Food events have started to gain a lot of steam over the past few years but what sets Cochon555 apart is the passion of everyone involved. That passions is for good food & drink with a focus on heritage pork. Pigs breeds that have raised for centuries for specific qualities that will make any supermarket meat seem like being from a totally different planet. The focus here is to educate people on the producers, techniques & joy of knowing where your food comes from. This connection is really in danger of being lost forever. So the competition element is pretty simple, 5 local chefs take 5 whole heritage pigs & make everything they can for all the animal. In addition 5 mixologist battle it out for the tastiest drink. The focus is the pork. The highlights were life altering candied bacon strips from the folks at Moody’s Provisions in Waltham, Mei Mei Street Kitchen’s Asian Speakeasy creating yummy ramen bowls & a whole hogs with soft Chinese buns, a bacon & jowel snicker by Clio & simply everything made by the folks @ Harvest. Lead by chef Mary Dumont, her team created a remarkable menu which had an incredible Cuban sandwich, freshly fried pork cracklings & much more. I can see why all the pork dust cleared she was named the 2014 winner of Cochon555 Boston & is on her way to Aspen to battle for the Grand Cochon title in Aspen. This has been an annual event in 10 different cities across America & we are so lucky to be one of those cities. Not only is the food & drink wonderful beyond words but the passion of these culinary professions shows in the care they take in feeding a room of over 500 people. Every morse, every glass is made with the upmost care & detail to perfection. If you are a pork lover, a food lover, a lover of fine spirits & brews, enjoying knowing where your food comes from, this is the premier event for you. The Paradise Rock Club was transformed into a incredible food venue in a matter of hours & most regulars would be amazed. The staff was incredibly helpful & there was no stop in the food, drink & music. I cannot wait for this next year & the year after that.
