Went to this food truck during the Taste of Fort Collins. I tried the grilled cheese. It’s was toasty, salty and served hot. The waffle gave it a nice little sweetness. My daughter tried the European as well. She loved it! Future repeat visits for sure!

Saw the Waffle Lab truck at Taste of Fort Collins 2016 last night. I got in line, but couldn’t see the menu from there so stepped a few feet away to read what the options were. As I moved back to the line, a Waffle Lab employee rather curtly told informed me that the people in line in front of me would be the final customers for the evening. I was disappointed, but there was other food around so I went to the truck next door. While waiting for my order, the Waffle Lab people began calling out, «We’re still open, if anyone wants food!» … Let me get this straight — they sent me away, then began actively soliciting more customers? I guess they didn’t want my money, now or in the future. Rudely turning away potential customers is an interesting business strategy Waffle Lab… I hope it works out for you.

I come to Fort Collins every summer and make sure to stop here for a few helpings chicken & waffles during my visit. The food truck scene seems to be growing fast and I have tried a few others but The Waffle Lab always delivers the best! Go there on a weekend to catch some local banter and the lively downtown vibe. Minus ½ a star for slow cashiering and another ½ for some questionable cleanliness… an update on both would be reassuring.

My 100th review! Anyway, this place is boss! It was snowing, windy and cold and I just wanted a waffle. They offer both the sweet and savory varieties and who can pass up some chicken and waffles in the cold? Comfort food at its finest! The waffle was nice and fluffy while the gravy was nice and salty. I’m sure I had maybe a few too many calories but it was well worth it. So rich and flavorful with a side of maple syrup to balance it out on sweetness. Major props to a waffle stand for being ridiculously awesome. I don’t spend much time in Fort Collins but this definitely seems like a «must go» for waffle lovers and anyone that enjoys some amazing comfort food.

Flavor wise, Waffle Lab was a 5⁄5 stars. We ate 3 waffles: The European(pretty much a dessert-waffles with whipped crème, fruit, and chocolate hazelnut), the chicken and waffles, and the waffle with the brat. All selections were very tasty and I really enjoyed a few elements with each dish. The chicken and waffles were good– the chicken was well cooked and the sausage gravy was a nice touch. The bratwurst and waffle is an odd combo, especially with the sauerkraut and lighter hot sweet mustard(which was lighter in consistency and ate more like a thinner sauce/syrup instead of it being very thick, like the mustard you get from a bottle). Both of these dishes were excellent and, although I would not consider them the best I’ve had, they were very solid. The waffles in all of our dishes were buttery and thick, which was necessary given the amount of toppings on top. Texture wise, the waffles were a nice combination with the brat and chicken. The only downside to the Waffle Lab is the value/smaller portions. While I admit I’m a fatass and enjoy larger portion sizings, Waffle Lab still charged $ 9 for the chicken and waffles(which were two decently sized chicken strips and the waffle). I would say that Waffle Lab is a great spot for a snack or a lighter lunch, but don’t eat there unless you’re willing to pay more than average.

Omg, this place is good! Try the chicken and waffles; fantastic! I might order it next time without the gravy just to see if I can make it through the entire thing because it is FILLING! My son and I even shared an order. And, of course, we had to also have a sweet waffle so ordered the European(nutella, bananas, strawberries, whipped cream, and chocolate sauce.) We were gluttons. But, damn, how could you not be? Friendly service, too. Just nowhere to really sit and these are hard to eat while you’re standing around. But for these waffles, challenge accepted.

I have to say, I’m quite biased towards street food. The lack of a permanent facility(no monthly rent/leasing fee) and counter service(no wait staff to pay) means a more affordable bill for the customer(AKA me) and therefore a better value. As cozy as some restaurants’ interior décor are or as nice as some waiters and waitresses are, such things are not a necessity. Street food embodies what I think all food establishments *should* be: focused on the food. As such, waffle lab is a great stop in Fort Collins for lunch or a large snack: the portions are generous and each menu item is a unique concoction dreamed up by the owners.(Trust me on the portions, the waffles are big as your face.) Everything they offer is fun and experimental, from the nutella and chocolate drizzled«European» waffle to heartier options like the iconic«Front Range Chicken & Waffle». While I haven’t tried everything on the menu, I can say what I have had has been pretty good. My only complaint thus far is that the fried chicken for the«Front Range» is rather dry and the gravy makes it too soggy too easily, which saddens me as a huge fried chicken fan. Thus far, my personal favorite is the«Mild High» waffle. All in all, this is a food truck that has its priorities in order and delivers on a wide variety of out-of-the-box waffle combinations that’s sure to satisfy just about every palette. Well done. 3.75÷5 stars

This food truck was at New Belgium Brewing on a Monday and I’m so happy I found them. The waffles are delicious. Today, I had the chicken and waffles and they are memorable and incredibly filling. There aren’t «healthy» options… but what do you do expect from a waffle place? A meal varies between a reasonable $ 8 – 10. If you want to splurge on either a sweet or savory meal, this is the place to stop.

