Wholly Cannoli! When it comes to dining out, I often think of Italian restaurants as a ‘safe’ choice rather than a destination of choice. Vin’s Italian Food Truck turned those thoughts upside down when I ordered their fried eggplant sandwich and a small plate of mini cannolis. Really? A fried eggplant sandwich? Really. A fried eggplant sandwich. The combination of sweet red and yellow peppers, pesto and crispy eggplant was wholly satisfying without the ‘heavy feeling’ associated with eating fried food. The flavor of this sandwich was SO on-the-mark, that my only criticism was the small portion of eggplant on each half. A bigger slice of eggplant, or a second small slice, on each half would have made bites more consistent. The three tiny cannolis were 100-percent authentic and rank up there with those from Casetta, in St Paul, locally and Mike’s Pastry in Boston where I first fell in love with these crispy, creamy, twisty bites. Vin’s was a pleasant surprise on a sunny day and I’m not likely to walk by them in the food truck lineup downtown. The staff was friendly and I loved that the person taking my order stood outside the truck. It required less fumbling, shouting and reaching.

I love them. I would eat a meatball sub every day. You can find them at breweries a lot, and a giant sub is the best food to go with local brews! Keep doing what you’re doing!

Found Vin’s at Bahaus Brewery over the weekend and had an awesome meatball sandwich. Homemade tasty meatballs with provolone and red-sauce on a good soft roll, can’t go wrong! The truck looked snazzy too. Definitely filling a void in the Minneapolis food scene.
