TASTERS! What an amazing deal. We each got to try 4 of their house distilled alcohols. I highly recommend the absinthe. It’s 156 proof, so all you need is a taster of it. They grow all their own herbs to create the fantastic flavor.

Just discovered this new spot. So glad they opened up a tasting room in town, because they are providing something that can’t be found anywhere else in the area.
Ambiance is casual and simple. Combined with the service the whole place is very relaxed but well put together.
They offer a minimalist food menu with classic flavors (bruschetta is amazing– wound up ordering 2 plates). Ingredients tend to be locally sourced and very high quality. Their cocktail menu is really varied and drinks come strong and flavorful (I got the «Aces High» and it was perfect!). One thing my husband and I both commented on was how flavorful everything was, unlike most food/​drink you’ll find in Medford. These people appreciate herbs and seasoning and aren’t going to cater to white-​bread-​and-​mayonnaise palates. Seriously appreciated that!
My husband got the the «Drunken Goat» burger and loved it. I called ahead and was told they could easily accommodate me with vegan food. I hate being the special case, and usually just deal with whatever I can find on a menu (i.e. garden salad or sides), but the server and chef were all about making me something better. So, the chef put together a vegan sandwich for me and was sweet enough to check in with me to make sure it was good. Five stars for him and the overall service provided.
I hope this place catches on and succeeds. They have a lot to offer!

this place is incredible. great choice of cocktails, try the hard pressed, its not on the menu. engaging and down to earth staff. incredible food, the brussel sprouts and bacon are divine.

This was my third time enjoying Immortal Spirits, twice for lunch and tonight for a tasting and it’s one of those places where you can’t go wrong, just try it. You can tell by each sip and taste the care and handcrafted quality that goes into any item you choose.

This is a fresh and cool, new little spot in town. The group of owners are making spirits (liquor) out in the Applegate… Things like whiskey, rum, absinthe, and gin among a few others. Super down to earth, friendly proprietors make the visit warm and inviting, along w their drinks.
The food menu is short and concise but what the few that we tried were worth having again. The Brussel sprout starter was spot on, w crispy bacon pieces, parm and sea salt and a bit of acid (thinking citrus like lemon or lime?). I’d come in for a big fat ass plate of those anytime, and feel guilt free too!
Shared a drunken goat burg w my lady. Tried out
The Tom pesto vinaigrette and honey mustard dressings on the side for salad. Honey mustard was preferred and the burg disappeared quickly. Musta been the salty goat cheese that helped w the drinks and all! Red pot salad was good but coulda used more salt and crunch… add maybe some celery and bacon?
Only hiccup seemed that the bill didn’t rep the menu prices accurately. Was overcharged a couple bucks but I’m sure it was just due to the activity of the night– no biggie.
We had our first visit during a UYE and was stoked to see them handle a pretty full house so efficiently. OVERALL– Def a spot worth checking out as a new up and comer for the valley!

This place is pretty amazing. The food is outstanding, and the staff is extremely friendly and helpful. They are extremely knowledgeable about everything on the menu — drinks and food. We tried a few of the burgers and they were absolutely perfect. The sides of potato salad and green salad were very fresh. Every drink we tried was unique but tasted great! Also, I was excited to see they serve a full menu all the way up until closing. So many places stay open but don’t serve food very late.

Checked this place out over the weekend. We had it to ourselves briefly before people started trickling in & next thing you know all the tables were full!
We each did the taster flight & we had fun getting to talk to the owners. The cook brought us some yummy food samples to go with our flight. Some kind of crostini with lemon zest. Very good & went well with our spirits.
Some guys came in hoping to order a Coors Light or Fireball whiskey! I was appalled! The owner handled it politely though.
A fun new place committed to sourcing their food locally, which complements their spirits. Once things got busy the staff were a bit overwhelmed, but all that will come together no doubt…& it’s a good problem to have. We’ll be back to try some more food & cocktails.

Food was amazing! I had the Greek burger. The green salad and potato salad were perfect. Not too over done, very fresh. I’m not a big drinker of spirits but the staff were very excited about their products and got me excited about it too. The whiskey drink I had was delicious. And for those of us who prefer beer or wine there was some great local choices.

I’ve never liked gin. After doing their tasting flight (best way to taste their spirits) I can say I love their gin. The rum is very tasty and easy to drink-​same with the the single barrel whiskey. We got the brussel sprouts (delish), a pulled pork slider which was also good. My husband got the Drunken Goat burger (grass fed beef for the Applegate Valley) which tasted FRESH. No other way to describe it. I got the Monster Truck sandwich which was a really tasty combo. All in all, somewhere you’ve absolutely got to come in and try. The service was great-​better than most places in the valley. And their hours are actually decent. Open till midnight Saturday and Friday and open up at 11 everyday. Which, if you live in the Medford area, is a big plus. Places close waaaaay too early round here, but not Immortal Spirits.

Let me first say that you cannot measure this place by other cocktail bars, because it simply is not «just» a cocktail bar.
This place is creating its own gravity. On a new planet. A planet made of pure alcohol to warm your head, and delicious locally-​sourced food to warm your belly, and a great story of hard work and craftmanship that warms your heart.
The cocktails are fresh and clean-​tasting, without overbearing sugars or ‘froofroo’ — they capture the pure flavors of the alcohol and highlight a variety of more natural flavors to really dance on the palate.
The food was just amazing. The bruschetta, the brussel sprouts, the incredible burgers. Everything was lovely.
The atmosphere was also great, with interesting art on the walls to complete the experience of being in a place where time stands still and life is a fairytale of delicious food and drink and good company.
Having just opened, I think this place has a bright future and I can’t wait to see where it takes them. Best concept. We will be back, can’t wait to go back, and if you haven’t been, you owe it to yourself to go experience it. Long live the honest craft cocktail!

Expensive drinks. Poor drink selection. The table next to us played music on their cellphone while a band was playing and the waitstaff did not politely ask them to stop. The waitstaff was very friendly. Food was good though! I expect this place will be much better once they are open a bit longer.

I’m new here in Medford Oregon and so is this place. Great drinks, awesome people. Food is really great and the downtown location is nice. Get the brussel sprouts. Epic.

Very great group of guys that run the bar, give them a check for a good feeling and an even better conversation.

The best thing about this place is that all the spirits are locally made and distilled! Very unique cocktails and tasty food. My favorite is the «monster truck» sandwich. Try the Pear Sidecar, too!

Good atmosphere with a hidden back room. Good prices and unique drinks. Cheers to more good local food and the only legit local spirits. You should all come down to check it out.
