Guy and Sandra are awesome. The bar is pretty low key. Quiet, great drinks and food. My favorite bar in Santa Fe.

Checked into the hotel on Sunday and spotted the Red Sage restaurant positioned looking out onto the patio. The ambiance of the inside coupled with the fire-pits and scenery was gorgeous. The wait staff was courteous, helpful, and unobtrusive. I chose the wild mushroom beef tenderloin with the new potatoes. The mushroom and reduction sauce was delicious and the beef tender and juicy. The local Ponderosa red wine added a nice finish to the meal. There wasn’t room left for dessert but I saw many yummy looking plates passing by to other tables.

Excellent steak, perfectly cooked. Good(not great) service, and reasonably priced for what you get. Really convenient from Santa Fe, and the gas here is $.27/gal cheaper than in Santa Fe. BONUS!

Great food every time I’ve eaten here. Had the Bison tenderloin and Lobster tail(paid $ 38 for a 6oz tail?) Food was good and service matched. Great wine and liquor selection.

Great place! Yum! I had read reviews on this place right before I walked down and I was a little concerned about some of the things I was reading about the service. But by the end of dinner I decided the service was amazing! This all started when all of our food came except my soup. Our server, River, noticed very quickly and in 30 seconds I was enjoying my soup. Then after 2⁄5 of our party left to gamble my baby sister fell asleep. Before we started talking and he was really funny and made us laugh quite a few times. But anyway, she’s asleep and he comes or and asks if we want him to take a picture of her. We said no because we have so many and then we started talking again! Now this guy totally loves his job!(unlike the guy who works at the pool bar) Now on to the food! One word, AMAZING! We ordered a few sides and some soup. Soup was excellent!(tomato basil) the side were mad and cheese, creamed spinach, spaghetti squash casserole! All delicious. After we were done my mom asked if I wanted dessert. I said yes because it would be un human to say no, and River stared listing the desserts. I decided to go with the crème brûlée which was ten best I have ever had! So to wrap up this review I’d say a must go if in northern Santa Fe!

I’m not sure why so many people dislike Red Sage. I went there the other night do eat dinner with my fiancée and everything was delicious. We wrongly assumed that the portions would be small, so we ordered a ton of food. We ended up having to take it to-go and it tasted just as delicious the next day. Our server was so polite and helpful, and had no problem accommodating to my picky needs. My only criticisms are that the menu is very limited– this is not the place to eat if you’re picky, or don’t like trying new things. That, and well the prices are kind of high. But overall I left very satisfied and hope to return again.

We decided to try out Red Sage and its prix fixe menu for Restaurant Week. Red Sage holds itself out as a high end, innovative food establishment and premier steakhouse. It did not live up to the image. The décor and ambience was beautiful, tastefully Southwestern and Native American, which is appropriate to its setting at Buffalo Thunder Resort located on Pojoaque Pueblo tribal land. The staff was friendly. The bartender was a friendly and capable mixer. The beer selection was disappointing with no local brews(of which New Mexico has plenty: Santa Fe Brewing, Cumbre, Marble, etc.). Instead, beer choices are limited to mainstream Budweiser, Guinness Draught, and Stella Artois, A nice selection for a Chili’s but hardly the thoughtful selection you would expect from a high end place. The wine selection was fine, although the choices of wine by the glass were very limited(and, based on my Pinot Noir selection, terrible). The pork belly appetizer was delicious — well seasoned, smoky, and melts in your mouth. The rest of the food was atrocious and counts as one of the worst meals we’ve had in years. The prime rib was flavorless and TOUGH. It was inedible and, after one bite, was not eaten any further. We suspect that we got leftover beef from the casino’s buffet. The waiter noticed it hadn’t been eaten and was kind enough to comp us on the item. The problem we had was that he didn’t seem surprised. His comment was, before we had a chance to say anything, was, «too tough?» A better waiter would have warned us before we ordered the prime rib. The braised Talus Ranch lamb might have started as good ingredients but what we got was an overcooked, oversalted stew of unrecognizable meat. The gnocchi was mushy and flavorless. Braising? No. it was a crockpot experiment gone bad. Dessert provide no respite. The apple cobbler was sickeningly sweet and was left uneaten after a couple of bites. The Vanilla Bean Crème Brulee was watery and not creamy. The Brulee was burned and a bit bitter.

