Food was terrible. Very greasy egg rolls. Sesame chicken was rock hard. Who makes egg drop soup with cream of corn? Never coming back

First, a back story: Back in October 2010 my housemate and I had to go to Pueblo for a few days on personal business. While we were there, one of his friends recommended we try this place(then under a different name, I believe). My friend ordered Chinese food, which he liked, while I ordered Thai and Vietnamese food that was among the best I’ve had pretty much anywhere. The spring rolls were excellent and I had a coconut and lemongrass soup that was superb. I was amazed I could get this quality of Asian food in Pueblo when I usually can’t find it in Denver or most other places. I also loved visiting with the waitress, whom I learned was part of the family that owned the restaurant. They were from Cambodia and had recently re-bought the restaurant after their disappointment with those to whom they had sold it. Fast forward more than a year: Yesterday while my housemate and I were heading off the mountain to run some errands in Denver, we got a call telling us about an emergency involving his family that we had to fix. We dropped everything and made a beeline directly to Pueblo, not bothering to head back and pack or grab anything. We arrived in the evening and after checking out the emergency, I decided we absolutely had to go back to this Chinese restaurant. Though we got there immediately before closing, we were still warmly welcomed by the waitress and had superior service. I looked over the menu and got spring rolls again and the soup I thought I had tried previously, whereas my housemate ordered the sesame chicken. The Spring rolls were large and still very good, though I do prefer spring rolls that contain more mint than lettuce. When the soup came, I could tell it was what I had ordered before and still very good though perhaps not quite as good as I had previously — and the presentation was a bit off as the oils and chilies had separated in the soup and wouldn’t mix. It wasn’t as creamy as it had been before and I believe didn’t have as much coconut milk, though I still truly enjoyed it and took home my leftovers. My housemate, however, was a bit disappointed with the sesame chicken. I was also having a harder time because the lights kept flickering and it seemed a bit like dining in a strobe. The waitstaff told us that it was a problem with the wiring that comes and goes and was effecting all the lamps that night. If it hadn’t been for the lights and my housemate being a bit disappointed with the sesame chicken, I probably would have given it 5 stars(as I can’t do 4.5 stars). It was definitely a 5-star experience the previous time we were there. I did learn that this family had just bought the restaurant about a month prior from the family that I had remembered from over a year ago. They kept the menu pretty much as I remember it and may still be working out their own way of preparing these dishes. I will say that I’ll be back the next time I’m in Pueblo and that I hope to get to know this newer family as well as I had known the previous one. Still, the service was great and friendly and I still find that what I ordered was much better than what I usually find in Denver.
