This restaurant was highly recommended to us by a local, and we were not disappointed. We absolutely loved the steak tartare appetizer, petite filet with truffled blue cheese sauce, rack of lamb, creamed spinach, and mashed potatoes. We weren’t crazy about the bacon-wrapped scallops(bacon was almost raw), the Brussel sprouts(tough) and the trout(salty), but overall our group gave the restaurant high marks. Definitely on the pricey side but good for a special occasion.

We’ve been here a few times and it has always been good. Perhaps the second only to Hearthstone but a solid and delicious choice in its own right. The service is good and everything we’ve ordered has always been well prepared and delicious.

What a treat. We took a spontaneous trip to Breckenridge in May during the off season and wanted a steak dinner in the mountains. Briar Rose staff were friendly and their recommendations were spot on. We had the steak tartare for the first time here and it was superb. It was definitely not what I would expect raw meat would taste like. I am fan. The double cut pork chop was superb and thick accompanied by the lingonberry sauce. My husband had the Australian beef which was really good. This restaurant is upclass without a dress code. So it was nice to have a great meal in such a warm and inviting atmosphere. I would definitely make reservations as the restaurant was a bit cozy.

We came here on a whim for dinner since it’s «Mud Season»(i.e. most restaurants are closed), and all of the other places we walked past had signs on the front door stating they were closed. Despite the fact that we didn’t have a reservation, the hostess was very sweet and said they would be able to accommodate us. We grabbed a drink at the bar and in about five minutes we had a table. I ordered the filet and my husband ordered the buffalo short ribs, both of which were excellent! I added the port wine demiglace, just for something indulgent, and it was absolutely over the top. I highly recommend this restaurant, but would definitely recommend reservations. Although it was the off-season the place was still packed.

My husband and I sat a 4 top table in the middle of the small dining room that felt misplaced. The dining room is loud and hot which does not allow for a relaxing dinner experience. The food was very good and service was above average yet this was not enough for Briar Rose to earn four stars. When we left the dinning room we learned that you can eat dinner in the bar area, maybe that would lend to a slightly different experience.

Enjoyed a nice dinner last night. We arrived about 30 minutes before our reservation but were still able to be seated because it was still early in the evening. Hubs started with the gumbo and I started with the beet and arugula salad. Gumbo was«excellent» as was the salad. I loved those little fried goat cheese crisps that came on the salad and the citrus dressing was light but flavorful. Hubs loved the buffalo rib-eye special. Cooked perfectly and he was sneaking the last morsels by eating off the bone. I ordered the Elk tenderloins which was good but not great. I don’t think it was because of the preparation but more because the texture of elk meat. The texture was definitely different from beef. We ordered the Brussels sprouts & chorizo as a side. At first we were loving it but as we ate it, the saltiness of the chorizo started coming through. Finally, we shared the Vanilla Bean ice cream with berries. Yum! Yum! Ice cream was made in Denver. We have eaten here before over the last 30 years and we will definitely be back again.

I wish I could give this place a better rating, and perhaps someday I will, but we walked in last week and the hostess all but told us to get lost and suggested we go to the Hearthstone. I’m glad we did. So I guess this rating is more reflective of the Hostess’ lack of tact

Briar Rose is an average restaurant for the price scale. A 6oz filet will cost you $ 34, and at that price, everything should be right at excellent. While they did impress in some areas, they fell flat in others. The food was fine. Our party had a filet, New York strip, and chicken. For our sides, we had the fries and mashed potatoes. The filet and strip tasted excellent, but unfortunately it only came out warm, not a hot exterior that we were used to. We told our waitress, and although we said we didn’t want it to be cooked more, I think she should’ve had the manager come make sure everything was okay and maybe offer a dessert. The chicken was fine, although we had a much better one at a similar price at Hearthstone the night before. The wine selection was extensive, and the Akrasia we had was very nice, albeit expensive. The service was good, the waitress was friendly and helpful. Other than the blip mentioned earlier, not much to report. What you would expect from a nice restaurant like this. The ambience was okay, but the room we were in was a bit big and crowded and became loud quickly. Between that and the slightly out-of-place music they were playing, it made Briar Rose seem a bit more casual than the prices would suggest. This is a fine restaurant that won’t necessarily leave you disappointed, just wanting a bit more. It’s also a tad unfair to Briar Rose because we had just eaten at Hearthstone(which I also reviewed), that topped our expectations. We’ll likely try BR again in the future.

One of the worst meals I’ve had in a long time. I’m not sure if the chef had an off night or something, but ALL of our steaks were completely under cooked. I ordered the tomahawk steak medium rare for the table and it came out completely rare and cold. I also ordered the Brussel sprouts which came highly recommend by the server but were extremely basic and tasteless, the Mac and cheese was over cooked and mushy and the wild mushrooms were mediocre at best. I’m not sure what the all the hype is about. If this is the best steakhouse in Breck, I would hate to see what the second best is.

Wow!!! This place did not disappoint. Our server Amy was spot on. Her recommendations, from the wine to the special rib eye that was cooked to perfection. The atmosphere was nice and the staff was very attentive. We will be back. Thank you briar rose for excellent Valentine days dinner.

So hands down this place was awesome. First, the wait staff was amazing and there seems to be minimal disagreement…(Damir). Second, the atmosphere was awesome. There is a history to this place that really sets a great ambiance. Lastly, the food was great. I got the buffalo and the trout, only because my wife couldn’t finish the trout, and they were cooked well. I read that some individuals on here did not have the same experience with their choice of food and that’s okay. As of today the food is good so check it out. Oh, it was expensive probably more than what the food was worth but still a good time.

5STARALERT! If you are a meat lover, this place place is fantastic. They offer a wide array of game meats like elk, venison, bison, lamb, and buffalo. The Yukon whipped golden potatoes were a delicious side to the already amazing elk medallions and venison chop main dishes we ordered. Even the Rosemary bread they serve while you wait is memorable. Would definitely come back and try all the meats! Note: Make a reservation in advance, we were barely able to get in on a Tuesday night!

We dined here on a Monday night based in Unilocal reviews and recommendations from the hotel staff. Our server, Sabrina, was outstanding. She made recommendations for wine and entrees that were spot on. Very friendly and personable! Steaks and Mac and cheese were good as well but mushrooms could have use a little more flavor. It was pricy but an enjoyable experience!

I don’t understand why this place is so popular and highly regarded. I’ve dined here twice and wasn’t impressed both times. Sure, the building was super cool and the service was top notch, but the food was nothing to write home about. It wasn’t BAD; just not that impressive. My fish was bland, my husband’s steak was a little dry, and the mac and cheese was gross. For such an expensive restaurant, the mac and cheese shouldn’t taste like Velveeta. Just… meh. I’ve had better. The food is definitely not worth the crazy high prices.
