If you see this place on the side of the road, do yourself a favor and just keep on driving. You couldn’t pay me to eat here again.

I found nothing bad to say about Bill Miller BBQ it was the best bar-b-que I have ever tasted. Way better than Gradys and Rudys. If you are looking for some delicious food with a great staff to serve it to you with wonderful caring managers come to Bill Millers off of Southcross and Goliad.
