The chorizo is good. It’s spiced well and cooks up nicely. It’s best kept frozen if you don’t want it to spoil. Generally local small food businesses don’t akin to using preservatives and fillers are subjective to quick deterioration once they make it home. Freezing their products doesn’t take away from the flavor or texture it just assures you’re not going to throw $ 7 a package down the proverbial drain. My favorite is the chicken and the verde chorizo. Granted you can buy a processed version at your local grocer for 1⁄3 the cost — but beware of the cholesterol content and other questionable ingredients if you decide to buy that instead. I like their storefront located inside the Portland Mercado. It’s warm and inviting and decorated quite festively. They have a giant case filled with their chorizos, meats, bacon, carne asada(my favorite) and other choices. A huge sign tells you everything you need to know; there are lots of places to sit and relax, use the free WiFi and have lunch, a coffee or engage in the community events offered regularly. So why only 3 stars? i bought their carne asada recently as I have in the past. It was unclear that I needed to use it all the day I bought it. The meat comes pink and swims in a spicy marinade. The packaging is not resealable and I’m not expecting them to change that fact. However, I only used a small amount and sealed it best I could — and put it into the refrigerator. I should have put it in the freezer. The next day it was no longer pink. In fact it was brown. And it did not smell good. When I tried to cook it — it was even worse. I should have called them. But I did not like most people and I didn’t want to drive across town to show them what had happened. All I know is I won’t be buying that product again from them. It’s a shame, too, because I really liked it. Luckily there are other butchers in the area and I’m confident I can find one to meet my needs. The lesson learned always ALWAYS ask the longevity left on the meat in the case and ask how long before you have to toss it to avoid spoilage. Nothing leaves a worse taste in your mouth than throwing your money away.
