My family and I Had a wonderful experience dining here, the food was amazing, the drinks made by Allison were delicious and she also had excellent service and was so friendly! I love the atmosphere, piano, and the menu selection. Can’t wait to go back again soon!

We’ve been here twice, and the food and service are outstanding. The drinks are excellent, and different than you find on other cocktail menus. The place is cozy and inviting, especially in the winter when the fireplace is going. We live in Conifer and this is the only reason to venture to Evergreen for a meal. You can’t go wrong here! The 5280 deals here are also great!

I’ve been going to The Bistro as long as I can remember, and I think it’s the best it’s ever been. The food is consistently creative and delicious. I love the restaurant itself — authentic mountain atmosphere without the kitsch. I recently hosted a group happy hour(about 12 of us) and when we arrived the area was reserved and nicely set up. Alison was wonderful to work with from the first time I called to set things up. Our server was very attentive, even though it was a busy Saturday evening. I can’t say enough good things about The Bistro. Try it!

My family recently had an event at the Bistro at Marshdale, and I can’t stop thinking of all of the big things as well as the seemingly small things that went perfectly. First, the food is top-notch. We had 60 guests, and I heard comments like, «Not one slight misstep in any bite». Even the pickiest of guests was completely satisfied. This is compliment both to the chef and the staff. The Bistro knows how to train their staff to be attentive without being overbearing, to take notice of little things, and to tailor the service to each individual(even in a large group). A special acknowledgement needs to go to Alison, who, every step of the way took careful notes and made sure every request that we had was met. She is accessible, calm, kind, and most importantly remarkably willing and able to help. If you are planning an event, you would be lucky to have Alison at the helm. The Bistro is the best place around for a reasonably-priced sensational meal with fabulous wine and service. What more could you want?

We’ve had two lovely meals at the Bistro. The service is excellent – attentive but not overbearing. The food is consistently well-executed, from the pasta dishes to the main courses. Don’t expect anything adventuresome from the menu, though — the Bistro caters to a crowd that knows what it wants and shies away from surprises. Tip: Go for the 5280 tasting menu — it’s a steal at $ 30.

Evergreen, Colorado– Winding through the narrow tree-lined mountain road, we came upon a small wooden building and ventured inside as each wooden step creaked beneath our feet. We could tell this pick was old and we loved the romantic charm it exuded. Inside white tablecloths were lit by candlelight and we were sweetly ushered to our table for two next to the pianist dressed in a suit playing familiar romance tunes. We started with wine and warm bread dipped into fine olive oil as we reviewed the menu and listened to the recommendations from the waitress. We both decided on pasta which was perfectly prepared with the noodles and sauce embodying the ideal texture and seasoning combination. Our waitress was a fun fancy and we liked interacting with her. We loved our experience and will return for future romantic date nights.

Last year in the Denver Post, someone described the Japanese garden at the Denver Botanic Garden this way: «We don’t try to look elegant or elaborate or artificial because this garden reflects our Rocky Mountain identity, which is friendly and rugged, not pretentious.» The description resonated because it pretty well describes the Denver I once loved(and recently fled), and it pretty well describes the Bistro at Marshdale. When I read a review of Bistro At Marshdale where someone complained that it didn’t have white linen tablecloths, and that for the prices they charge, it should be fancier, I knew I had the right place. It’s a bit of a drive, but love. love. My husband and I both loved it. Ambience-nearly perfect. People-Just the right amount of friendly. Food and drink-delectable. A fabulous Rioja. Elegant in a low-key way without any attitude. It was almost perfect, and save this last item, it absolutely would have been a 5-star evening. The one complaint(and it was significant enough to knock a whole star off the rating) we had was that their cozy fire caused the restaurant to fill with smoke. At one point, I realized that the air was hazy, distorting the view across the room and that there was a very strong smoke odor. It wasn’t just us who noticed. We heard the people at the next table talking about their eyes burning and about asthma and epi-pens – in jest, I think. So, take note if you go during the winter when the lovely fire is burning, you may have to endure a crazy level of smoke. Hopefully something was wrong with the fireplace that night, because that’s not a healthy work environment for the staff…

I’ve been eating here for 16 years. I’ve seen a few different owners and multiple menus over the years. It is now under the best ownership yet. The menu is refined and delicious. The ambience is rustic mountain elegance at its finest, the prices are fair and the wines are fabulous! KC is my family’s favorite server! She’s awesome and remembers her regulars better than any other server in the Foothills.

