Bucky’s Butchery is kind of hidden, but if you do manage to find it, a trove of meat awaits you. You walk in through the door and there are two large freezers in the middle of a room that doesn’t look anything like a store. Then you notice a large board on one wall with all the prices of each cut of meat posted. All the meat is butchered and prepared by undergrads in the Meat Science program. Most of the livestock that the meat comes from is harvested from UW’s livestock facilities in Arlington, WI. What they have available is a complete crapshoot. Check out their website( ) for pricing on specific cuts. They now take credit cards, which is very convenient but are only open on Fridays from 11am-3pm. Try their beef summer sausage if you get a chance. It’s pretty good.
