It’s been a long time since I’ve Unilocaled anything, but I’m coming back for Cut. I’ve lived a lot of a places-abroad, on the coast, in the Midwest and now in Colorado, and this is the best seafood I’ve ever purchased(which is CRAZY considering how far we are from an ocean). I don’t know what to say beyond everything we’ve bought here is beyond. We’ve done scallops and tuna, and they’re some of the best I’ve ever had. Whether you live here or you’re in town visiting, I highly recommend picking up something here and doing a dinner at home. It’s pricey, but will cost you only a little bit more than you’d pay at the regular grocery store and a fraction for the same meal out. There’s not a ton of selection, but I like to think that’s because they’re getting the best they can. In full disclosure, we haven’t done meat yet because the seafood is so darn delicious, but I have really high expectations.

I think what you see in the case can be a little limited in variety during the off season but they are more than willing to special order anything for you. Everything is fresh and really tasty though I’m not sure their items are organic at all.

Have you ever taken a tour of a factory farm? Neither have I, but I imagine the stench is exactly the same as the odor at Cut. Seriously, I’ve smelled worse seafood and meat in Thailand. at least over there the food is priced according to quality. At cut, you pay for what you don’t get – quality. head across the street to the village market instead, their butcher is surprisingly good and will cut whatever you want, just ask. and AVOIDCUTATALLCOSTS

excellent service fine quality products. amazing building. try the dry salami very good. they are a like a boutique butcher shop or a very posh butcher not your typical meat place. for me $ 32 a pound for t bone is to pricey but unbelievably delectable. if you have the money do yourself a favor go here and give this place a try you will not regret it

We were in Vail last week and decided to grill steaks. After a less than satisfying trip to the grocery, we used Unilocal to find Cut: Artisan Meats in Edwards, a 15-minute drive to the west on I-70. We ordered natural angus NY strips and ribeyes. Sam hand-cut them to 1−¼ inches as we requested, and had them wrapped in no time. Several of our group commented these steaks were the best they had ever tasted. We were also enchanted by many of the other items in the meat case — clams, shrimp, trout, salmon, and a beautiful piece of ahi tuna. I highly encourage everyone to meet Sam and try Cut for your meat, fish, and poultry needs in Vail Valley. And you can get the rest of the groceries you need across the street at Village Market in Riverwalk. I highly recommend your patronage of this locally-owned business.

We have 2nd home in Vail, Co — we just discovered CUT this past summer. Have never seen such fresh and beautiful«cuts» of every meat that colorado is known for. It is small, but amazing. They have special seasonings, and other great items as well. They have amazing cuts of Fish in season, and the best escargot I have ever had. We live in Laguna Beach, Ca and can’t believe there is not something like this is our area. An additional great thing is there is a fabulous wine store connected,(I think owned by same owners), and it is called«EAT/DRINK» — to pick up a bottle of some pretty awesome wines! Can hardly wait to arrive in town and get«cuts» for thanksgiving!
