I get a monthly service from these guys in my bistro and today took my personal knives in for sharpening. Really happy with the service and am going back for sure. Great edge on the blade, at least as good as the factory edge. Service was fast and more than reasonable at $ 3.00…

When living in the Chicago area, I had my knife sharpening plan(at the local Farmer’s Market). Once I moved to AZ, I had no idea where to go. Arizona Cutlery was in a good location for me, reasonably priced, quick service, and easy parking.

I’m not from Phoenix, but on a trip to visit my sisters I brought along a 3″ knife that my buddy made for me. The knife needed some sharpening so I looked up places and Arizona Cutlery had some great reviews. Went into the place, was greeted right away and informed that it would be about a 10 min wait while they sharpened it. When the gentlemen came out with my knife(less than 10 mins later), he explained to me that it was made of some really hard, high carbon steel and what he did to sharpen it. As someone who likes to learn new things, I appreciate the extra step he took to educate me on the sharpening and what to do to keep the edge. He also gave my knife compliments saying it was a high quality handmade knife. Good to know my buddy is putting out a great product.

I took my Wustohf Ikon chefs knife to be sharpened here, as it was the only sharpening service I found in az on Wusthof’s web site. The service was quick and cheap, $ 3.00 while I waited. Although the knife is sharper than when I brought it in, it is a far cry from factory sharp. Also, from the factory, the knife had a single angle to the blade from front to back. Now the angle visually appears to vary as well as the depth of the cutting edge, very disappointing. I bought a Wusthof 3 stage electric sharpener the next day, for $ 149:(However, if you have the time and don’t mind loosing your knives for a few weeks, you might consider sending them back to the manufacturer of sharpening, which I haven’t tried yet.
