We just got our first meats from T&D last week at the Waxhaw, NC Farmers Market. Last nite I prepared the Flank steak and it was absolutely terrific. I had my doubts upon taking it out of the package… as there was really very little marble. But, it was tender and very flavorful. The key to us was that it is all grass-fed. No grains like the feed lots. A lot more work and cost I am sure. They do a great job… and we will be buying more.

As with many other farms, it may be better to pick up your goods at the market — in this case, they offer them at several of them — Piedmont, Salisbury Rowan, Meeting Street, NC Research Campus, Healthy Harvest and China Grove. That’s a lot of markets! Where many other farms — and even your larger grocery stores — are touting the benefits of going organic, the food here is not organic. Or at least, not certified as organic. According to the folks at the farm, it is all-natural, grass fed free from antibiotics, hormones or steroids — it’s just not certified as organic. The beef is available by the cut all the way up to a whole animal(yes, you can apparently buy a whole cow!).
