This is the best coffee shop in Pueblo. They roast their own beans with a unique and sustainable process. They have a wide selection of hot and frozen drinks. They also carry a bunch of juices and kombucha. They have good things to eat, nice large seating area inside, and four tables and chairs outside, perfect for people watching on Main. Definitely worth getting off the freeway for if you’re passing through. This is a 2.5 wave coffee shop. I wish they would perfect their latte art, and not have a caramel macchiato on their menu. I once heard one of their baristas training a new employee saying«we don’t use Starbucks nomenclature here.» So why not add a real macchiato to the menu and dispense with the other one?

This place is 0 for 2 with me, and that makes me sad because it’s in a good location and their coffee is actually quite nice. The first time I went in it took at least 5 min just to order a brewed coffee and then another 10 min for them to bring me a toasted bagel with schmear. The cashier didn’t know what some things on the menu were and the menu had permanently out of stock items on it. That was about the limit of my patience for coffee and a bagel, but the coffee was good, so I decided to try it again. I came back today around 9 am. I wouldn’t call it busy– there were maybe 3 people in front of me. I ordered a brewed coffee and the special which was«Pear Delight»(bagel with schmear with raisins and walnuts topped with pear slices. 25 minutes after I ordered I finally asked about the pear delight and I got a completely blank look. Then a different employer recognized me and rushed to make my breakfast. When it arrived it was not worth $ 5+(the prices of the specials aren’t listed on the board). The raisins were very mealy and unappealing and the pear slices were crunchy like an apple. They really shouldn’t put pears as the special when they aren’t even ripe. The employee was somewhat apologetic, but not enough for what was a 30 min wait for a toasted bagel. The employees were having fun, which is fine– I love a cheerful staff, but they were pretty raucous for the space as it’s quite echo-y in there and several other business meetings appeared to be progress– which meant that everyone had to talk louder. I might go back for a cup of coffee– because it really is good coffee, but I don’t think I’ll attempt to eat here again.

I really love solar roast! You just can’t beat the coffee there. I really enjoy the mocha. Hot, iced or in a granita, the mocha is my drink! I also really enjoy the bacon eye opener on an everything bagel. The bagel is always soft. The ham quiche is also very good. We will be back again this weekend!

Needed coffee and breakfast while driving north on 25 to Garden of the Gods. Found SRC on Unilocal.Easy to find off the highway. Lovely coffee shop with patio seating and spacious indoors. Very large selection of coffee and good size lunch menu. Breakfast menu consists of 4 items: quiche, breakfast burrito, granola parfait, and oatmeal. We had the ham quiche and bacon breakfast burrito with green salsa and sour cream on both. They were delicious! The regular coffee was nice and strong. Highly recommend.

The world’s only commercial, SOLAR-powered coffee roaster! How cool is that? Pretty cool, I’d say. I don’t know that I can say I can taste a difference between solar and traditional roasted espresso and coffee drinks, but I think that’s kind of the point. :) I can say I really enjoyed the vibrant energy at this comfy coffee house, and our drinks were delicious: Kahlua Café and a chai tea latte. They offer a bazillion drinks from coffee/espresso including granitas(like frappes), a large assortment of teas, chai tea, and Italian sodas. How does one choose if only visiting for a few minutes? I’m sure I’m missing other items like juice and smoothies, plus they seem to have a healthy and delicious looking food menu, of which I hope to try next time. Some really interesting options. A very large patio outside would definitely beckon me to sip my bevvie outdoors on a warm day, but there are lots of nooks & crannies to work, chat, read, study, and tables at which to eat inside, of course. Totally charming Colorado woodworking in the design of the structure, including the roasting facility attached in the building next door. They offer a lot of variety in their solar-roasted coffee beans from various places around the world, including Ethiopia, Colombia, Mexico, Nicaragua, Peru, Guatemala to name just a few. I naturally picked up a bag to bring home as a gift for a friend. They offered to grind it for me but I opted for ultra freshness. In any case, it’s a great atmosphere, product, and concept. I loved it and am so glad I stumbled upon it on my way through Colorado. I almost didn’t and that would have truly been a mistake.

The breakfast burrito is indeed the best I’ve ever had, as other reviewers have said. The coffee is good, and on par with other local shops in several cities, but not so exceptional that I would rave about it. FYI — I grade coffee shops on their Americano. I work remotely while traveling, and always patronize a local coffee shop. In exchange for using their free WiFi, I usually have several coffees and 1 – 2 meals over the course of a day. Do not plan on working here. I could only see 1 power outlet, near the fireplace, and the free WiFi is so slow, that it’s just embarrassing for anything calling itself a business. With 5 customers in the shop, and only 2 who were using devices, the WiFi connection was weak, and a speed test showed a consistent 0.97 Mb download speed. That’s not a typo. Sorry, Solar Roast. Good WiFi is simply a must-have for every coffee shop.

I have mixed feeling about what to write about Solar Roast. It’s a nice place, comfortable, clean, nice atmosphere, the background music/noise is not too loud. I had a coffee there a couple of months ago and it was terrific. Also, they are solar, which is awesome. Here is where they dropped the ball big time. They offer the option of gluten free bagels for their sandwiches strongly implying that they have checked the ingredients of the rest of the sandwich to be sure it’s gluten free as well. Well, when I asked if the salami was gluten free a total look of confusion swept across her face as she stumbled saying insecurely, «well, salami is… gluten free.» When I informed her that it depends on the brand and that applies to all deli meats, spreads and even some cheeses she had no idea that was possible. If you are going there to get a gluten free meal I would suggest asking to read the labels of everything that goes on your gluten free bagel or get the bagel plain. Now I wonder if the oats they use in their parfaits are GF. If you are gluten intolerant and eat gluten it can make you very sick. I really had high hopes for this place becoming a regular stop for me.

Work brought me to Pueblo for the day last week, and I ended with a bit of time to kill between finding a parking spot and my event. I remembered seeing a Starbucks on the drive in, but walked by Solar Roast on my way there and decided to give a local shop a try instead. It was over 100 degrees so I went with a blended mocha granita– the coffee flavor was great and it was a pretty refreshing drink. The barista was friendly, and happily gave me as many coins as possible for my change so I could pay my meter. There seemed to be quite a lot of seating, and air conditioning was definitely a plus. I won’t end up in Pueblo again anytime soon, but if I do go back, I’ll likely get my caffeine fix here.

5⁄5 for a cool eatery café, 3⁄5 if you’re looking for good coffee. Take my opinion with a grain of salt, I like lighter roasts like Corvus and Novo(Denver). This coffee tasted dark and much more like Starbucks that I prefer. The staff however was VERY nice and made me feel welcome! This is a great establishment. The girl who helped me was cute and had a great personality.
