If you’ve gone to a number of Italian beef/sausage joints throughout Chicago, it’s most likely you’ve had some of Scala’s products. Hell, they even make the giardinera too. A Chicago original that is definitely an interesting success story. Going back from the 20s, the Scala family supplies many of the stands that you see and other well established food retail providers. I think unless you don’t eat meat at all, you’ve had their products in one for or another.
