The biggest disappointment of my Miami trip. The sushi and maki were only OK and those were supposed to be its big selling points. The conch sushi was flavorless and I generally like raw conch. The scallop ceviche was overly bathed in citrus. Other dishes were over flavored without any finesse. The waiter was pleasant but a bit too green and overly talkative. The best dish was the desert, a crêpe soufflé.

Simply incredible Blue Sea is as intimate and hip as a sushi spot can be. Positioned within the Delano Hotel lobby in an inviting alcove off to the right, the design scheme takes you away from the lobby and places you in a sushi haven. I dined on a Friday night at around 9PM, and the service was flawless. Nina was one of the most amazing servers I have ever dealt with, totally knowledgeable on all aspects of the menu, eager to make recommendations, and she will even give you sake samples if you are unsure of what bottle to pick. Blue Sea is quite small, with seating on two communal tables for no more than 20 guests. The sushi bar is right within the alcove, and you truly feel like you are in some fantasy Japanese kitchen. The food: Whoa — This was not your standard run of the mill Sushi. You know when you order a roll and it is filled with so many tasty ingredients that just end up blending together? Well, that’s not the case at Blue Sea. My favorite dish of the night was the Hamachi and Avocado Sashimi; it was so damn scrumptious. The dish was extremely well plated with alternating slices of avocado and hamachi, leaning against a backdrop of thinly sliced cucumber, meticulously placed in an even, overlapping pattern. The hamachi was as fresh as can be, and the avocado was ripe yet firm. The two combined in a single bite brought wonderful textures to the palate, and you had to mindfully eat it to enjoy the flavors as long as possible. I also tried the Kaleidoscope Roll and the Shrimp Tempura and Jumbo Maki which were equally as amazing. I was so surprised this was not filled to capacity when I dined, and I 100% recommend eating sushi here while in Miami Beach. Afterwards, be sure to grab a post dinner drink at Rose Bar.

I’ve decided that my server Nina at the Blue Sea Sushi at The Delano has magical powers that allow her to convince her patrons to drop wads of cash and be happy about it. After sitting at the long white communal table and chatting up the people sitting next to me Nina seductively waved the menu at me… and I ordered the Tuna Tataki Tower(Seared buttery Tuna with black and white sesame seeds and eel sauce), Soft Shell Crab(perfectly crispy soft shell crab on a fried noodle of sorts that was really good when dipped in the kimchee sauce that comes delivered to the table when you sit down) and the Lobster Martini(tender lobster served in a martini glass sitting atop sushi rice and accompanied with a cucumber salad and a wasabi mayo). You’d think I’d stop there, but then back came Nina waving a dessert menu at me even after I said I was full. One Dulce La Leche Cigar(philo dough filled with dulce la leche and served with a vanilla cream sauce — I believe it is from The Blue Door’s desert menu) and a «Pick Me Up»(espresso mixed with liqueurs) Nina brought me the $$$bill and I happily paid it and left with a full belly and a smile on my face. Go, be prepared to eat, love it, drop a wad of cash and leave satisfied.