We had breakfast there twice in a week; once going to Los Alamos and once going to Taos. Both times the service was slow from poor staffing. One time we waited for several minutes at the podium while no one came to greet or seat us. Turns out the hostess was clearing and setting tables. The wait staff was polite and prompt. However the chef seemed to lack an «off reservation» understanding of minor details. After all, who makes eggs Benedict with a tasteless bread pudding rather than an English muffin? The Hilton needs to do a little more work here IMHO. The food was OK– nothing special; good portions, moderately tasty, but considerably less expensive than hotels in the Santa Fe area. An OK stop for a quick breakfast when driving by, but I pity those staying in the hotel as there are few other options within a reasonable drive.

Superb dining experience! Everything was great from the staff who is great and personable, to the Master Chef who came to talk to us. The tenderloin was perfect as well as the lobster, the sides amazing with the best calibacitas I’ve ever had. The wine is served perfectly and the milk was ice cold! Great menu featuring local sourced ingredients. Awesome.

Not a four star restaurant. The food is only good, the staff although friendly isn’t of four star quality. My party and I spent the last 20 minutes of the dinner working with our waiter to correct our bill. Considering all of that, the prices were way overboard. I won’t be returning.

Dave goes to New Mexico part 7. I am really kind of mystified about the 4.5 star rating for this place. We came here for dinner while at a conference at the Buffalo Thunder Resort. Since Red Sage was the only thing open other than the casino buffet and it had a 4.5 star rating, we decided to give it a try. We went to the hostess stand and saw that there were a number of open tables; however, we could not find the hostess. We waited a good 10 minutes and still no one showed up. We decided to see whether we could sit in the bar and order food. Fortunately, the bar does serve the full menu. After sitting down at the bar, the bartender asked for our drink orders. They had a few different tap handles but they only had Fat Tire and Bud Light available. Bad draught selection. I asked about bottled beer, and the bartender quickly rattled off six or eight kinds. I settled on Sierra Nevada Pale Ale — not my favorite but drinkable. The menu was rather limited. There were appetizers and salads, burgers, steaks, and what was labeled as «lighter fare.» several of the lighter fare items were the same as the appetizers. Everything was quite expensive. I ordered the pork sliders and a house salad. My boss also got the pork sliders but opted for a spinach salad. When the salads came out, there were two house salads and no spinach salad. The house salad looked good, so my boss was willing to eat it. But this was just the first mistake by the bartender who was helping us. The second mistake was on my sliders, which I had ordered with no cheese. When they came, they had a blue cheese slaw on top of the sliders. The bartender had not made a note of my request. After I pointed out the issue, the cook did fix the problem, but the sliders seemed like they were just at the point where they were fully cooked. Fortunately, they did not give me any problems. I was still a bit hungry after I finished, so I ordered some duck fat fries. They were okay but had a weird garlic oil on them that was partially congealed. The garlic was really strong too. I was not able to finish the fries. The prices charged by Red Sage are at the premium level but the food and service is not premium at all. I would not go back or recommend it to friends and family.

My friend and I recently stayed a night at the resort and were excited to grab a seat on Red Sage’s beautiful patio for some appetizers and wine. The server greeted us right away and another server immediately replaced my knife when I dropped it on the floor – and I thought no one noticed my clumsiness! They provide a complimentary sampling of bread with two house-made butters, which were creamy and delectable. We each selected a glass of wine off their excellent wine menu and ordered the Green Chili Buffalo Flatbread to split. Yes, it was as DELICIOUS as it sounds. I’m not usually a fan of buffalo but the meat was tender and rich. We were both very pleased with our experience and we cannot wait until our next trip to try their dinner. The people next to us shared the Lobster Crab Cake which looked incredible and I most definitely trying the Cold Smoked Scallops on my next visit!

