I ate at Sean Bautista’s South Folk Eatery in the Native South Food Park in an effort to finally give this close-to-home food court a visit. The Food Park was cute, nicely lit and a holiday festival was ongoing with art vendors and a Santa Claus and everything. There were lots of kids running around laughing and having fun. It was a strongly community-friendly, people-centric vibe all around. But most importantly, the South Folk Eatery was a win. The trailer itself was cute and so tiny it’s a testament to Chef Bautista’s space management skills. Like a red-barn Hobbit-cottage filled with culinary wonder and kitchen magic. I had the Folk Chicken. Expertly tender, free-range, organic chicken with a super-light herbed flour breading that adds a smooth accent to the rich, tender chicken cuts without distracting. It’s served over a bed of obviously fresh, possibly personal garden-grown greens including cilantro, Parsley and extremely powerful mint that speaks with bold authority. It is drizzled with a Fig Soy reduction that I found to favor the soy slightly at the expense of the fig, though don’t take that to imply that the sauce was not expertly executed! It was adroitly done and displayed Chef Bautista’s culinary training admirably. I was also provided with a bold buffalo sauce as well. It was a strong, Tobasco-based(I think) sauce that lent a nice southern-cooking-style, mild burn to the chicken that one expects to enjoy south of Louisiana. I look forward to going back for the Deep Fried Brussels Sprouts. Austin has some of the most outstanding brussels sprout offerings of any city I’ve ever been to. I am looking forward to something marvelous!