I love almost everything about this place. We sat near the fireplace, cozy log cabin atmosphere. I had the rack of lamb, it was perfection! We had the TIramisu for dessert, it was delicious! My only issue was with the ricotta dumplings, not quite a dumpling… We weren’t crazy about those, but will definitely be back! Nice, romantic restaurant with friendly competent staff.

This place a hidden gem, please don’t tell anyone about it! Cozy, romantic and with all the old pictures of the tea house it was decades ago, a warm sense of nostalgia. A very nice menu selection for any location, let alone up here in Evergreen. We have been several times now, always greeted with a smile by the staff. Attentive, friendly service. I’ve never been disappointed in the food. The buffalo meatballs are never over breaded, very tender. The brussell sprout app amazing flavor. The bolognese has great flavor, the short ribs and osso bucco both fall off the bone. Try this place. Don’t be in a hurry, enjoy the service, atmosphere and the strong cocktails.

I have never personally been to this restaurant, yet. However, I did call there today to make a reservation. I am AMAZED at the customer service I received! I’ve called a few other places, in search of a venue for my sisters wedding. The woman at the Bistro, Sarah, was a tremendous help! She spent 45 minutes on the phone with me. We discussed all the details of my sisters wedding dinner. From how the tables should be arranged, which menu would be appropriate for our group, she recommended a florist for center pieces, and a bakery we could use to bring in a small wedding cake for bride and groom. She made a lot of great suggestions I wouldn’t have thought of. I feel like I not only made a successful reservation, but we sort of got a wedding planner out of the deal! Thank you Sarah! In addition to that, the Bistro has a great policy for reserving rooms. They will hold the room for 30 days and give us a call if someone else is interested in it. Then after 30 days we do have to pay $ 100 deposit. That money will be applied to Bill. No minimum required. Some places I called required a $ 1200.00 food and drink minimum with a $ 500 deposit. Wow! I’m thrilled so far! Thanks Bistro!

I took my Mom out for dinner at The Bistro last night. We chose it as we wanted to get out of Dodge and the reviews were so good. We were not disappointed! After a 30 minute drive on some back roads — we arrived Bistro’s warm and inviting location. Very rustic — the floors near the front entrance and bar look 1923 original, big fireplace at the end of the room. The wine list is reasonable/menu eclectic from steaks and seafood to pastas. I had a 10 oz NY Strip and Mom had the Chicken Wellington. Perfectly prepared. Our waitress Becki took great care of us. Doug the piano player played a mixture of 30’s through 60’s jazz standards and variations of Christmas music — perfect touch. Family friendly as well, you won’t go wrong here!

This is a great place to come to. Back when the wildfire happened in Conifer the chef made sure that we as firefighters were fed even after they were already closed, and at no charge. The three of us loved the food and I went back twice since with my wife and by myself. I travel a lot internationally and have eaten in numerous Michelin star rated restaurants, yet I couldn’t say that I am any less satisfied with the flavor and the quality of the food at this Bistro than I am at a star rated restaurant. Great food and great place for a date. Unfortunately I live about 60 miles away and can’t come more than once a year.

