One of the best Food Trucks. The pizza is delicious, it is cooked fresh right in front of you, and I’ve never had to wait long for my food.
I’m rarely motivated to eat at food trucks because they are so frequently slow and overpriced. The point of a food truck is supposed to be convenience but at many food trucks I could drive to a restaurant and pick up food faster (and cheaper) than waiting at the food truck. Seb’s Pizza is the exception to this rule.

We had this pizza for the first time at Longmont’s G’Knight bike ride this weekend. This is by far the best pizza in the area!!! It reminds me of the pizza we had all over Europe when we lived there. I judge awesome pizza on very specific criteria:
–First and foremost, crust: Has the chef taken his/​her time with it? You can taste the difference!
–Sauce: Is it fresh tasting, or out of a can, junked up with too many herbs to hide the tinniness of the can?
–Cheese: Is it fresh and REAL, or over processed and rubbery?
–Toppings: Shouldn’t overpower the whole pizza
Seb’s meets and surpasses ALL my criteria!

This is some of the best pizza I’ve had. I prefer the European style handmade pizzas like this over the NY style pizza that most places have. So far I’ve found about 2 or 3 places in Colorado that have what I like and this is among the best.
The sauce is light and fresh. The cheese is nice and not over covered. The crust is perfect with nice bubbles and a few blackened edges. 3 minutes to perfection. Love it.
My only «complaint» is that they don’t have a restaurant and operate solely out of a food truck which means I can’t get it all time. If you see this place, go there. Simple as that.

Seb really knows how to make a fantastic pizza at competitive prices to other lunch options around Boulder. The pesto (Pesto sauce, roasted chicken, tomatoes, mushrooms, fresh mozzarella, basil) is pretty fantastic.

Amazing service and truly addictive pizza. Always fresh and cooked perfectly. I love their service and now I simply walk up and they know my order. Great people and the Pizza is the best in Boulder! If you have the chance grab one, you will not be disappointed. Only complaint is they come every other week to our office park on east Pearl. Wish they would come every week!

I love the pizza from Seb’s. It’s delicious, full of fresh ingredients and, of course, custom-​made for each customer. I’ve been to Napoli, Italy (the birthplace of pizza) and found Seb’s to be amazingly similar.

Good friendly service is a good way to start lunch. They had a food truck at a scooter tournament in Boulder and the delicious smell coming from the wood oven lured me in. I ordered a cheeses pizza and it could have been hotter but it was very tasty. The crust was thin and crispy and the mixtures of cheese were just right.
I’d def return. Plus it’s so much better than the regular choices at a soccer tournament!
