Right on the corner of Main(Independence Highway) and C, across from the park is a little corner building with a small garden /yard in the back and a large BBQ pit. A few times a month they do a whole pig. Seriously — the WHOLEPIG. The rest of the time they have a selection of brisket, ribs and other cuts. Their goal is low and slow over wood in a real pit. You can walk in and get what they might have, but if you really want something in particular, call in advance. My general impression is the pit-master cooks what he likes and does not keep a «menu.» Maybe he does, I don’t know. But I get the idea that he wakes up in the morning and thinks — «hmmmm… tomorrow is going to be a great day for briskets»(yes… you start those the day before) and then they next morning he might throw some chickens in the pit along with links and what feels right. if you want brisket though, call early. It is tender enough to eat with a spoon. Same with the whole pig — that tends to go fast. They also do takeout.
