I attended a fundraising event at OU involving several food trucks, once of which was Smokey Ray’s. I’m glad Ray was in attendance, because it was my favorite truck of the 4 we tried. I was with a couple of buddies, and we tried: ribs, the pulled pork sandwich, the hot link, and the polish sausage. The hot link and polish were wrapped in foil and sort of smashed onto regular hot dog buns. I’ll be honest, neither looked great when we unfolded the foil. Both links are large, much larger than the buns. So, I would recommend getting a different bread vessel. But, both links were fantastic. They were very smokey, and the hot link had a lot of heat. It wasn’t too overwhelming, but you certainly didn’t think you were eating a regular hot dog. Both the polish and hot link had a nice color to them, and a nice snap when you bit into them. Importantly, it was easy to bite into them. I have found with some sausages that the casing it too thick and/or tough, making it difficult to eat. This was not the case with Ray’s. The ribs had a wonderful color and a nice rub. Very smokey, I found the taste of smoke to be forward in every meat we tried. The ribs had too much of a «tug» to get them off the bone. This was disappointing, and one of the minor things that prevents me from giving Ray’s 5 stars. The ribs had good flavor, but I think they needed to be smoked a little slower. If they had some more tenderness to them, they’d really be something. The pulled pork sandwich was large and served on a standard bun. It was advertised as «spicy,» so given the heat level on the hot link I was expecting to be blown away. I was not. I didn’t get any heat at all. Maybe we had a batch that just didn’t get seasoned properly, but I definitely wouldn’t call this hot. That said, it was moist and had some small pieces of bark mixed throughout, which I like. It was a good sandwich, just disappointing in the spiciness department, which was contrary to how it was advertised. The sauce was EXCELLENT. Thick, smokey, very flavorful, and the hot was hot. Loved the sauce. I wouldn’t drive to Del City to eat Smokey Ray’s, but if I see them out and about again I certainly would return.

I got the pulled pork and was told it was spicy as well. But loving spicy food I knew I could handle it. Whew at least I thought! I didnt get full but my mouth and stomach was on fire. My boyfriend’s pulled pork sandwich had a large bone in it. And as for me I have been having stomach issues for two days. The customer service was great but next time I want to clean my system ill just take some Miralax.

This is a food truck in a gas station parking lot in Del City. I will give you my quick run down as I don’t really think much more is needed. No sliced brisket — Strike one and two. Ordered the ribs and the were okay. The taste was good, got enough smoke on them but were not finished cooking as the meat did not pull off the bone. It was a little tougher to get the meat off the bone than it should be. I don’t want it to fall of the bone, as that is a sign of over cooking. I know I am picky when it comes to meats. Last but not least the sauce taste like it came from a bottle of K.C. Masterpiece. I will just keep on driving the next time I am in the area.
