These grilled cheeses are the bomb! My only slight criticisms for this truck is that it is not very much food for $ 5(base price of a grilled cheese), and it is sometimes hard to track down(gotta follow them on Facebook and/or Twitter!). On the plus side, each bite is a burst of flavor, courtesy of their cheese mix and crispy sourdough, and they have a wide assortment of toppings available. I am never disappointed by the quality of their food, just that I usually have to buy two plain grilled cheeses to fill up for lunch!

I was not blown away. My wife had been raving about her experience here a few weeks ago and was eager to share this discovery with me. We caught them towards the end of their shift at the Wooster Square Farmers Market which may explain the poor experience. We ordered a #1 combo with cherry peppers and were handed a sandwich within 60 seconds. I use the term sandwich loosely because it was essentially two pieces of toasted bread with a slice of cheese in the middle, hardly worth the markup. Accompanying the cheese bread were two cups of uneventful tomato soup and some pickles with mustard(probably the best part of meal). My wife looked at me with apologetic eyes and promised me the last time had been better. I’m willing to give them another shot as this appears to be a unique experience. However, I’m certainly in no rush to do so.

If someone comes up to me asks me where they could find good grilled cheese. I will tell them Caseus Cheese Truck in New Haven, of course. Serving gourmet grilled cheese with an assortment of different cheeses: provolone, swiss, comte, gruyère, gouda, sharp cheddar with the option of extra add on’s all packed in between buttery, browned, crisped sourdough bread. Not your budget friendly, boring, white wonder bread! I found Caseus when I came to New Haven for the Cherry Blossom festival. They were among the few food trucks in the area for the event. My-oh-my did the size of the line make you want to pass out. I waited a good 30 min for my turn to order and another 30 for my grilled cheese! If you want Caseus I suggest you see them where there isn’t an event! I got the Cheese Truck Classic Grilled Cheese with the Pesto add-on. No one at this event got any pickles or mustard on the side. Outside of the event, they do include these side-on’s. The grease from the bread was glossy under the hot sunlight and the brown color of the crust would give you the same sultry effect as would the pleasantly tan hotty at the beach with the washboard abs. With the rowdy crowd, I don’t know what I would have done if one of them had bumped into me and knocked over my beloved grilled cheese. And for $ 6, it wasn’t too too bad considering the variety of expensive cheese they give you. Dripping with butter and pesto as I bit into it, please if you want the ultimate fatty food. Come here! They will make you love yourself, then hate yourself, then eventually love yourself because there is no other grilled cheese like Ca -«ZEUS»!! Almighty God of the Grilled ChEESes!

Omg this truck was amazing. Guys running it were super friendly. At first I was a little bit disappointed because I was starving and I’m not a huge grilled cheese guy, but this is differenent. Sour dough bread, grilled with Multi cheese, ham, bacon, tomato and jalapeños… I actually ordered a second one due to my glutinous nature… It was awesome. If you go to black hog brewing, make sure they are there for your visit! Look forward to returning.

OHMYGOD!!! I came upon the Caseus Cheese Truck today while leaving the Apple Store in New Haven. It was about lunch time and I was kind of hungry so I said what the heck and ordered up! What I got for a mere $ 6 was shear PERFECTION… a perfect mix of about 5 different cheeses with a couple of slices of tomato, PERFECTLY melted on delicious sourdough bread(with yummy little crunchy cheese bits stuck to the outside). It was so delicious my husband actually asked me to stop making little noises while I ate. If you see this«cheese» truck, do whatever it takes to wave him down and you will be rewarded with the most AWESOME grilled cheese you’ve ever tasted.

One word! WOOWWWWWWWW! I was a Cheese Truck virgin until today! I tried a traditional gc sandwich today and it was insanely delicious. As were the mustard and those damn newborn pickles(yes I made that one up!!!). :) Whatever you do, find that truck and partake in its goodness!

