I first noticed Paul’s during a Bike-to-Work-Day event when they hosted a breakfast station. There were several vendors on the small patio, and I remembered it was particularly eerie because it was a 7:30am and there was an electronica DJ spinning next to the coffee and bagels. I sat at a table enjoying the coffee and spotted someone replenishing the pastry table. I think it was Paul who stacked some pumpkin bread with chocolate chunks on to a tray. He obviously knew what he was doing because after trying one of them, I made up my mind that I had to come back for more. When I returned, my mood wasn’t that great after it had been raining non-stop for two weeks. I had to have that pumpkin bread with chocolate chunks, but decided to also get a mocha. I looked down at my cup, with the froth so beautifully poured in to my to-go mug that I didn’t want to put a lid on it. After taking a sip, I was reminded, «Oh, that’s what a mocha should taste like.» And it literally brought a tear to my eye. Hormones or good coffee or both? Later, I returned again. It was the coffee.

So happy that I found this place, just a couple lights off the freeway on my way to CU. Most importantly they make good lattes. They also have tasty breakfast burritos and the coffee cake is a must try. Def worth the detour. Nice baristas, funky mismatched décor, could use a couple items to make the place more cozy, but not a big deal. A little hidden, but your navi should take you right to it.

Craft coffee, knowledgeable baristas, chill local setting. Paul’s sets itself apart as the place to go to in Louisville for coffee. There was a live string septet playing in the shop this afternoon. Go to Paul’s especially if the big business spot across Mccaslin has nothing you’re interested in.

Paula’s is not a fancy place but the coffee and service are great. It’s seems to be quite popular. I was surprised how crowded it was on a Sunday morning at 8:00. It’s located in a strip center and has a bare bones furnishings — mostly unpadded wooden or plastic chairs, tile floor. In other words, functional. The shop has a full wall of windows, which was nice on the cloudy morning I visited. The wait staff was very friendly and seemed to know most of the clients. I ordered an Americano and my wife got a latte. Both were very good. They pull a good espresso at Paul’s. I’ll happily return again.

Okay, so, again, tastes for coffee, espresso are obviously subjective. We all get that. And I do not think that one can offer a fair review of any place where they serve food and drink on only one visit unless that experience was truly horrific. I would also venture to say that when it comes to deciding whether or not you want to patronize or even offer an opinion about a coffee roaster, it is hard to do if you are ordering lattes, etc., or drowning your coffee in milks, which really mask the flavor and quality of the espresso or the coffees. Working out of coffee shops in the Denver metro area, I have been to nearly of all the independents. Seriously. So we have been here 3 times with different folk. The shop itself is very comfortable and they have free wifi. We have ordered, Americanos and drip coffee each time. No one wants to pan any small business but I have to say, that Pauls’ espresso is the weakest, most tasteless espresso that has ever made contact with my well tested tongue. There is just nothing to it. Even Starbucks or Caribou’s espresso has some substance to it.(Our favorite espressos in Colorado anyway, are Pablos, Kaladis Bros., and Coda, for what it’s worth.) But Pauls’ is the worst. Further, there is not one varietal of coffee whaich Pauls’ roasts(and he does it on-site), and I have tasted all that they have brewed when I was visiting, as they have little tasting cups next to their«brews of the day,» which I would ever order or, recommend. Perhaps others will have a different opinion on Pauls’ espresso and coffees and that the shop will thrive. That would be fine with me.

I love this place! It is the perfect small town coffee spot. The first time I came here I had a true macchiato… espresso marked with foam not the Crap you get from the major chain that is so full of sweet syrups you can’t even taste the coffee. I was blown away by the pure delectable taste of the espresso that I drive 45 min to get it. There are some bad reviews that were posted because of their décor and Wi-Fi, but honestly I have sat in on several occasions and have never had an issue with either. There are always great people to meet hanging out in the repurposed chairs(that are very comfortable no matter where they came from) and the Wi-Fi has always connected. The people that work here are great too. Come in more than a handfull of times and they will remember who you are and if you get the same thing they will remember that too. Summer time is awesome because they do the tody coffee(cold brewed) so your iced coffee taste just as amazing as a hot coffee… no bitterness. I have even bought several pounds of this coffee to give out as gifts to my friends around the country and every year they beg for more!!! Keep doing what you do Paul!

