Since Kim’s opening in April 2013, I have had a chance to check it out several times. I am no phở connoisseur, but I have had my fair share of different styles, flavors, and meats through the years. On a good day, this place is average or just little below. While I felt the quality of the meat was a bit sub-par(really high fat content), the broth was OK and the noodles were not over-cooked. I’ve had the Beef Flank and Brisket soup each of the 3 times I’ve gone, as recommended by the chef. It comes with a baggie of sprouts, jalepenos and lime to add to taste. While the sprouts and lime are nice, the jalepenos seem like a weird addition here — they don’t fit at all with the flavor profile of the soup. Why not some Asian peppers or even Sriracha? Maybe the best thing about the food is the high-quality container it comes in. The last thing you want when carrying a huge bowl of phở is for the container to collapse. Overall the place doesn’t keep me going back, but it didn’t kill me either. I’d give it 2−½ stars if I could. Look elsewhere for really good phở downtown — there is plenty out there.
