I think everyone knows I am a fan(–atic) for some down-home authentic Mexican foods. How authentic? Do you know buche? cesina? cabeza? or tripa? So what can make this better? How about Mexican foods on wheels? How about Mexican foods on wheels that come so close to where you live it is right around the corner? I used to have a stable taqueria/pupuseria truck that comes around my neighborhood, but they have been absent in action for a while. In desperate time I came across Lunches San Luis, parked in front of a gas station convenient store right off Knightdale Blvd. I have had the pleasure of enjoying this food truck for quite some times now; all the meat ingredients were made fresh on the day, and doesn’t matter if you order your tacos and quesadillas with flour or corn(maiz) tortillas, the doughs were all hand formed and pressed with a tortilla press right inside the truck; I’ve seen it many times through the ordering window, it’s quite enjoyable watching your food take place in front of you. This truck seems family-run, and there is got to be more parking locations than this one that I know, so keep a look out for this bright yellow truck in-tow by a Ford truck.
