Brisket is very good, bark was a little chewy. Ribs were perfect tender but not much flavor unless pork is flavor. Did not care for regular sausage, had some strange spice. Sauce was over powering, did not work well with strange tasting sausage. Did work well with flavorless ribs.

They’ve been here for thirty years so clearly they’re doing something right. We tried the babyback ribs, the brisket, pulled pork and a little sausage. They had to roll us out the door, but it was terrific all the way around. Probably the best part of the break though was the friendly people who helped us. Great place to stop if you’re passing through town.

I don’t Unilocal often, but felt compelled to disclose this hidden BBQ gem between Kerrville and Ingram. First time here, will be back many, many more times. Super friendly service guided my wife, mom and I through the small ordering area to the register. Luckily for me, BBQ cabrito was available, and I received a generous 1⁄3 lb alongside a 2 meat plate with moist brisket and some of the best baby backs I’ve had in a long, long time. Super tender and barbacoa-esque, the cabrito came with a bit of the cooking jus and helped accentuate the very slight gaminess. The moist brisket was seasoned well and perfectly cooked, as was my wife’s lean brisket and my mom’s pulled pork, pulled to order btdubs, when was the last time you saw that? Mustardy potato salad, sweet coleslaw, and well cooked and seasoned beans rounded out the serve yourself sides, as well as pickles, onions, and BBQ sauce. The BBQ sauce was tangy and not sweet like a traditional tx style BBQ sauce, which was unnecessary anyway as the meats were cooked so perfectly. I can’t wait to return for sausage, turkey, ½ chicken($ 10.50?! Wtf?!), and more of those spice rubbed baby backs!

My dad used to bring me here 30 years ago, when Bill himself was working the counter, and it was delicious then. Not much has changed. Still the same western motif, friendly staff, and great barbecue. The ribs, and pulled pork are instant classics, and try the turkey if you want something lighter, but still pleasing to the palette. There is plenty of fresh bread, and the normal sides to fill out your plate. Small portions of home made desserts put a sweet ending to a great meal. The parking is limited in the front, but you can pull down the side to a parking lot in the rear. There’s also additional seating behind the building that can’t be seen from the front, and it provides a semi-private atmosphere. If you’re craving barbecue in the Hill Country, Bill’s is worth the short drive to get there.

I ordered the three meats plate with pork ribs, briskets, and jalepeno sausages. The plate come with 2 sides of your choice. I picked potato salad and cole slaw. The other side choice was pinto beans. Of the meats, the winners on my plate were the sausages and pork ribs. The ribs were tender and full of flavor. The jalepeno sausages had just the right snap to the casing and not too spicy. The brisket was on the dry side but had a beefy taste. Both sides were very fresh and good. The cole slaw was mayo based and was not too sweet, love it. Overall, it was pretty good BBQ, but not in the same class as Franklin’s, Snow’s, Oprey’s or Cooper’s.

Definitely can speak on the sliced beef sandwich. I get one everyone time I’m on the way to the deer camp. Sometimes I get two, one for the next day while I’m out there. I get the fat end, it’s tender, juicy, and has great flavor. No lack of meat either. All the years I been stopping there, the folks have always been great. I’ll keep stopping at Bill’s as long as they have the doors open. Almost forgot to mention the big outdoor pits, they’re a welcoming sight that draw you in with the light smell of smoke and good TX barbecue.