After stalking the truck’s location on Facebook for several weeks, I was finally able to track it down. I had the special, which had tomato, basil, balsamic reduction and, of course, lots of cheese! I really enjoyed this grilled cheese, especially the basil. My only complaint was that I wish the sandwich was bigger. I felt like I could have eaten several of these — maybe the perfect sandwich for the cheese truck challenge ;)

Do I even need to justify why grilled cheese is amazing? Easily one of the best foods ever, but you almost forget how good they are because unless you’re a 6 year old, it’s not something you eat regularly. Anyway. The grilled cheeses from the Caseus Cheese Truck are phenomenal and completely worth the weight gain and potential heart attack. The bread is fresh, delicious, and perfectly buttered. The cheese.ohhh.the cheese. It’s Caseus, you’re not going to get a slice of Land O Lakes, it’s a heavenly mixture of quality cheeses and completely blows any grilled cheese you’ve ever had out of the water. The sandwich is just perfection, there’s no other way to put it. Crusty, perfectly toasted bread, ooey gooey cheese, yum. I’m down for trying all of the different unique combinations, but cheese and tomato is my standby, and the Cheese Truck’s cheese & tomato is second only to their brick & mortar. I didn’t love their tomato soup, it had far too much spice. I love spicy, I put hot sauce on everything, but there are some things better left untouched. Tomato soup is one of them. I wouldn’t have minded if this was advertised, but it wasn’t so I kind of felt jipped. Not a big deal, but worth noting. To make up for it, their pickles are simply superb. I’ve never only eaten their food when they’ve been at festivals, so I can’t comment much on their speediness during the busy lunch hour, but the service has always been quick and friendly.

I decided to give them another chance and had a slightly better experience this time around. The last time, my sandwich had too much cheese… this time, ironically it was a little lacking in the cheese-to-bread ratio. I ordered it with pesto which was a nice compliment to the sandwich. I asked for no mustard on the side(not a fan of it with grilled cheese… still don’t get this combo?) and was glad they asked me first. I’m not sure why they don’t cut their sandwiches in half before serving but almost everyone in line requested that so maybe they should take that as a sign that trying to hold a whole sandwich is a little messy and awkward. Overall, they have somewhat redeemed themselves in the world of grilled cheese.

It was a rainy day and they were located on Wall and College Street. They advertised on their social media that were serving Duck on Grilled cheese. I was all in. Then when I arrived by 2p they were all sold out so I opted instead for a ham and bacon on grilled cheese. Ordered a bottle of white birch beer and spicy dill chips recommended by the Caseus guys cooking in the truck. The threw in a side of pickles and mustard. The sandwich was mouth watering. Seriously I ate it so fast. The chips and birch beer were excellent compliments. The guys who worked in the truck kinda reminded me of New York City hot dog stand workers — fast but also gruff, I almost felt forced out, even though there was no one behind me. Nevertheless they were helpful with the recommendations. Overall, since Mr. Eric H along with the awesome owner of Ordinary of New Haven, Mr. Tim Cabral I am definitely a fan, regardless of the staff. These guys are my palette’s saving food grace. In my days of when I could eat gluten and just have it mildly annoy me… I loved the Truck. Everything a grilled cheese should be. No surprise, as Caseus itself is amazing(and I’m also a huge fan of Ordinary). Perfect combo of cheese and butter, on delicious bread. And the bacon… ohhhh the bacon! I wish they offered a gluten free bread choice, so I could get down and dirty with this amazing grilled cheese again!

I must admit I stalk the Caseus Cheese Truck’s facebook page more than I stalk my ex-boyfriends, scouting out their location and special around once a day. If it were a person they would probably have a restraining order against me by now. I normally go once every week or two to grab lunch, as long as the special of the day is to my liking and it doesn’t require me to walk too far from my Church St. office. Granted I really should walk a few extra blocks after eating a pound of cheese but nobody ever accused me of making smart decisions. Despite being horribly unhealthy, I love the grilled cheese truck! The special of the days runs you $ 7 which is pretty decent for lunch plus it’s fairly filling. Also the grilled cheese at the actual Caseus location will run you $ 12 without any toppings on it so I’d say its a bargain. The cheese blend is always delicious and the bread is always fresh. If the special of the day isn’t to your liking I recommend getting pesto and bacon on it. But I’ll normal opt for the special because I like trying something unique each time. Also the guys that work there are always super friendly and they cook your sandwich fairly quickly, which makes it an ideal spot to go on your lunch break during a busy workday.

