The pizza was awesome. I did the build your own and it was made to perfection. The cinnamon strips dessert wasn’t as good as I’d hoped. I the dough was too then and there wasn’t enough cinnamon sugar added. It literally looked like cooked pizza dough. Hopefully the next time I visit and order dessert, it will be better.

Looks like Chipotle, tastes like pizza. Already a fan of the other make your own pizza joint. I had high expectations for this place. Walk up the counter, build the pizza of your dreams, or perhaps you haven’t dreamt of pizza yet. they have some specialty offerings to choose from too! Not feeling pizza today, no worries — they have salads too! All the ingredients were fresh, pizza dough was thin & crispy and overall taste was satisfying. Each pie is personal size, so you can either order a few and share or just indulge on your own pie. Husband enjoyed the buffalo chicken specialty pizza — he liked it a bunch and thought it was a touch better than the«other» make your own pizza place! I made a veggie pizza on wheat crust. delicious! Incredibly friendly staff, clean restaurant, good price point, and all the fresh ingredients you desire to build your perfect pizza. nailed it.

Dough was kind of thinner than I usually like, but very affordable! The garlic butter that they spread on the dough prior to adding the toppings makes it very different!

The crust was perfect! I prefer thin crust. I enjoyed observing the pizza techs(that’s what they reminded me of) assembling my pie to my liking. I asked for a veggie pie and it was fresh and tasty. I will not get gondola?

We ordered four different pizzas. Something off with ingredients. I suspect low quality products and trying to mask with cheese. With all the great pizza choices in town, I would go with locally owned. Not a fan of this option.

Pretty cool idea. It’s the Chipotle of the Pizza world. Set-up: Walk in, select your crust, select your toppings, watch them put it in the oven, wait about 7 – 10 minutes, get your pizza. EAT. FOOD: Quality of food is average. The toppings and ingredients are nothing special– Just your basic toppings. If I had to give the quality of food a rating it would be a C+. Now, the overall pizza was pretty good. It didn’t blow my socks off by any minutes. SERVICE: I didn’t feel like I was the President. But, pretend-friendly all the least. WOULD I BRINGMYMOTHERHERE? Absolutely not. This place is perfect for lunch dates with your bro-friends, gal-friends, or a quick bite to eat at lunch. OVERALL: For a snack, PIEOLOGY isn’t a bad choice. It was relatively cheap($ 8)… and was quite a large proportion!

I visited Pieology on a Saturday night for takeout. My expectation was similar to Pizza 120 on US-280 in Mountain Brook. Build your own pizza and get it within 5 minutes. Several people have described it as a Chipotle or Moe’s concept applied to pizza. I like the price at $ 7.95 for unlimited ingredients — only a little more than frozen pizzas. And a bonus for me is that they have wheat crust in addition to white. They also have salads for $ 9.95 with most of the same meats and some additional produce options. My pizza was good and I’ll definitely return to sample some other combinations.

Clean, bright place. Friendly staff. The fire in the oven makes you expect something more savory and flavorful. It was a bit bland and basic even with the many unlimited toppings. I wouldn’t really call it a pizza, it’s more like a round flatbread with toppings. However, for a $ 7.95 personal pie at the Summit location it’s still a good deal.

This place is a good addition to the summit. It’s like if Chipotle opened a pizza joint. You get in line and choose everything you want on your pizza and they bring it out to you quickly. They have a decent amount of toppings to choose from. Different crust(wheat, white and gluten free) to chose from. The pizza was alright. It’s your basic quick lunch pizza. I had chicken, pesto, sun dried tomatoes and candied walnuts(those where the best part). There is nothing too exciting about the flavor but the price is amazing. It was about $ 8 and you can beat that for the location. The service was good. The staff is decently friendly. Nothing over the top but they are nice.

Really really good! And inexpensive! $ 7.95 for 11.5″ pizza with unlimited toppings. It’s like Moe’s but for pizza! Lots of topping options and the salad options look great for those who don’t eat meat. We came in the middle of lunch hour and we got our food in less than 10 mins. Very clean interior and staff was really friendly even when busy. I will be back!

Back for Second chance review of Pieology. I came in unannounced right after the lunch rush, they were still a little busy, however they had two managers working in the kitchen and keeping things rolling. I ordered a customer pizza with pepperoni, sausage, banana peppers, black and kalamata olives, spicy buffalo sauce and regular red sauce. The pizza was full of flavors. The crust this time was superb, gone is the rubbery texture I found the first-time. I did notice they had a manager in the oven, not sure if that’s why I had a better experience this time or not. I had a side salad as well, it was pre packaged, wish it had been freshly made to order, however my overall experience was much much better this time.

I received a coupon for a buy one get one free at this pizza joint. Although it looks to be like the pizza form of subway, the food itself is awesome. You can pick and choose what type of toppings you want on your pizza and the ingredients are fresh and quality. Make sure to get either the buffalo chicken pizza or the pesto chicken pizza.

Great pizza at a reasonable price. The Buffalo Chicken pizza was really spicy and very delicious. The pizza construction right on from of you is cool but kinda tripped my OCD switch when they assembly line made an uneven distribution of toppings. But they seem very generous with all toppings. It’s weird waiting in line for pizza but it cooks fast and the fun quotes on the wall keep you entertained. Will go back for sure!

Excellent concept for fast/affordable pizza with a casual dining atmosphere and courteous staff in a prime location. The menu has plenty of options with all the additional toppings you can think of. Only negative from my experience was the rubbery textured crust. They are definitely cutting corners on that front for the sake of quick service.

This place is like putting a subway, fast food, and a pizzeria place all together. I think they have only been open a week maybe. Not too busy on a Saturday afternoon. It’s simple and pretty straight forward. You get in a subway looking line, the is a menu on the wall explaining the basics and some prenamed examples if you don’t want to think about how to make your pizza. I got a gluten free crust and they have sauces that haven’t touched anything if you want to be really safe. For white or wheat, they press the crust right in front of you. I don’t think they put enough sauce on them, but that’s just me. With an array of sauces, cheeses, veggies, and meats to pick from you cant go wrong. Just be prepared, this a THIN crust pizza. They cook these in 7 – 10 minutes. I no more sat down, and there was my pizza. You can build a salad too if this pizza is not enough. It’s about a small anywhere else, but for $ 8 with the works($ 10 gluten free) not a bad price. I think this place is pretty good. It didn’t scream wow but I know I will be coming back.

This place is awesome! It’s the chipotle of pizza, a very awesome concept. The manager was very nice and helped us choose some good options from the menu. We enjoyed the hickory bbq chicken & classic margherita, they tasted great & where else can you get such great pizza for $ 7.95! You can add as many toppings as you want to a pizza & it’ll only cost you $ 7.95! I found a new pizza place since Post Office Pies is to far away! This place is very similar to Chipotle’s Pizzeria Locale in Denver! It’s well worthy try & glad Birmingham is getting more diverse restaurant selections!. Of course we were able to try the cinnamon dessert pizza they offer complimentary & it was delicioso!
