Oh geez, or geezus if you prefer… if you haven’t had rillettes at any time in your past, and you are at least a little fond of some sort of charcuterie, (pâté, sausage, smoked or cured meats, etc,) you should not miss these products. The creation of these rillettes cannot be that easy, otherwise those of us who are thrilled with such flavors would do it ourselves. Wooden Spoons is the creation of two people who are seriously dedicated to making the most amazing food products, ones that most folks have never had. Now I am in my sixties, and though I’ve had rillettes many times in my younger decades, none were more delectable than these.
I purchased the pork and duck rillettes, and I could NOT have been more thrilled with these incredible, smooth, flavorful, uncommon foods.

For Thanksgiving starters I highly recommend Wooden Spoons Pork Rillettes, a soft spreadable charcuterie, simmered in chicken stock, calvados, star anise, aromatic spices and herbs. They are available in 4oz and 8oz jars. Duck Rillettes is going to be my next purchase.. sounds tempting.. what’s not to like.. white wine and duck fat.