My dinner here had to be one of the top 10 I’ve ever had(in the world). My boyfriend took me here for a belated birthday dinner. The restaurant is very big and has plenty of room. We were seated in a corner with plenty of room. Our server was very nice, helpful, and attentive without being overbearing. I also loved that it was an open kitchen. Now the food… wow! Everything was so fresh and delicious! We got the pork belly and margarita flatbread for apps. Pork belly with caramel and apples?! I was in heaven! The portion came with three small pieces of pork belly which was perfect for tasting(I’m also a light eater so it was great for me). The flatbread didn’t have much cheese at first but our waiter quickly brought us more. The cheese and(green) tomatoes tasted so fresh! For an entrée I had the scallops which had to be one of the best scallop dishes I’ve ever had and I LOVE scallops! Maybe these guys should try out for Hells Kitchen… my boyfriend had the chicken which was very good and had a crazy sauce on it. Since it was my birthday dinner they brought out a chocolate tart for me with a candle on it. I’m not a big chocolate person but this thing was crazy good! It was so soft and rich! I could eat an entire one myself! Needless to say I would recommend for anyone to try out Red Sage!

What a jewel to find this upscale steak restaurant located in the Buffalo Thunder Resort & Casino, just outside of Santa Fe New Mexico. The Red Sage is a steak lover’s delight, complete with a 20oz Bone-in Ribeye, a 10oz Filet and the choice of this carnivore? The 10oz Buffalo Tenderloin. All steaks come with a side and a choice of sauce. The sauces aren’t only delicious to sample, but they’re incredibly fun to say, Cognac Peppercorn and Gorgonzola Butter. They also serve Green Chile, Cherry Demi and Chimayo Bearnaise. Try a few and share. My side? The Serrano Wrapped Asparagus with Chimayo Béarnaise. The wait staff is very attentive, but not over bearing and very knowledgeable. Wonderful atmosphere and a very progressive wine list, including a few of local blends by the glass and two Black Mesa wines by the bottle. The wine prices(as expected) are a little inflated, but I was able to find a 2009 Belle Gloss, Meiomi Tavola Pinot Noir from Oregon by the glass. That’s a mouthful for $ 8 a glass eh? What a delightful break from the typical New Mexico fare. Make sure you take the time to view the incrediblele artwork throughout the hotel lobby and resort.

Poor poor food for the price. My daughter had to send her entrée back twice because it was cold. Our prime rib was served without Au jus and we had to ask for horseradish sauce. The meat was dry. The manager was not apologetic at all. Avoid this restaurant as they will take your money! Costly with poor quality!

I was totally prepared to hate this place simply because it is in a casino owned by the Hilton Family, but I’ve been won over… Entrees were pricey, and the shrimp cocktail wasn’t the best one I’ve had in town, but the food and wine were both excellent. I’m dinging the restaurant a star because the service was a bit slow on taking our drink orders, and we were a thirsty bunch… However, the overall ambiance was wonderful and I’ll be sure to recommend this place to my friends who have the money to blow… The fish dishes were my personal favorite, but the rabbit, ribs, and taco plates were all great(we were mixing and sharing plates).

I really enjoyed my dinner at Red Sage. This atmosphere truly matches the vibe of the Buffalo Thunder Resort & Casino. After a long days shoot cast & crew had dinner here. We were probably the biggest group in the restaurant but the waiters were very attentive and courteous. Food was made perfect. The steak and wine was on hit. Good times! If you are staying at the hotel, or even if you’re not-this is a great spot for an upscale dining experience. Red Sage is definitely a 5-star restaurant and gets the 5 star Unilocal approved.

I love this place. You would never think you are in New Mexico eating at a place this posh. Great drinks, great ambiance, and great food. I had the chicken breast which was half a cornish hen and it was very good. The mashed potatoes were yummy. They had other stuff on the menu which looked very good too. Would love to go again and try other menu items. Next time I head up that way it will be must stop.

This is a first-class place for a casino bar. Honestly. This place is owned by the same people that own Coyote Café. The bar here — with it’s gorgeous views of the hills, modern fireplace, and modern fixtures is a gem. The bar menu is nice — I loved the fish and chips — especially the caper-filled tarter sauce. Great find.
