This is an amazing food trailer! The burgers were AMAZING and the french fries were one of a kind. Brian, the cook, has amazing people skills and the customer service was the best I’ve had in a long time. They cook the burgers fresh so it took about 15 minutes to get our food but it seemed like no time because of how attentive and friendly Brian had been. The food is great and I highly recommend eating here! I’m kind of a cheeseburger conosur — trust me. Also, I signed up for this account just so I could review this place. It was that tasty!

This is a great food trailer park. The Thai, Hot Dog and Burger joints are all very good. Collie’s is the burger joint, and it is incredible. Ask Brian to explain all the burgers are you’ll find yourself in a whirlwind of spectacular explanations for everything down to the cole slaw. These guys have clearly thought about the menu — and it tastes incredible. I had the chili cheeseburger, which was very, very good. Perfect amount of chili, cheese and beef. The beef, in both the chili and burger, are very high quality. The french fries are real potatoes and have that perfect natural, but still crispy texture. You’ll love Collie’s, and your mother in law will love the Thai place.

Collie’s is amazing in all the ways that really matter. Let’s start with the food: the burger is cooked perfectly. A legitimate medium(actually pink inside rather than grey) and that rare kind of crust that you’d expect from a burger joint that really knows its stuff. Not only that, but some serious thought and consideration goes into the toppings. There’s not a burger on the menu that isn’t clearly carefully thought out and refined to perfection(or in the process of becoming so). The fries are fried twice, again like anyone who really knows and cares about good fries would do. Seasoned with salt, pepper and something else(garlic powder, maybe?), they are delicious. You can put ketchup on them if you want, but it’s really not called for. The common theme here is that the owner(Brian, I believe) really, *truly* cares about the food that he’s making. It’s one of the things I love about the trailer scene in Austin. You get food directly from the person who is so passionate about what they cook they had to find some way to share it with the world. Collie’s is exceptional among those folks; I’ve been here twice and both times it was so clear that Brian(really hope I’m getting that right!) is remarkably invested in what he serves. We’ve had minutes-long conversations about how he’s tweaking his recipes to be just right and about his process for producing the perfect burger. A lot of restaurants use freshness, quality and passion as marketing buzzwords, but Collie’s actually delivers. Edit: Brian is not the owner, but you’d never know it to hear him talk about the food!

I got the Lexie’s Dixie burger with fries. This is one of the best burgers I’ve ever had. The outside has a super awesome crispiness. The inside is the perfect medium. Texture is amazing. Seasoned beautifully. The fries are done right. Twice cooked(blanched and then finished in the fryer). The coleslaw is super tasty. It’s creamy and crunchy and delightful. Topped with two thick tomato pieces. My only wish was that it had a bit of freshly cracked pepper on top(but that was quickly remedied at home). I had a taste or two of the chili as well. It was decent, but a bit greasy. Overall, a great eat for sure. I’ll definitely be back.

Plain and simple, very few folks have the combination of enthusiasm, creativity, knowledge, and skill necessary to run a truly elite burger joint. Brian and Collie’s achieve that, which is rare — seriously, this place is next level. The establishment«best burgers in Austin» better keep a close eye, as I sense a dethroning coming soon. The only way to get your Collie’s on is to show up with some cash and let these folks give you the full rundown on all of the delicious burgers. If none of the burgers suit your fancy(not likely), they will make something work for you. Go.

As a card carrying meatatarian, I can attest that Collie’s is a slice of hamburger heaven. I ordered the classic cheeseburger. The nummy cow meat was prepared perfectly, the veggies were fresh, the bun was extraordinary. I also got a side of cole slaw, which was pretty good, but not quite to my taste. The BF got the frito pie burger with amazing homemade chili. The sear on the burgers was excellent and kept the juiciness of the meat intact. Bravo! The chef(‘cook’ does not do this man justice) was friendly and very helpful in explaining the menu and the history behind it. I love this about local joints. You will too. Don’t pass up Collie’s. It’s one of the best burgers I’ve ever had.

After reading the reviews I was anxious to try Collie’s and it didn’t disappoint me. This was a unique trailer food experience, in that you go inside the trailer to order your food. I don’t remember his name, but the guy working introduced himself to me and described how they do things, including how they make their burgers. I was literally amazed. I ordered a cheeseburger– I like to order something not too fancy when I try a place for the first time so I know what I’m dealing with. They know what they are doing here– the meat is half chuck and half brisket. It think it was the most tender burger I’ve ever had. The toppings were very fresh and tasty. The bun should’ve been a little more firm, it got smooshed a little bit under the weight of everything. They asked me if I would change anything and I gave my advice. I’ve never been to a restaurant or food trailer that put so much pride and care into their food and customers, as well as a place that values its customers thoughts and opinions. If you love burgers, then please go here. I think now I can complete my top 10 burgers list for Austin.

In short, it’s on the short list and worth a try. I am always a little leary of 5 star Unilocal reviews so early in the restaurant life. But Collies is near the casa and I was thinking burger tonight. Mushroom and Swiss, cheese burger with jappys and chili cheese fries. Called in took 15 – 20 minutes as notified. I have actually never been to a food trailer and never wanted to go but what the hell you only live and die once! Good burgers, especially liked the meat and the way it was cooked. Oddly though one burger was dripping a lot of high quality fat while the other was not. They were both cooked similarly so I can only attribute that to the different whole cuts of beef not being well integrated during the grinding process. A minor point but leads to inconsistency from burger to burger. Not crazy about the bun but I admit I am a low carb eater most of the time anyway. I still think Wholly Cow may have a leg up with the Hawaiian roll bun. The sweetness seems to play well with the beef. Next time I would try the fries solo. The chili is more a course ground beef sauce missing the chili gravy and light on the chili pepper. The cheese disappeared into the hot oblivion. I think it could have also used some greenery like jalepenos or green onions. Finally the jalepenos for the cheeseburger were served on the side and were pickled. Brian said he would put them under the cheese next time but I definitely would have preferred them fresh. I will try it again but do agree the price is a bit steep compared to the competition. Not by a lot but enough to make yo think a little more whether this burger is really better than the rest of the short list.