Arriving at Bill’s I see a rustic building with limited parking on the street up front, but I notice there’s a single lane driveway leading to additional parking in the rear. As I navigate the narrow lane I notice a similarity to Cooper’s BBQ in Llano — outdoor smokers under a covered patio. It’s similar, but smaller, with far fewer smokers. The unmistakable aroma of meat and burning wood fills the air. Stepping inside, the room where you order the food is a little cramped, but I’m immediately welcomed by the friendly server who offers to fix my lunch. I think I want the two meat plate. It comes with a couple sides of my choice. Hmmm. How do I chose? Chicken, Brisket, Ribs, Sausage, Turkey, Pulled Pork — they all sound good.(Pulled Pork? What’s that doing here? Isn’t this Texas??) I’ll take ribs and fat brisket please. She’s weighing the meats as she puts them on my «picnic style» divided section sturdy paper plate. That looks like a lot, maybe more than I can eat. She hands me the plate and instructs me to help myself to the sides. Sliding down to the sides I discover a bucket of potato salad, a bucket of cole slaw, and a bucket of pinto beans. I can have as much as I want? As much as the plate will hold? Well, thank you very much, I think I will. A ladle of cole slaw and a ladle of beans fills the dividers in the plate. Maybe one more ladle of beans. A little more cole slaw too. The food begins to run together like a Thanksgiving Dinner helping. Yes, that’s perfect. With cole slaw falling off the heaping pile on my plate and onto the counter top, I round the corner to the BBQ sauce, onions, and pickles. A handful of pickles and a plastic cup of sauce. I grab an ice tea, pay for my meal and walk the tray to the dining room. Should I sit on one of the outdoor picnic tables, or on an indoor picnic table in the dining room which is covered with mounted heads of trophy animals? It definitely looks like Texas in here. I think I’ll sit inside today. After my first bite I know I’m in for a treat. The fat brisket is smokey and flavorful, and incredibly tender rib meat falls off the bone with a simple tug. I’m originally from Kansas City, so I’m a bit of a rib snob, but these ribs are good, really good. Bill’s ribs don’t taste like KC ribs(Bill’s serves Baby Backs rather than the Spareribs that are popular in KC), but they are lip-smacking, boot-stompin’ tasty and delicious. The sauce is rather average and doesn’t do much for me(my only extremely mild complaint), but there’s plenty of Cajun Chef on every table to satisfy the true Texans. Maybe I should stop at half a plate and take the rest home? I could save the leftovers for dinner and share a taste of this Hill Country BBQ gem with my wife. Mmmmm, it’s so good. Just one more bite. Maybe another bite… and another. Now there’s not enough to take home, I better keep eating. Looks like I’m not going to have any leftovers for dinner tonight. If my wife is reading this — sorry. I’ll buy some extra to bring home to you next time.

Well what can you say about Bill’s! Great BBQ, potato salad, beans, slaw, and ice cold beer. All of this at a reasonable price that is very hard to beat. The ribs fall right off the bone and the brisket is tender, juicy, and very flavorful. The dining area is simple with concrete floors, wooden picnic style tables that seat about 6 each with all kinds of taxidermy displays on the wall and a television to keep you up to date on the current sporting events. Friendly staff and great BBQ! Need I say more.

A great find in the Hill Country. The staff are so gracious and make you feel right at home. So many choices of smoked meats and sides that are made right here. Brisket was moist and tender with a nice bark. The sauce is served warm with a nice balance of spice and sweetness. An unexpected extra is they offer a frosted mug for your bottle of Shiner Bock. Dining room is definitely Hill Country complete with mounted deer heads and Outdoor channel on the television.

We found Bill’s through Unilocal nation and are extremely glad we listened. This is a somewhat inconvenient location and, like many great BBQ places, almost a hole-in-the-wall in its appearance. Don’t let that fool you. The food is what you came for and Bill’s does more than deliver, they make you want more. The brisket is extremely moist and the ribs melt off the bone. Their sauce was different than most Texas BBQ’s as well — in a very good way. What more can you ask from a BBQ joint? How about make the sides great as well? They may not have achieved perfection on those but the potato salad was very good along with the cole slaw. I don’t come this way very often but next time I do I will make sure I put Bill’s on my agenda!

We stopped in for a late lunch today and I tried the brisket, pulled pork and ribs and all were very good. But, as a native of Kansas City, the one thing that I can say for certain about bbq is that it’s all very subjective. No two people seem to have the same opinion about what it should be like. Bill’s sauce is dark red, heavier on molasses than tomato and very different than the thin vinegary sauce served up by many Texas joints. The potato salad was pretty good as was the cole slaw. The beans were somewhat bland. All in all, Bill’s was a hit and we’re sure to come back.

This is the kind of place you dream of when you think of a BBQ restaurant. The food was ABSOLUTELY incredible, staff was kind and very attentive, and the atmosphere was unique and felt very homely. One hundred percent recommend if you’re in the area and mood.