I’ve been in here a few times now and have been really impressed with the food and service. To start — the ricotta dumplings are amazing, as is the duck pâté. We have also had the fish tacos which were great. I have had the ultimate filet which was perfectly cooked — perhaps a bit heavy on the blue cheese, but otherwise excellent, and the lamb chops. I liked the lamb more — again, just perfectly cooked. My wife likes fish — she had a special one night and the halibut another and reported both excellent. Also high recommendations from others we have dined with for the Pot Roast. The service here is pretty much impeccable and has been consistently great on all visits. Decent pour from the bar. Really our kind of place. Very impressed. So — why just 4 stars? First, something is fishy with some of the reviews for this place. That bothers me — almost to the point of never setting foot in here, which would have been a shame. Too many people who rave about this place, then give competing places bad reviews — and nothing else — to be a coincidence. Completely unnecessary. The ambiance is just a bit too rustic for the price. If I’m paying $ 50 for a steak I am accustomed to it being served on a white linen tablecloth. I know this place is in the mountains, yes, I am am mountain man, but for the price I think they can spruce it up a bit. My wife thinks so too, which is more important. ;-) And lastly, hate to say it and I’m not afraid to pay $$$$ for an excellent meal, but I think the prices here are a bit high — maybe by just 10% or so, but it feels a bit high. And with that off my chest, we will definitely be returning. Overall a very good experience. Recommended.

Having just moved to Evergreen we are enjoying the discovery of new places to eat. I wanted to go somewhere nice for Mothers Day and made a 12:30 reservation. We arrived a few minutes early and were seat promptly. Brunch was good, I mistakenly assumed it would be a buffet but that wasn’t the case. No worries but the menu for brunch wasn’t exactly deep. The 3 of us all found something we enjoy, Eggs Benedict, Marshdale omelette and French toast. All the food was very high quality and tasty. Add 2 mimosas for me and juice and tea for the others, finish it off with a crime brûlée and it was a $ 75 bill, pre tip. Not out of line but somewhat steep for brunch. We will go back for sure on special occasions as I like to see the dinner menu. Word of advice. If they try to seat you in the small front area with 3 tables, wait for another spot in the dinning room. There was a family of 6 next to us and while they were exceptionally noisy to begin with the small space amplified every word and made for an unpleasant first half of our meal. I was tempted to pay their bill just to get them out of there.

Pretty great restaurant for one tucked away in Evergreen, CO! Aside from the super slow, sloooow service and then being auto-grated with a 20% tip, everything was excellent!(With that, the Manager of Bistro should really look into the new IRS procedure of auto-gratuity as of January 1, 2014. Just saying!!) I was referred here by the ziplining place we used last month in Conifer. We decided to go here for a friend’s birthday last weekend and she was thrilled with the location, ambiance and food! As was I! I do, however, wish they had Scallops on the menu the night we went! I’m going to post more pictures than a long post for this review. You can tell by the pictures alone, this place offers quality food and a variety for different folks’ tastes. One thing to note, we ordered from their Restaurant Week menu — that they’ve extended through September. I don’t know how they do it, but all portions are the same as their regular menu except the sliders. Kudos to the purchasing manager! We’ll be back for Brunch!

I was here once. The only reason I haven’t returned is because I don’t live near there. A friend recommended this and it was superb. I ordered their 3 courses for $ 30 special. I’m not sure if it was for a limited time only. I ordered the ancho duck tacos for my appetizer. I havne’t had duck before because I generally enjoy the leaner meats. The duck though was very rich. They rendered down the fat really well. The aioli, corn salsa and avacado completed this as one of the best appetizers I’ve ever had. Each component alone was delicious so adding them all together in one bite was just phenominal. For the entrée I ordered the pork short ribs. The only time I’ve had ribs before was a half or full rack of baby back so these ribs were new to me. They were great though. The BBQ sauce was a little sweet and a little spicy from the peaches and jalepenos. They were so tender I just used a fork to flake the meat off the rib and eat it. For dessert we just took the tiramisu to go. I’m not a big coffee flavor person so I didn’t have mine but I was so full from the rest of the meal that I wasn’t missing dessert. This is definitely a place to take a group of friends if you want good food and to drink and have a great time. It also is a place to take a date as there were many tables of two on dates when I was there. Five stars all the way! Also, I think it was the owner that gave us the specials who was very charming and lovely. Very friendly. The servers there knew how to be attentive without being distracting which is a skillset itself.
