I’ve read the Dallas food blog about NoKa, but even if that is totally false, NoKa still only deserves one star. For those of you who do not know, the Dallas food blog article researched NoKa and their claims and came to the conclusion that NoKa is merely repackaged Bonnat chocolate. So why one star? First of all, they actively misinform the public about chocolate in general. Ideas that cocoa content and«purity» somehow lead to better quality are just false. Second, even if their chocolate was pure porcelana(pure criollo cacao), was perfectly roasted, hand ground down to 15 microns, and had a 100% cocoa content… it would still be dramatically over priced. Third, their chocolatiering skills are poor. The shells are uneven and frequently cracked, the quality of the dairy was questionable but this may have been a result of the cracks. Noka doesn’t argue these issues but to say«blah blah gifting expereince blah,» which translates to: «We have a nice box and prestige of being the most expensive.»

I happened to come across this amazingly beautiful store by the new W Hotel and Residences Victory Park. The décor with the glass cases contained little black boxes that you would think contained jewelry of some sort. I was shocked to find out that Noka was instead a chocolate boutique. Katrina, the owner was quite helpful in explaining the philosophy behind Noka and how the cacao is chosen and processed to make the truffles and dark chocolates. I purchased a selection of the Vintages Collection(12 piece box for $ 39), as they would keep in the refrigerator for at least 3 — 4 weeks. She suggested pairing the chocolates with a good glass of red wine. The chocolates were indeed very smooth and rich, but I am not too sure many people could justify the price for the chocolates… unless of course it was a special occasion. The presentation of the chocolate boxes can be customized for your special occasion. Noka also has a flag ship boutique in Japan as well. Another interesting note: the owners came up with the name Noka by combining the first two letters from both their names(Noah and Katrina).
