La Copa Empanadas

We discovered their empanadas when they had a regular booth at the Sunset Beach Farmer’s Market on Saturdays. Sadly, devastatingly we have not seen them there for months. Their empanadas are so mouthwateringly delicious! The flaky, buttery crust is so decadent and is perfectly complimented by their fillings. We have not been to the bakery yet, but we will be going soon! We loved the beef and chicken filling. We tried the ham and cheese and the mushroom ones also. The ham and cheese and the mushroom empanadas do not have the same bold wonderful flavors, in fact we thought they should just add mushrooms to the beef and chicken fillings or make the mushroom ones a little more garlicky or like the meat fillings. But we very highly recommend the meat fillings. We ate some empanadas from a competitor in Los Angeles recently and we were quite disappointed because their empanadas do not compare with La Copa’s. How about a Copa in central or coastal Orange County!

I do not think they have a brick and mortar establishment and that is just fine by me. I would be in some serious trouble if they did.
I stumbled upon them at the Laguna Niguel Farmers Market.
I bought one of their mushroom empanadas and was going to take it home to devour. Needless to say, it did not make it home…
The crust flaky and the mushroom filling was loaded, warm and very flavorfull!
Loved them so much I bought 12 frozen empanadas for a get together at my home for approximately $ 44.00. We bought the beef, chicken, ham and cheese and mushroom.
The gentlemen indicated that I should brush the tops with an egg wash and bake them at 350 degrees for 20 minutes. They took a little longer than expected, but the end result was sheer happiness in my mouth! He was so kind when we bought the dozen, he threw in a free quinoa salad, which lasted all of 5 minutes!
This is one of the first times I cannot provide pictures of the delightfull goodies. However, I will post them as soon as I can!
