Had my first deer processed here, so got a little of everything to try. My entire family has been very impressed with everything they made… delicious

Texas jerky review: good spice and texture from hudson’s. Venison and Beef options. The jerky isn’t cheap, but they have good deals on other sausages and meats. I also get my deer processed here. They will guarantee your meat back for the nice cuts/steaks, but the chili/hamburger can be anyone’s meat — which is the only downside here. That being said, the chili processing fee is SUPER cheap and real good. Really cool that we have a meat shop in the middle of the city.

This is just an update in regards to the horrible customer service. My review is just that, a review from a customer with a background in hunting and an education in agriculture. I would say I’m someone who knows a tad bit more about deer and meat processing than your average consumer. That being said, it’s obvious that the owner is more interested in defending his ‘business’ than actually providing an excellent product and excellent customer service. Rather than addressing the issues we had, he chose to attempt to ‘educate’ me and ignore the statements I made regarding this joke of a company. In regards to the gamey flavor of the pre-packaged meat they are selling. Why on earth would you sell a product that is so gamey it is inedible? I know that some gaminess can be expected from WILDGAME, I’m not an idiot. However, I also KNOW for a fact that improperly handled meat WILL have a a gamier taste. If you take a deer into the processor immediately after shooting it, it will have a completely different flavor from a deer that has been placed in an ice chest for several days with the drain plug open to purge some of the blood from it. That’s common knowledge and something that a processor should know. The processor we’ve been using for years knows this and the pre-packaged venison they sell has a flavor comparable to lean beef… It’s a similar concept to aging beef — eating a steak right off of the cow will taste completely different than one that has aged for weeks… If you don’t give a price when the meat is dropped off, I’d love to know where the price I was given came from. Your so focused on ‘explaining’ your shady business practices that you completely overlooked the fact that I WASGIVEN A PRICEANDTOLDITWOULDBELESS! Additionally, trying to write off my concerns by saying that my bill was cheaper than most just shows HOWLITTLEYOUACTUALLYCAREFORYOURCUSTOMERS. I was told the deer would be a certain price ORLESS and that was not honored. Rather than addressing the fact that I WASLIEDTO, it apparently seemed appropriate and acceptable to say that I should be thankful for the price, regardless of being misled? I sincerely hope your customers realize they aren’t getting a deal for $ 200. I can drop off my deer in San Antonio, get standard processing(which includes stew meat and steaks, unlike this place), add snack sticks, dried sausage, jerky and salami and still come out far less than $ 200. The excuses they use in an attempt to pacify their customers have done nothing but shed light on the fact that they only thing they really care about it the almighty dollar. We brought up our concerns TWICE with employees, both in person and over the phone and both times we were blown off. I brought my concerns to light, the problem was no one cared… I’ll save my money and the hassle and deal with another company next time. One that appreciates the business of their customers and understands the value of excellent customer service.

Excellent quality products and they shipped my order out of state pronto. Tried a bit of everything and it was very good! Highly recommended, especially if you are a low-carber.

This is a little gem in our neighborhood. I buy specialty meats there often and although the selection is limited(not surprising considering its 2 coolers in a small room), what they do sell(boar and venison sausage, steaks, jerk, chorizo) is high quality and incredibly delicious. I’d be pretty upset if they ever disappeared.

I have to admit, I love venison. And I was excited when I found out that someone sold venison meat in Austin, so I went to Hudson’s. I have to say, I was a little disappointed. Their selection was a little small, they were a little pricey(even for venison) and the meat wasn’t really tasty. I mean, it wasn’t bad but to be honest maybe my expectations were a little too high.

I love that you can pick up venison and boar meat here. Yes, it’s farm raised, but it’s lean and really good for you, not to mention oh so tasty. If you’ve never tried either, you owe it to yourself to stop by and pick some up.

There’s the old saying that people love sausage but don’t want to see it made. I’d double that by saying that I love venison but don’t want to kill a deer. That is why I love that Hudson’s has a retail section that sells venison jalapeño sausage. It’s rather tasty and will surely impress your friends, foodie or otherwise. Love the pic and if you’re squeamish, don’t walk in the alley behind Hudson’s during hunting season.