Great Burger. The patty is large and cooked well. The flavor and tenderness of the meat is awesome. The veggies tasted fresh and the feel of the place is pretty hipster. The fresh cut fries were also a highlight. They tasted solid and earthy. Chared slightly on the outside and soft in the inside. The bun was slightly toasted and does the job right. I would give this a 4.5 star if that is an option. The service is probably one of the best I have seen in a while. the guy was super friendly and helpful. So why not a perfect score? a couple of things. first the price is a little high. Especially so close to Wholly Cow and Phil’s Ice House not to mention Torchys and Man Bites Dog etc. At about $ 10 a burger alone without sides or drink, this is pushing trailer food limit for me. The whole point of trailers is that you save on the production end by cutting on rent, utilities, staff, to pass the savings to the consumers. Even the RIP Odd Duck or Franklin’s wasn’t this high priced. 2ndly the trailer park is right on Lamar and with non paved lot for a parking lot, there is a lot of dust and noise. I realize this is a trailer park and AC and inside seating is not part of the deal, but you are looking at a $ 15 bill for a cheeseburger meal. Overall much recommended for burger fans. Great experience.

This is a great burger place. I came her the other day and tried the cheeseburger and it was one of the best cheeseburgers I’ve had in awhile. The meat: DELICIOUS. They do a great char on the meat, so when you bite into the meat, it’s juicy and flavorful, which is exactly what you’d want in your burger. The cook did tell me they cook medium rare, but I felt the patty was more medium-well, but like I said before, the char kept the moisture in the patty. Oh yes, and the meat is ground daily and is locally bought, so that really helps out in terms of freshness and flavor. The bread: toasted ciabatta buns! Yeah, it’s weird eating a «square» burger, but it really worked for me. The build: Great build. He did use a toothpick to hold things together, so maybe it wasn’t that well built haha. But the toothpick did hold up while I devoured it so, no complaints here. The condiments were in good proportion, with nothing overpowering the main attraction, the meat. The fries: Freshly cut is always a plus. They were a bit overcooked, but it was still hot and crispy. The reason why I gave this a 4 instead of 5 stars was the price. You are paying at least $ 9 for a burger, and then sitting outside. I understand with food trailers, things are going to be a little pricier, but for a burger that’s $ 9, it didn’t match other $ 9 and up burgers I’ve had in my experience. The cook was very nice, knowledgeable and helpful though, so I will definitely come back to try other items off their menu.

Everything I wanted and a fun, friendly staff that helps you make great menu choices. I’ve tried all the best burgers in Austin– hopdoddy, hills, huts, dirty martins, wholly cow– you name it. Also grew up in New Orleans and thought that’s where the best burgers existed. Until now that is. Collie’s is the best – hands down. It’s a crime for any burger enthusiast in atx to not come here. It’s so juicy but magically the bread doesn’t get soggy. Why? They have the most perfect thin layer of char that locks in all those beautiful flavors. Their burger meat has brisket mixed in, giving it the most wonderful natural flavor and texture. Amazing stuff– coming back here a lot. Also, they have the nicest owners. But honestly, if they were dicks, I’d(reluctantly) still give them a great review. It’s just that good. Pure ingredients. Perfection.

Great burger and owner — great addition to the already impressive Austin food truck lineup. The owner was nice enough to swing by and see how the burger was and that if there was any feedback, good or bad, that we swing by and let him know so he can make it right… I’ll definitely be going back. The only downfall was they were out of fries, apparently they are great, too. Updating to 5 stars — even though the fries were only a minor detail they made it right in the end!

These guys know great burgers! Very friendly owners who legitimately want you to have the best experience possible! I recommend talking to them about the menu and telling them what you like about your burgers. You can easily tell they are passionate about their business and food. I have had the chili cheeseburger and regular cheeseburger. I highly recommend the chili cheeseburger for the extra 50 cents! The chili is perfectly complimentary to the burger and well spread out on the bun. Tons of flavor in their high quality meat that lasts until the last bite. The second time I went they prepared my burger even better since they cared enough to know my name and made it perfectly to my specifications! The fresh thick cut fries certainly add to the taste experience. Lightly salted with solid flavor. The best compliment? After eating this delicious ½ burger I wished I had ordered two burgers :)

I know you Unilocalers love your grass-fed beef and exotic toppings. But if you want to find a burger done the right way, Collie’s is it. For my first three months in Austin, I had been thoroughly disappointed in the burger scene. With all the other amazing food in this town, I thought that finding a good one would be no problem at all. However, after exhausting the list of friend’s recommendations and restaurants that ranked high on Unilocal,I still hadn’t found an awesome burger. Collie’s didn’t come as a recommendation but rather as a roadside find. Their trailer is fairly visible on South Lamar. They’re new to the food park scene, and it was pretty obvious from the customer service that these guys are determined to put out a damn good product. At the end of our meal we were asked if we had recommendations or feedback on the food, but I had nothing to offer other than«This burger is awesome.» The chuck/brisket blend is ground just a couple hours before they open. Absolutely delicious, fresh, and local. There is really no need to jazz this burger up, but if you like fancy toppings, they do that too. As it stands today, this is my favorite burger in Austin.
