Had a private tasting with the pit master, who cooked many items on and off his regularly available catering menu. Started with some appetizer jalapeño poppers… the bacon wrapped kind. He goes above and beyond plain cream cheese, mixing in a variety of ingredients I am still negotiating a recipe for. I am not sure you will see these on the menu, they are time consuming to produce, but I am sure anything is possible. Dinner included pork and beef ribs in a sweeter dry rub, smoked until tender and fall off the bone delicious. Accompanying this were a sampling of sided, including the best greens I have yet to taste… tangy, a little heat, and tender. The care and attention to detail in their work starts at the selection of top grade meats and the pairing of wood for the smoke-continuing through to the presentation of the entrees. So much on the menu I want to try. They hand shred cabbage for their coleslaw, which I hear is fantastic. The baked beans are from scratch… starting as dry beans and cooking over a day. Brisket, turkey, pulled pork… all seasoned and smoked low and slow. Basically they labor to provide high quality, fresh BBQ, and I am a fan!

I went to an event today catered by Black Dog Smokehouse. The meats were smokey, tender, and juicy. The sides(everything from Mac & Cheese to cornbread casserole to broccoli salad and more) were delicious too. I would highly recommend this business to cater any event. It was so good.