Food(8.5÷10) = serving THEBEST grilled cheese sandwiches. Always fresh. Always with different great combinations of cheeses. The bread is toasty. The cheese is gooey. So gooey. Add some mustard and pickles. Bowchikawowow. I always ordered the soup with the sandwich too. The tomato soup I like, it’s got a little heat to it. Ambiance(x/10) = food truck fo sho. Service(7.5÷10) = standard. usually takes 5 – 10 minutes to get your sandwich because of the line, and most importantly, because they sandwiches are made to order. keeping it fresh. Overall Opinion = Came by this truck whenever I could, during my one year stay in New Haven. New Haven is not big at all, and if you’re living/working/studying around the area, be sure to check this place out.

There were a lot of customers and they had an efficient method of taking the orders and names quickly. The wait was about twenty minutes for my grilled cheese sandwich with pesto and tomato. The grilled cheese sandwich was $ 5 and the extras were $ 1 each. Their website has macaroni and cheese as an add on for $ 2 but they did not have it.

I stopped by the cheese truck to try the grilled cheese I heard raves about. I ordered the grilled cheese of the day which was the pulled pork grilled cheese and got a combo of grilled cheese and gazpacho. The guy working the truck was also very nice and threw in a bag of chips with each customers order. The grilled cheese sandwiches were good but they were probably heart attacks in a bite. The sandwiches were grilled nicely but you could tell much butter was used to get the brown color. The taste was good too but the pulled pork gave it extra flavor. It also comes with mustard and pickles so the sandwiches are more palatable. It’s one of those things that you are told to try. If I was in the area and was craving a grilled cheese sure I would come but I would not purposely make a trip for it.

I happened to be at the Guilford Art Show yesterday and was lucky enough to finally come across this infamous cheese truck that I’ve heard so much about. I had the crafty crispy melty which was topped with bacon, arugula and tomato. So delish! Great bread, an awesome mix of cheeses(which was almost too strong for my taste), crispy bacon and an awesome side of seeded mustard which I want to find out if I can buy bottled now. Three small little slightly spicy pickled accompanied the sandwich and at a staggering $ 8(hey its grilled cheese! and it didn’t fill me up!) its very gourmet but worth every penny. I highly recommend you grab one if you ever come across the truck, its like no grilled cheese you’ve had before!

My favorite has to be the Cheese Truck Classic Grilled Cheese with guacamole and bacon with the full grain mustard and pickles on the side. Gourmet lunch on a small budget. Since moving back home to L.A. where food trucks are everywhere, I’ve thought about and missed the Caseus Cheese Truck many times. I should’ve updated this review when I was still in New Haven and made repeat visits — it’s a five star truck. I quibbled in my original review that the Cheese Truck should offer more options of grilled cheese, and I apologize for being a whiney Unilocaler. Not only is the standard blend infinitely superior to most grilled cheeses in the universe, but Cheese Truck offers daily specials that do give you different cheeses. While I was in town I tried one with spinach, chevre, and red onion, and while it wasn’t as great as the original, it was very tasty. It just turns out that certain cheeses, chevre included, do not melt into gooey grilled cheesiness in the perfect way of that well-researched five cheese combo. I also tried adding stuff to the grilled cheese, and found that the avocado and the jambon de Paris are worth the extra buck. They are delicious add-ins that meld perfectly with the cheese, and go well with a dip in tomato soup as well. Bottom line is this is a fantastic food truck, the likes of which I have not found or even heard of in L.A. I am curious if they’ve dealt with timing issues, as that was a problem, but when the weather is even a little bit reasonable, this stuff is worth a wait.