Not very impressed. Thought I’d give this place a try, as I have been exploring various coffee shops around Boulder County to have a nice coffee and get work done. I ordered my drink, say down and got my computer and work out, only to find out I couldn’t connect to their WiFi. After troubleshooting for about 10 minutes, I asked the employees for assistance. They told me that if too many people are connected it won’t work. I looked around and it seemed like 5 or so people using their computer, which isn’t that many. Apparently they don’t have any hard wire cable for wifi and thus they experience great connection problems on a daily occurrence. Would’ve like to hang around and gotten some work done, but that wasn’t going to happen. Maybe I’ll give them another shot if they fix their internets problems, but until then I’ll be going to Bean & Berry right down the street(it’s atmosphere is much better anyway!). Wasted my time.

For a place that roasts their own coffee, they could do so much better for overall experience. The coffee is fine. I had a light roast house coffee and it tasted great. Then I noticed the roaster and decided that was impressive. The internet connection was almost unworkable — and then decided to work. These are things which there are solutions for — it’s not the dawn of the wireless age, so I would expect a place to get that straightened out in short order. What really floored me was the visual presentation. The atmosphere here is really quite deplorable. There are chairs with«Property of Colorado State Prison» printed on them — or some such. They didn’t even bother trying to remove the markings. Yuck. It looks like someone was dumpster diving for the furniture and slapped the place together. Now this might just be all well and good if it’s in your house — but it reeks of unprofessionalism and no empathy for the customer feeling comfortable and enjoying the space they have bothered to put themselves in. Oh and the bathroom door has a sign«the lock doesn’t work so please knock.» Wow! There’s a Home Depot and Lowe’s right across the street — you could have a new lock in for $ 30 in less than an hour of reading this review! Sorry — I really wish I could give it more stars — but«Meh, I’ve experienced better» is a gross understatement. This ranks as the worst presentations I’ve found anywhere in Boulder county — anywhere in the country.

I would give 3.5 stars if that was an option. I had a coupon so I decided to come check this place out. I ordered the hot chocolate which was delicious and a frosted cinnamon roll which was equally as good. My sister had the spicy Mayan mocha at half strength which she enjoyed after adding a little sugar and some more milk. I sneaked a bite of her almond poppyseed scone which was very yummy. They also offer Boulder Tea Spot teas which are really good and they have a wide selection. I recommend checking this place out!

P is for how Packed this place is. A is for all the Attitude the baristas give you. U is how Ugly is it in here. L is for how Loud it is. S is for how Superb the drink was. When I first walked in to Paul’s I was not very impressed. This place has the feel of an 80s diner turned used furniture showroom. There is a hodgepodge of mismatched tables, chairs and decorations and nothing here looks like it belongs. To some, it may be quaint but I found it loud and distracting. It’s a different story when it comes to the drinks though. The Bhakti chai was perfect. It was expertly steamed with just enough foam. It was the perfect temperature. It had just the right mixture of chai and milk. It was probably THEBEST Bhakti chai I have ever had. The food, however, was only mediocre. The ordering experience was convoluted and I felt that the baristas had an unnecessary amount of attitude. We had to talk to 3 different people to actually order drinks. I get that it’s loud and hectic, but this was our first experience here and it was not a great first impression. Overall I don’t think I would come back here to hang out. The drinks themselves warrant a second visit, but I will definitely try to be in and out as quickly as possible.

Want a friendly place full of people who really know coffee? This is the place. First off, they roast their own beans, so you know you’re getting exceptionally fresh beans. Next, they craft some excellent coffee beverages. My personal favorite is the Mayan Mocha, a spicy twist on a coffeehouse classic. As far as breakfast goes, the burritos don’t disappoint. On my next visit, I want to try a Breggo, which looks like a stuffed breakfast sandwich. I really wish they’d open up a branch in Denver. Truly outstanding.

I was in the area and decided to stop by, the coffee was alright, nothing special. However, with that being said, it is a much better choice and always a preferable choice over the green and white. The had quite a selection of pastries and sweets but I was looking for a breakfast type meal when I went in, which they did not have other than bagels which I was not in the mood for at the moment. The staff was very courteous and helpful, and the space was good for singles or groups. I didn’t stay long so I cannot comment on if it gets too busy and loud or how the customers generally conduct themselves.

First time here. Interesting vibe. Saturday must be bluegrass jam afternoon where people just show up and play… banjos, slide guitar, acoustic guitar, upright guitar. Definitely not *my* deal, but if you are into this kind of thing, check it out. I got a latte where they use real mugs if you drink it there… so much better than paper cups! Too bad they don’t have caramel sauce… that was a bummer… But great service. Friendly and so helpful. It was definitely a different experience. If you are looking for a down to earth place to hang out, then check this place out!
