Simply the BEST Cajun food in Corpus Christi. The gumbo is one of my favorites. It seems to be expensive, but when you get it home and realize how much goodness you have, it’s actually a very good meal deal. The sausage Calli puts in it is some of the best I’ve eaten, and I eat way too much sausage! I don’t know how she does it, but the rice is always perfect. I can’t eat the whole thing in one sitting, so I put it in the refrigerator, which tends to dry the rice out. But I learned a neat trick. If you put a teaspoon of water in the container and then microwave it, it comes out perfect. Calli’s moves around, so we call ahead to make sure she’s at the Saratoga location. I feel lucky to be only 3 blocks from the corner of Everhart and Saratoga! Oh, another item that I really like is the Shrimp Po Boy. It’s about 10 big fried shrimp on a Po Boy bun. Huge. I can finish one, and it gives me a good«full belly» feeling. Other items that I can eat again and again are the bisque and the étouffée. The crawfish is spicier than the shrimp. A word of warning to those who can’t take the heat … get the shrimp. Calli is passionate about her food. I don’t know how she does it in the summer time.

My girlfriend and I decided to finally check out this food truck today. It was AWESOME! We had two orders of boudin balls which came with rice, coleslaw, and some bread. We also ordered the gumbo & jambalaya. Everything was seriously amazing, and we can’t wait to go back. Oh– keep the rolaids close by.

Stopped by for the first time on my way home and decided to try the crawfish etoufee. The wait was just 5 minutes. It’s great they offer their dishes hot and cold in case you want to eat it now or save it for later. The crawfish etoufee was excellent… buttery, flavorful, well seasoned, with a good balance of crawfish, peppers, celery, and onion. I would definitely go back to try another dish from their menu.

Had there food for the first time at the patty’s day festival and from what they gave m this place deserves to shine super nice considering how packed it was for the event and great food right portion and again great service they just need to be open all the time :-)

First let me start by telling you this: I LOVE their Crab & Crawfish Bisque. I cannot get enough of it. Callie’s is a food truck that is usually parked at the corner of Everhart & Saratoga near the Jack in the Box — you can’t miss it — its a loud(generator), boat looking truck. Their prices are good nothing too expensive or too ‘dirt cheap’. I’m not a particular fan of their Gumbo, Jambalaya or cole slaw(CS comes with the Bisque). However, their Po’Boys, Étouffée and Bisque are delicious. As you might be able to tell my favorite dish is their Crab & Crawfish Bisque, it is a creamy stew like meal loaded with crab & crawfish(they don’t skimp on the meat) and mild spiciness sitting on top of white rice. Every time I go on vacation to CC, I make it a point to stop at Callie’s.

New to Corpus Chris, I was driving by and saw this food truck and did a U turn to get to it. So glad I did! I had boudin balls, which were crispy, spicey and cheesy. True voodoo! The crap and crawfish bisque, as advertised, is NOT a soup. Served over rice, it is absolutely creamy and decadent with plenty of fresh tasting shellfish. It was too much food for one person, but I just had to try both. When my husband came to town I stopped and got some more boudin balls(of course!!!) and a shrimp po’ boy and an order of chicken and sausage gumbo. My husband loved his gumbo and my po’ boy was awesome. Perfect bread /protein ratio, sweet fried shrimp, and a spicy remoulade. I love this truck! Go, and also pick up a menu and read the nice description of Callie by her husband. It really adds to the ambience of this truck. Yes, a food truck can have ambience.

The food truck was parked at a local event and I got a chance to stop and try a couple things on the menu. I ordered the Boudin Balls, and it came with some dirty rice. The Boudin was VERY tasty, spicy with a good, crisp coating. The dirty rice was equally good — nice and peppery. Can’t complain at all about this dish. Also got to sample the Jambalaya and really enjoyed that. Nice pieces of chicken and sausage in the mix and equally spicy. Can’t really give Callie’s 5 stars because they aren’t really«as good as it gets,» but they are VERY good and very nicely priced. Service can get a little slow when the line gets long but, hey, there are only two working in there… Looking forward to my next visit.

A friend of mine has been trying to get me to go to this Van on the side of Old Las Vegas Hwy for a while now. Last Thursday we went in a group with friends and we arrived to a very colorful van that you cannot miss. We read Callie’s intriguing story on the menu and everybody decided to get something different. I ordered the sausage gumbo which was delicous and peppery. I tried the Étouffé that one of my friend ordered and it has great taste. Some of the orders took a while so they gave us a sample of the crab bisk which I must say was AWESOME… I really enjoyed it!

I’m cajun and my Mimi will always do it best. I went to Callie’s years ago in a fit of desperation. Honestly, it was depressing. She is from New Orleans which is far from Cajun. Everyone thinks Cajun food is running around rampant in all of Louisiana. You are wrong. New Orleans food is completely different from Acadiana food(the real Cajun food) and anything north of Opelousas should be considered Arkansas or Texas or Mississippi or who ever wants it. Callies should not be considered cajun food just because it has crawfish in it. It’s creole at best. And when I order crawfish bisque, it better have some heads floating in it.

Man, I really can’t get enough of the crab & crawfish bisque. It’s that good. And when I say it’s that good, I mean that it’s over-the-top good. We picked up the bisque, chicken & sausage gumbo and the red beans & rice for the second time(first time was about 6 months ago) and were truly blown away. It wasn’t a one-time freak that the first one was that good. The red beans were spicy, flavorful, andouille-filled and the bisque was creamy, buttery, chock full of crawfish & crab. Man, even after spending some time in New Orleans(got married there!), I can’t recall anything quite like this. OK, I must say that this is not a sit down or even walk in restaurant. Well, it’s not even a drive-thru place. This is a huge land yacht(see photo). And when I say the location is «somewhere on the LV Trail», I mean *somewhere*…no real address. But it’s usually parked every evening by the gas station, between the area where the guys sell wood and building crap from the back of their trucks and El Gancho. The prices are totally reasonable for the amount and quality of food you get. In Santa Fe? Go there. Now. What are you waiting for?