I used to pass this place all the time but figured they were just waffles so they weren’t worth stopping for. So wrong. So glad I finally tried them. Now I have to go for my chicken and waffle fix every weekend. All of the waffles I’ve tried here are amazing but I keep going back to the chicken and waffles(no gravy because of an allergy) and it’s the perfect breakfast/brunch/lunch. Service has always been fast and friendly. Chicken understandably takes a little longer but not much longer and totally worth it.

Pretty yummy! We shared the waffle and sausage gravy. First bite, I wasn’t so sure but to be fair, my bite was following consumption of a lobster roll. That being said, I kept digging in for more. Final ruling, tasty delishishness done very well!!!

Delicious! The bacon grilled cheese & the European(nutella, strawberries, banana, & whipped cream) were the two perfect things to share. Yum! Definitely give this a try. the service is friendly, too :)

So I was really excited to take my boyfriend here for lunch, considering he likes waffles, A LOT. I thought it would be right up his alley. No line no wait on a Sunday, which was nice, but the downside was that there isn’t really any official seating, so we ended up sitting on the curb, not ideal for a messy sandwich. They also don’t have coffee, so it’s good that the Starbuck’s is right across the street. My BF got the chicken and waffles — I was very dissappointed to see that there were only 2 pieces of chicken, and he said they were mediocre. I also didn’t think that the person taking our order was very nice or welcoming. It definitely wasn’t the same people I went to 3 years ago. After getting our drinks from Starbuck’s I was surprised to find that the grilled cheese I got was not what I remembered — instead of it being between 2 waffles like 3 years ago, it was one waffle between grilled cheese, and the avocado and tomato were haphazardly scattered throughout. I do actually think it was a good idea to do it this way, because 2 waffles is a lot, BUT it was extremely messy. And with no table, it was cumbersome. They also took the waffle with mozzarella, tomato, basil and balsamic off the menu, which I think is a mistake. Bottom line: waffles are tasty. It’s worth trying. I still probably would go back again because it’s so unique.

I am very familiar with liege waffles, as I worked at a restaurant whose specialty was just that. I was excited to try these liege waffles, as I took my first bite I thought it was missing something, it wasn’t as sweet as I was expecting. Then about half way through I realized there was no pearl sugar in this batch, not even a nib. My moms didn’t have any either. Also, the woman was super unfriendly and I felt as if we were bothering her.

I am SOGLAD I finally tried this food truck! The waffles are incredible — they are basically works of art. Everything on the menu is elaborate, and I had a very difficult time picking just one. I ended up choosing The European, and WOW. It was amazing. Loaded with nutella, bananas, strawberries, whip cream and chocolate on top… It was not only beautiful, but it was delicious! I never thought I would be able to eat the entire thing, but it was so tasty I couldn’t stop eating it. The service was incredibly fast, and the server was very kind. I wish there were more places to sit around the truck, but I really have no complaints about this place! Definitely check it out!

I often see the waffle lab parked by dynamik ceramix, and I finally thought it was time to try one of their waffles. Reviews seemed to favor the chicken and waffle, so I decided to go with that, as it was lunch time and I was in the mood for a little sweet and savory. They made it super fast! So that was nice, not having to wait. After pouring the maple syrup over everything, I dug in. The gravy had a little spice to it, and the chicken wasn’t bad, but I think the waffle was my favorite part. I will probably go for a fruit one next time, simply because I think it will allow me a better taste of the sweet, somewhat carmelized waffle. Mmmm. All in all, good size meal, but I’m going to try a fruit one next time.

We ordered 6 different waffles and all of them were delicious! The texture was perfect and they have a perfect combination of savory and sweet. They don’t have a vegan option or gluten free, but they do accommodate vegetarians with more than just a sweet waffle option.

I went here on a weekend afternoon and we got the salmon waffle. I really really wanted to like this place, but I’ll have to go back and try another waffle… the salmon was good and it had capers on it but then it also had syrup and an overdone waffle. The flavor combination just didn’t mesh that well and I didn’t think the waffle was too great either :(I plan to come back here and try the chicken one. I’m sure the sweet varieties are great! I’m adding a star because the service was very fast and the guy working was nice. And I love their logo design and name.
