As Bar Chor Mee(BCM) goes, Singapore has ten thousand stalls around the island. But you and I know that good BCM are not the same everywhere either. This stall(in my humble opinion) serves one of the better ones I’ve had in my gluttony life. They have been around for years and the server lady there memories all the orders by heart. Amazing! I think the secret to their BCM awesomeness lies in two things: 1) Sambal Chilli — it’s not super spicy, just really good and tasty! And they also throw in a good measure of lard that RETAINS their crunchiness when you bite into them! Can die-go-heaven kind… 2) Soup stock — I’m not saying they don’t use MSG but their soup stock is not just steaming hot water. Just looking at it you’d know it’s gonna taste more than average. Then the taste will just confirms it! After you’ve tasted the soup, you’ll be like me. Struggling to decide if I should order dry with their awesome Chilli or soup-base wonderful-ness! So I’ll share my decision, it’s always Kuay Teow dry with extra Chilli and soup on the side with a repeat visit to the stall to ask for more soup, which the auntie always obliges with a smile. How NOT to love???
